0:01
- Hey y'all, I'm Paula Dean.
0:02
And today we're going back
0:04
to the time when poodle skirts ,hula-hoops
0:06
and TV dinners were all the rage.
0:08
I'm gonna give you a taste of those good old times again.
0:12
First we're headed to my hometown of Albany, Georgia,
0:14
to get the twist on some peppermint sticks.
0:17
And then it's back to my kitchen
0:19
where we're making Aunt Peggy's meatloaf,
0:21
and then it's okra and tomatoes and cottage potatoes,
0:24
that are just the perfect sidebar for this meal.
0:26
And finally, it's peppermint cream pie
0:28
and peppermint bark, a dessert that's so refreshing
0:31
and light you'll feel like dancing all night.
0:34
To open up the snack tables and invite a few friends over.
0:38
We're going to be taking a trip down Comfort Food Lane.
0:42
Hey y'all,
0:42
today, I'm gonna take y'all back to my past.
0:46
I'm gonna to take you to visit
0:47
Bob's candy company where the
0:49
McCormick family is King of peppermint.
0:52
Y'all come along with me.
0:53
We gonna do the peppermint twist.
0:55
(upbeat music)
1:02
- Greg, I don't think I've ever seen
1:03
so many candy canes in all my life in one spot.
1:06
- [Greg] Well, you know, Paula, we make
1:07
a billion candy canes that's with a B
1:09
per year following.
1:10
Paula I want you to meet my two sisters
1:12
that work in the business with me.
1:13
This is Mary Helen Doug,
1:14
- Hey Mary Helen, great to see you.
1:16
- Hi Paula, am Julie Rose,
1:17
- Hi Julie, nice to see you.
1:19
- Welcome, welcome to Bob's Candies.
1:20
- I can hardly wait to (claps)
1:21
get my hands on some of that.
1:23
- [Julie] Well lets get you some gloves and get going.
1:25
- Do I need my safety glasses back here?
1:27
- Most definitely.
1:28
- Those would be some style and safety glass.
1:30
(laughing)
1:32
- What is this Greg, that looks delicious.
1:34
Oh, now Paula, that is the candy, the sugar
1:36
and the corn syrup that we've taken off the cooling table,
1:38
and we put it onto the pulling machine and just to air going
1:42
inside the candy turns it that satin and the white color
1:45
and that's where we put the peppermint flavor in.
1:48
Okay. Paula, now he's taken the white, all the pin slab.
1:52
And if you look its' got little lines on there
1:54
that's going to show him where to
1:55
put the pin stripes on there.
1:56
- [Paula] All right now just stretch it,
1:59
and put it where? Right there ?
2:00
- Right here.
2:02
- You make it look so easy Charlie.
2:05
- Well I've been doing it for 23 years.
2:07
- I will have a crooked cane.
2:08
- [Charlie] Right about the center
2:09
- [Paula] Alright, in the center, Is that the center?
2:14
What is that weight?
2:16
- [Greg] That weighs about a hundred pounds.
2:17
And this is called the batch roller Paula,
2:19
and that takes that big batch of candy
2:21
and it's going to narrow it down to a lot smaller size,
2:25
where it goes through those rollers.
2:26
To give you this exact size candy cane that you want.
2:28
- [Paula] Now how long will it take?
2:30
- [Greg] That will take about 20 minutes.
2:33
- [Paula] When are y'all gon show me everything Julie,
2:35
But how do you get the handle in that candy cane?
2:38
- Well that's a secret Bob's candies is
2:41
gonna have to keep.
2:42
Let's just suffice it to say it's not done by ELs.
2:45
Paula, we thank you for coming
2:46
and we want you to take this back to your kitchen
2:48
and do great things with it.
2:49
- Thank you, thank you. Thank you.
2:51
Thank you, McCormick's Bob.
2:53
Wonderful time in your candy shop.
2:55
Y'all mean so much Doug Beanie,
2:57
And I will put these to good use.
2:58
- [Mary And Julie] Great!
2:59
- Good to see you.
3:05
(door bangs)
3:06
- I hope y'all had fun in my birthplace in Albany, Georgia.
3:09
In Bob's candy company.
3:11
It was so much fun.
3:13
Really took me back to the sixties.
3:15
I got some peppermint and I'm gonna put it to the side
3:18
because we're gonna move right on to our entree
3:21
which is a wonderful fifties and sixties dish
3:24
an old fashioned meatloaf.
3:27
Just like my mother and my aunt Peggy
3:29
and my grandmother used to make for you
3:31
starting to think I'm going to get rid
3:32
of these fun glasses.
