- Y'all, this pretty little angel needs no introduction,
0:04
but I'm gonna tell your name anyway.
0:06
Kimberly Schlapman is in my kitchen today.
0:09
Not only is she one of the members
0:12
of the award winning group Blue Big Town,
0:14
but she also has her own cooking show.
0:17
Today, these two Georgia girls
0:20
are gonna reinvent some classic Southern dishes.
0:23
- I can't believe I'm picking chicken with Paula Deen.
0:26
(Paula laughing) Woo!
0:28
- [Paula] I'm gonna make my chicken pot pie even better
0:31
by adding a cheese straw crust.
0:34
- That is amazing.
0:35
- Kimberly is fixing her fried green tomato salad. Yum!
0:39
And we'll wash everything down
0:41
with a refreshing strawberry basil lemonade.
0:44
- Hmm, I can't wait. (Paula laughing)
0:46
(upbeat country music)
0:56
- Y'all. This is Kimberly Schlapman.
0:58
- Hi?
0:59
- Not only is she pretty y'all, she can cook.
1:02
(Kimberly laughing) You got your own cooking show?
1:04
What's the name of it?
1:05
- It's called "Kimberly Simply Southern."
1:08
- You better get out of my lane, girl!
1:10
- (laughs) I learned everything I know from you.
1:13
I like to do it!
1:14
Well, you're my mama. - You know what?
1:16
You ain't got no tricks.
1:18
- Well, yes, Ma'am- - You are a Southern girl,
1:20
you're not from Jersey trying to pull off
1:22
being a Southern girl.
1:23
- No, Ma'am, I'm a Georgia girl.
1:25
- You are the real deal.
1:26
Now today, I think that you and I
1:30
are gonna do kinda new twist
1:33
to old Southern traditional recipes.
1:35
- Yes, Ma'am.
1:36
- Well, I'm gonna make my favorite chicken pot pie
1:39
in the whole world y'all.
1:41
This is epitome of an old country chicken pot pie.
1:45
The only thing is, Kimberly, I don't put no feed in mine.
1:49
- (laughs) that's good.
1:50
- Now, if it was really, really country,
1:52
it would have the feed in it. No feed.
1:54
- Let's leave that- - So listen,
1:55
would you do me a favor? - Yeah.
1:57
- If you would just like quarter that and chunk that,
2:01
and chunk that, it doesn't have to be pretty.
2:04
- Okay, good.
2:04
- [Paula] And I'm just gon' split our chicken.
2:07
You know, I think that'll just help it
2:09
cook a little bit faster. - [Kimberly] Yeah.
2:11
- But I kinda like to leave my chicken as big as I can,
2:15
- Yeah.
2:16
- because it seems to stay on the bone a little bit better.
2:20
But I do want, want those bones have to offer us
2:25
and that's flavor. - Flavor!
2:27
- So, I'm just gonna cover this with water
2:31
and you can just, - Dump those in?
2:32
- throw the things in.
2:33
- Of all things,
2:34
I can't believe I'm cooking chicken pot pie
2:37
with Paula Deen. Oh, yeah! (laughs)
2:41
- Kimberly, can you throw bael leaf in that pot,
2:44
please darlin'?
2:45
So, I'm gonna just put this back here.
2:48
- All righty!
2:49
How long are you gonna cook that for Ms. Paula?
2:50
- About 45 minutes.
2:53
And if you would grab that salt and pepper.
2:56
- Yes, Ma'am.
2:57
- I'm gonna come down here and wash my hands.
3:00
So Kimberly, being a Southern girl,
3:03
I know you've made cheese straws before?
3:06
- Yeah, since I was this big. - Oh, my gosh!
3:08
Well, then you make 'em.
3:09
- No, no, no, no, I ain't makin' 'em.
3:11
It's been a while. You tell me.
3:13
- I've got you a stick of butter at room temperature.
3:16
I'll finish grating these cheese.
3:19
- All righty!
3:19
- And we're gon' need two cups of grated sharp cheese y'all.
3:25
A cheese straw in the South it's like,
3:29
it's a staple. - It is.
3:30
- You know, if you go to a party, if go to a wedding,
3:33
- If you go to a shower.
3:34
- there is gonna be cheese straws.
3:37
We'll cream that. (melodic country music)
3:41
- You get some of that cheese off of that.
3:42
- Yeah, there you go!
3:43
Sling it out, it'll get soft in a second.
3:46
I'm gonna add a teaspoon of salt,
3:49
and I'm gonna add a fourth of a teaspoon of cayenne pepper.