3:34
We're going to start with the ground beef
3:36
a good ground beef, maybe an 80, 20, something like that.
3:41
All right, we're gonna kinda break it down
3:44
just a little bit,
3:46
and we're gonna add a teaspoon
3:50
and about a quarter of salt.
3:52
And a deepen fourth of a teaspoon of the pepper.
3:56
All right. Now, I've got like a half of a large onion
3:59
and a diced bell pepper.
4:00
And we're just going to mix that in there with that.
4:04
Oops, forgot to take my jewelry off.
4:07
Did I show y'all my engagement ring that Michael gave me?
4:10
I don't want that meatloaf fall in those rings.
4:13
All right. So we're just gonna mash that bell pepper
4:15
and onions up into the hamburger meat.
4:18
Kinda get that incorporated.
4:20
Along with that salt and pepper.
4:22
We gonna take one egg(shell crushing)
4:27
And give it just a few beats.
4:33
Just a little bit.
4:35
And then we're going to add,
4:37
a fourth of a cup of oatmeal
4:40
and this just gives your meatloaf a
4:43
real lightened fluffiness to it.
4:46
And then we gonna take a can of just diced tomatoes
4:50
and their juice.
4:55
Squish, squish.
4:57
So you can see
4:58
I'm starting to try and work that into kind
5:01
of a loaf shape right now.
5:03
I'm just gonna take that out
5:06
and put it into our dish.
5:08
And the thing I like about my Aunt Peggy's meatloaf
5:11
is she doesn't top it with just ketchup.
5:15
She takes a fourth of a cup of ketchup,
5:18
and about tablespoon of mustard,
5:22
couple of tablespoons of Brown sugar
5:26
and just mixes those together.
5:28
And the Brown sugar is so good in there.
5:31
You know, just kind of get that meatloaf
5:32
just a little sweetness on the outside.
5:36
And we're just gonna brush that on our meat.
5:39
Doesn't that look yummy.
5:40
So this one's ready to go in the oven
5:42
and we gon put it in a 350 preheated oven
5:45
and we're going to let it cook
5:46
for about 45 minutes to an hour.
5:52
Before we know it
5:54
We're gonna have a wonderful aroma coming from the oven
5:57
but while we're waiting on that to cook,
5:59
I want to show you another favorite
6:01
from the fifties and sixties and that's okra and tomatoes.
6:05
Now I've started with some chopped up bacon
6:07
and I'm gonna add to the bacon one chopped onion
6:11
and you see how much garlic a good bit.
6:14
I gonna dump all that in.
6:15
So we're going to saute it until it's kind of transparent
6:20
and I'm gonna put in a large can of diced tomatoes.
6:26
Now, if it's tomato season by all means, use fresh.
6:30
All right, now we're going to add
6:32
a tablespoon of chicken base.
6:38
And we're gonna use, add a tablespoon of sugar.
6:42
It just give it a little kind of sweetness.
6:45
Now gonna let this cook for about 20 minutes.
6:48
In fact, now already have some tomatoes right here
6:52
that have been cooking.
6:53
So we're just gonna throw our okra over in here.
6:56
And I'm probably using two cups of okra.
6:59
Look at the colors, aren't they pretty?
7:02
So, we just gonna put the lid on that and let that cook
7:05
until the okra is done probably, about 10 or 15 minutes.
7:10
And let's see what we've got right here.
7:14
And see how they've lightened down color
7:16
so that lets us know that they're done.
7:18
So, that really completes that dish
7:21
that's how simple it is.
7:24
Let's check that oven and see how
7:25
the other meatloaf that I've gotten
7:27
in the other oven is doing.
7:33
Oh, it looks so good.
7:40
Look at that meatloaf.
7:43
Don't that look good.
7:44
I can smell those bell peppers.
7:48
I'm gonna, just try one of those little in-pieces.
7:59
come over here and get me some of that okra and tomatoes.
8:03
Don't it look just yummy.
8:09
It's so hot.
8:21
So Good.Takes me back to my aunt Peggy's table.
8:24
When we come back, we're gonna be doing the
8:27
peppermint twist in a peppermint pie.
8:35
I so hope y'all are enjoying the show.
8:37
And if you do.
8:39
Be sure to click like, subscribe and
8:42
notification bell so you'll never miss a video.
8:46
And we'll be right back after the break.
8:54
Hi, y'all caught me just gathering everything up
8:56
to make our peppermint pie.
8:58
This is going to be a perfect ending to our meal.
9:01
We gonna start with heavy cream,
9:06
and a cup of crushed peppermint
9:10
and I'm going to do this the old fashioned way.