3:53
- Yeah, I love that. - We know that,
3:54
our cheese straws, have to have a little bit of bite,
3:57
don't they? - Yes.
3:58
- [Paula] So, y'all stay on the road a lot?
4:00
- Yeah, we're on the road a whole lot.
4:02
We probably did a 100, a little over a 100 shows this year.
4:06
- And you're married? - I'm married. Yes.
4:08
- And you've got a precious little five-year-old girl?
4:11
- Daisy. - Does she looked like her...
4:13
Daisy! Oh, my gosh!
4:15
Does she looked like her mama?
4:17
- [Kimberly] She does.
4:18
- Kimberly, I'm gonna add a cup and a half of our flour,
4:21
and we'll just finish mixing this up.
4:24
(upbeat music)
4:26
Our dough looks very, very good.
4:28
This is gonna be our top crust for our chicken pot pie.
4:31
- So good.
4:32
- But I'm also gonna make you the old timey crust
4:35
like I make. - Okay.
4:37
- [Paula] I'm gonna need three cups of all purpose flour.
4:40
- Okay. - So I'm gonna put a teaspoon
4:42
of salt in with that flour, and we will bluff that up,
4:47
a fourth of a teaspoon of baking powder.
4:50
So, we're not putting a lot of leavening in it-
4:53
- [Kimberly] 'Cause this is for the bottom?
4:54
- I'm gonna put this through out the pie.
4:57
- Oh, wow!
4:58
- And we're... Yes. - Hmm!
4:59
- And we're gonna use three quarters
5:02
of a cup of solid shortening.
5:05
- You want me to keep mash? - Yeah, keep mashing
5:06
until this kinda looks like a corn meal.
5:09
- [Kimberly] Okay.
5:10
- And I'm slowly gon' add ice water.
5:12
And it's important y'all that water be good and cold.
5:17
Remember, you can always add two,
5:19
but you can't take out. - Thrust.
5:23
- Yeah, see? It starting to come together.
5:25
- Yeah. My mama made biscuits.
5:27
Oh, every day she made biscuits,
5:30
and I would just stand by and watch her,
5:31
and she would let me add the milk.
5:33
You know, like you're adding the water?
5:34
- [Paula] Ah-ah! This girl can cook.
5:36
(Kimberly laughing)
5:37
See the way she just jumped right in there?
5:39
I think that's good. - [Kimberly] Yeah?
5:41
- I mean, it's nice and sticky.
5:43
So what we're gonna need to do now,
5:45
is unstick that. - All righty.
5:48
- by just needing it in that flour.
5:51
This dough is kinda tough and that's what we want.
5:55
- Yeah. - We wanna tough dough.
5:57
Tough as you and me, sister.
5:58
- Tough. We are some tough women, right?
6:00
- That's right.
6:01
- So you're gonna put that all the way through the pot,
6:04
not just on the bottom.
6:05
- Right. - I can't wait for this.
6:06
- I'm telling you.
6:07
And you gon' put that broth over it,
6:10
and the flour
6:13
from our dough,
6:14
is gonna make that broth thicken.
6:17
- That's cool. That's how my mama makes dumplings.
6:20
- [Paula] Yes. Exactly.
6:21
- Yeah, yeah. - And you see
6:22
I divided our dough 'cause it's just easier to manhandle.
6:27
So, this is gonna take me a couple of minutes,
6:30
so why don't y'all get up, fix your cup of coffee,
6:33
and Kimberly and I are gonna keep rolling.
6:35
(upbeat music)
6:37
Comin' up, Kimberly and I put together
6:39
the cheesiest pot pie you'll ever eat. Yum!
6:43
Then, another Southern favorite, gets a brand new twist.
6:47
Boy howdy, is that good y'all?
6:50
And later, we take lemonade to a whole new fruity level.
6:54
- Beautiful! (upbeat music)
6:59
I so hope y'all are enjoying the show.
7:01
And if you do.
7:03
Be sure to click like, subscribe and
7:06
notification bell so you'll never miss a video.
7:10
And we'll be right back after the break.
7:15
(upbeat country music)
7:19
- Hey y'all, thanks for coming back.
7:21
I'm in here with my precious little friend.
7:23
And Kimberly and I today are doing
7:26
kinda updates on real traditional Southern recipes.
7:30
- Yes.
7:30
- So, we're in the middle of making
7:31
a chicken pot pie, y'all.
7:33
Our top crust is gon' be cheese straw dough.
7:37
And that's how we're making this one different today.
7:39
I'm gonna, just pull our chicken outta here,
7:43
and we'll try to man handling.
7:46
Ooh! Yeah, he's looking mighty fine.
7:50
I still got another piece of chicken in there.
7:53
- (laughs) That thing was a big.
7:55
- [Paula] I don't know why I was thinking.
7:57
I know a chicken's got two legs. (laughs)
8:00
All right. So yeah, flour that up good.
8:02
you know how to do that?
8:04
Kimberly's rolling out our cheese straw dough.
8:07
This is a good, good rich broth.
8:10
- [Kimberly] Hmm!
8:10
- Now I'm gon' show you a little trick
8:12
that I used to reaching up my broth,
8:15
and that's just adding a little stick of butter
8:17
- [Kimberly] Yum! - to it.
8:19
And I'm gonna taste this Kimberly.
8:21
- Mm, mm!
8:22
- And make sure we got it salty enough.
8:26
Oh my gosh. It looks good in those little time leaves,
8:29
you know of? - [Kimberly] Ooh, yummy!
8:31
Is it tastes good? - [Paula] It tastes delicious.
8:34
- How thin? - I'm gettin' excited.
8:35
- How thin should I go here?
8:37
- All right. Let's see. - That's good or thinner?
8:39
- Just put a little bit more flour.
8:42
There we go!
8:43
All right. Let's see.
8:44
Do you mind if I touch it a little bit?
8:46
- [Kimberly] Please.
8:47
- [Paula] Because, what we got think about,
8:49
is how long our strips are gonna be.
8:52
- Okay.
8:53
- 'Cause see there's our pan, - Yeah, okay.
8:54
- and there's our dough, so I think that's gon' work good.
8:57
- Perfect!
8:58
- Now, all I put in my chicken pot pie
9:00
in the way of veggies, is peas and carrots.
9:04
- Okay.
9:04
- So, I'm just using the frozen peas,
9:08
which are basically already cooked,
9:10
and I had pre cooked some crash carrots.
9:14
So, we're gonna take our dish.
9:17
- [Kimberly] You're making strips?
9:18
- [Paula] I'm making strips, Honey.
9:20
And I always start by putting just a little dough
9:23
in the bottom of our pan.
9:26
If you do the peas, - Yes.
9:29
- I'll be the carrot. - All righty.
9:31
- [Paula] Just a little bit for color.
9:34
And now it's time to put our chicken.
9:36
- Okay.
9:37
- And this may be the tedious part.
9:40
- (laughs) Picking chicken.
9:41
- 'Cause we got a hot chicken, right? (laughs)
9:44
- We sure do. That's thing still steaming.
9:46
- [Paula] Grab us a couple of forks
9:48
under that drawer, Kimberly, and a couple of knives,
9:52
and we'll just help this sucker alone.
9:54
(melodic country music)
9:55
Being cooked she... You get tough hands, don't you?
9:58
- You get tough fingers, yes.
9:59
When I was a little kid, my grandmother had the toughest.
10:02
She could just have scalding water on 'em,
10:04
and now I understand. - [Paula] I know.
10:06
- [Kimberly] You just want it shredded up?
10:08
- Yeah. I kinda just do it, kinda just like that.
10:10
- Okay. Chunky? - Yeah, just chunky.
10:13
(melodic country music continues)
10:15
- [Kimberly] (laughs) I can't believe
10:16
I'm picking chicken with Paula Deen.
10:18
(Paula laughing) Woo!
10:20
I could die and go to heaven, be this fine.
10:22
- No, baby, uh-uh, you mean too much. No, Ma'am.
10:27
- I believe we have 'em? - Uh-uh. Don't tell me-
10:30
- We haven't picked the chicken.
10:31
Is there any more chicken here?
10:33
- I'm sure I can find a piece of meat.
10:36
No girl. You've done good.
10:37
- Have I? - You listen to mama good.
10:40
- Yeah. (upbeat music)
10:41
- Now, all we gonna do at this point,
10:44
is just take our chicken, keep doing the same thing.
10:48
- I've never had a chicken pie
10:51
that's all layered up with crust.
10:53
- Really? - No.
10:54
- [Paula] Well, you know, to me, it's just not the same,
10:58
if you don't have that wonderful pastry through it.
11:02
It's gon' be might fine.
11:05
- [Kimberly] Here we go!
11:06
- [Paula] Now, our cheese straw dough.
11:09
- [Kimberly] Is gon' be pretty. (laughs)
11:12
- [Paula] This is a little bit more fragile
11:16
than regular day.