9:12
(pounding)
9:15
Okay. That looks to be about a cup.
9:18
I'm gonna mix my gelatin with a little bit of water
9:22
and let that dissolve for a second.
9:26
And we gonna pour up peppermint
9:30
into our cream,
9:31
and we gonna stir this until
9:34
our milk is totally incorporated.
9:38
We gonna add our gelatin
9:40
and this is going to act as our thickening agent for our pie
9:43
and you don't want to walk away from your pan on this.
9:46
It shouldn't take too long for that candy to melt.
9:49
I actually have some ready right here.
9:53
We'll just switch as, and let it melt.
9:55
And you'll find that when you melt your peppermint
9:58
that it turns up real, pretty caramel color.
10:03
Now our candy and our cream has cooled off nicely.
10:07
We gonna fold it into whipped cream
10:10
that's been whipped to a nice peak.
10:12
So just gon make sure I get all the goody
10:15
out of this sauce pot.
10:17
Now you want to be careful when folding
10:20
in your melted candy because you don't
10:22
wanna break down your whipping cream.
10:24
We've got that mixed in.
10:26
So all we're going to do is pile this
10:29
into a store-bought chocolate Cracker crumb crust.
10:33
And if you want to, you can make your own
10:36
out of Oreo cookies they are so good.
10:38
And we're just going to pile this in
10:41
and stick this in the refrigerator until it's sit.
10:44
And you see how, when it's mixed with a whipping cream
10:48
it's almost has a little light pinkish cast to it.
10:51
Okay? So we're just going to stick this in the fridge
10:54
and let it sit, which it won't take long
10:56
because it's got that gelatin in it.
11:00
And while that's setting up,
11:02
I'm gonna show you how to make
11:04
the easiest peppermint pine barks so simple.
11:07
For this one now, I've chosen
11:09
some of the just hard candy canes
11:14
and you can use any kind of peppermint you want for this
11:16
but we gonna just take, Oh! About that maybe.
11:20
And we gonna just take this and break them up
11:24
and I'm not going to break these very fine
11:26
'cause, I like to really crunch into the peppermint.
11:31
Now, I've got a couple of pounds of good
11:33
white chocolate Melten over the heat
11:35
and that look delicious.
11:38
See how that's just smooth and right on out
11:41
with that little bit of flame going into it.
11:43
And I'm gonna put about,
11:45
maybe a half a teaspoon of peppermint flavoring.
11:48
But we gonna have the peppermint from the candy
11:51
and the peppermint from the flavorings
11:53
that white chocolate looks yummy though.
11:57
All right. Now, all we gonna do.
11:59
We don't wanna melt our peppermint.
12:01
So, we're not gonna stir it in until
12:05
we're totally done with the heat.
12:08
And I've got, just an ordinary cookie sheet
12:11
lined with parchment paper
12:13
and I'm just gonna fold that candy into that chocolate.
12:16
And then we're just gonna spread it all onto our pan,
12:20
now, you can make it as thick with the candy as you like,
12:24
just gonna spread that out
12:25
and you can just hold onto your piece of paper
12:28
so it won't slide away with you.
12:30
Ain't that pretty the way you can see the pieces of candy.
12:34
All we gonna do is chill.
12:35
Then we're gonna stick in the refrigerator.
12:39
And I happen to have some already cooling in here.
12:46
That's ready to break out.
12:51
And I've got a pie ready
12:53
and I've even got some more whipping cream.
13:00
- So see how simple that was.
13:02
And you have a great candy and it just lifted right off.
13:06
Now, all you have to do is just break this
13:09
into any shape you want
13:11
in as big a piece as you want.
13:13
This is a fun little thing to have the children do.
13:17
So, our peppermint bark is ready.
13:20
- I like my pies.
13:22
Like I do my hairdo real high.
13:25
So I'm gonna bring this one up a little bit
13:28
by adding whip cream to it.
13:32
Now I'm using heavy cream.
13:34
That's been sweetened with a little sugar
13:36
and I'm just going to pile that nice and hone it.
13:39
It almost looks like Marang, don't it
13:42
now to finish our pie.
13:43
I have some crushed peppermint candies
13:47
and I'm just gonna give it a little sprinkle.
13:51
Don't that look delicious?
13:56
So simple and easy.
13:58
You'll wanna work your crust away from your container.
14:07
I'm going to put me Just a few sprinkles on my plate.
14:14
Oh, damn. That look good.
14:17
And I think out to chase that piece of pie
14:20
with some peppermint bark don't y'all?
14:27
Oh gosh, it looks delicious.
14:35
See why I put those crumbs on that plate so
14:37
I could take my fork and go in and get me a few extra
14:45
Hear the crunch?
14:48
- So, D-licious, this is hard to beat, but coming up next
14:54
we're going to do some old timey cottage potatoes.
14:57
So I'll see y'all in a few minutes.
15:05
I hope y'all are enjoying the show
15:07
and I want to hear from you.
15:09
Tell me what recipes or videos you'd like to see me
15:11
make by just leaving a short comment below.
15:15
Now, let's get back to the show, y'all.
15:23
No retro meal would be complete without a potato.
15:27
So, we're fixing to make an old timey dish cottage potatoes
15:31
but I'm gonna show you a new twist to 'em.
15:33
Now we're gonna use, three large bacon potatoes.
15:37
These are more like a medium.
15:39
So I'm probably going to use about five of these.
15:42
So all we gonna do is slice them
15:44
()
15:48
and you don't have to be perfect
15:50
because we're actually gonna wind up mashing these up,
15:53
but you want them close in size.
15:56
So they'll all be done about the same time.
15:59
All right now what we gonna do is cover those with water
16:03
and I'm going to throw a little salt in the pot
16:05
with them and just boil those until they're tender.
16:10
Those look just delicious.
16:11
We're going to add a little salt to them
16:14
and I'm using a nice kosher on these
16:16
and a little black pepper.
16:18
All right. Now the recipe calls for
16:20
two tablespoons of butter.
16:21
That looks like two tablespoons to me.
16:24
Don't it to you? (laughs).
16:26
You know, I never was real good at measuring.
16:28
All right. So we're going to take our masher
16:31
and you can see I'm using an old timey masher
16:34
instead of an electric mixer
16:36
'cause I don't want these real creamy.
16:37
I still kind of want them in chunks.
16:39
I just love a potato.
16:40
I know y'all have heard me say it before.
16:42
If you were gon send me off
16:43
to an Island and say, Polly, you can only have one food.
16:46
I would choose the tater.
16:48
And that's about how I like 'em.
16:53
Now we gonna take just ordinary Cottage Cheese
16:59
and stir into those, those look good.
17:03
Just like that.
17:03
Don't be Missy.
17:04
I've got some onions sitting around here
17:08
to throw in that lemme find my onion here it is.
17:12
We gonna, just toss in some onion
17:18
and those will still be kinda crunchy and good.
17:22
We just going to pile them into the casserole dish.
17:24
I'm going to spray it so they won't
17:26
stick to too badly on us.
17:28
Now, if you wanted to, you could actually even jazz this
17:32
up with some sour cream, with a little mayonnaise or milk
17:36
it'd be delicious on it,
17:38
but I'm going to do this just like the recipe calls for
17:40
in my cookbook.
17:41
Kinda mash those down in there.
17:43
And if you liked it hot, you can even add some jalapeno.
17:49
We're just going to sprinkle this with paprika
17:51
and the paprika. will give it a nice brown look.
17:56
And why don't we just for good measure (laughs)
18:00
take the rest of our butter.
18:01
That two tablespoons doesn't need to
18:03
be sitting there by itself.
18:05
So we'll just, top the top of this with
18:07
a little bit more butter.
18:09
And we gonna to stick this in a 350 degree preheated oven
18:13
and we're gonna bake it for about 30 or 35 minutes.
18:19
()
18:25
And I have one over here that should be ready.
18:32
And it is, look how good it looks.
18:34
It's sizzling.
18:40
Here. It's sizzling.
18:55
(chuckles)
18:56
It's so good y'all.
18:58
coming up next.
18:59
Some old timey tips, for today's great foods.
19:05
I so hope y'all are enjoying the show.
19:08
And if you do.
19:10
Be sure to click like, subscribe and
19:12
notification bell so you'll never miss a video.
19:17
And we'll be right back after the break.
19:23
You know, some folks just don't like a greasy meatloaf.
19:26
Well, let me tell you how to solve that problem.
19:29
You just land your bacon dish with whatever kind
19:31
of loaf bread you've got in the house
19:33
and it soaks up all your grease
19:35
and you just take your spatula
19:37
and lift your meatloaf out onto your platter
19:40
just that simple.
19:41
And on the okra,
19:42
if you can't find fresh okra, it's not a problem.
19:46
because the fresh frozen okra is so very good.
19:49
You can buy it in whole pods
19:51
or you can buy it already cut up
19:54
whatever you dish calls for.
19:56
Hope these tips will help you.

going back into the past

20:05
I hope you'll love my Aunt Peggy's meatloaf

And of course my okra and tomatoes.

Hope you have a great time at your own party.