11:17
- Yeah. - Yum!
11:20
All right. Now, let me tell you what we're gonna do now.
11:23
I'm gonna bring this pot up here.
11:25
- That broth! - Yes.
11:28
And all we gonna do,- - [Kimberly] Get that!
11:31
- is offer our pie, - Wow!
11:34
- with that rich broth.
11:37
- [Kimberly] Hmm! That broth taste so good.
11:39
- And I bring that broth
11:41
because, you know, we got that pastry down in there,
11:44
so it's gon soak up our up-
11:46
- Soak it right up? - Yes.
11:47
- [Kimberly] Mm. Mm!
11:48
- [Paula] So we gon bring that broth all the way
11:52
to the tippy top. - [Kimberly] Wow!
11:54
- [Paula] And then, I got one more little surprise for it.
11:57
- [Kimberly] And more? More something else?
11:58
- Yeah. Now, I'm just gon dot, - Oh yeah.
12:03
- this with just a little bit of butter.
12:05
See, not a whole bunch.
12:06
- [Kimberly] Yeah, just a little.
12:08
- Just a little. (melodic upbeat music)
12:10
I love.
12:11
I want to, just 'cause I think it'd be pretty,
12:16
- Mm-hmm!
12:17
- with the cheese, and I want just,
12:19
- [Kimberly] To layer?
12:21
- put a little pepper. - And salt-
12:23
- Okay, and the devil made me do that one!
12:25
- Whew! (laughs)
12:27
That devil! He keeps coming back around.
12:30
- We're gonna put this in the oven 315,
12:32
and we're gonna bake it probably for about 45 minutes.
12:36
This is like gold, y'all.
12:38
If we don't need it this anymore, we will freeze it
12:41
for the next pie.
12:43
All right, come on in, Dumpling.
12:45
And I mean that in the true sense of the word.
12:48
(upbeat music) Comin' up!
12:51
Kimberly makes her fried green tomato salad.
12:54
These just look fabulous, girl.
12:56
- And great.
12:57
- [Paula] And later,
12:58
we mix up a batch of my strawberry basil lemonade.
13:01
- Yummy! - Mm!
13:07
I hope y'all are enjoying the show
13:09
and I want to hear from you.
13:10
Tell me what recipes or videos you'd like to see me
13:13
make by just leaving a short comment below.
13:17
Now, let's get back to the show, y'all.
13:21
(upbeat country music)
13:25
I'm so happy to turn this kitchen over to you girl
13:28
- I'm 'bout... The clamps. (laughs)
13:31
- Tell me what to do and I'll do it.
13:33
- All right. So, I like to do this little salad
13:37
with fresh peaches, you know, we're Georgia girls,
13:39
from Georgia Peaches, - [Paula] Yeah.
13:41
- [Kimberly] and fried green tomatoes.
13:42
- [Paula] Sounds yummy,
13:43
'cause we love our peaches,
13:44
and we love our fried green tomatoes.
13:46
- And it's got- - I have to say,
13:47
I have never eaten them together then.
13:49
- I think you'll like it. - So I can't wait.
13:50
- So the third of the tomatoes and the sweet of the peaches.
13:52
- Ah-ah? - It's good.
13:54
You wanna chop-
13:55
- You want me to slice your tom-
13:56
- Yes. - Chop 'em, or sli?-
13:57
- I didn't mean chops. Slice. - Okay.
13:59
- Slice those tomatoes and I'm-
14:01
- And what?...
14:02
I just got one more question.
14:04
You salt 'em to pull the water out of 'em?
14:06
- Should I? - Yes, 'em.
14:08
- Oh, yeah. (laughs)
14:10
Well, let's salt 'em to pull the water out of 'em.
14:13
- [Paula] Okay. (laughs)
14:14
- So I got a cup and a half of cornmeal here.
14:16
- Ah-ah. - And in the corn meal,
14:18
I'm gonna put a teaspoon of paprika,
14:21
a half teaspoon of cayenne.
14:22
- Woo! - 'Cause I like it spicy.
14:25
- Yes.
14:26
- About a teaspoon of salt,
14:29
and half a teaspoon or so of pepper,
14:31
and I'll mix that up really good.
14:34
Three eggs. I like to make a little assembly line,
14:39
scramble these eggs up right quick.
14:41
- Does that look like enough baby right here?
14:44
- Yeah. That's good.
14:46
- [Paula] I'm just gonna reach over here and get the salt.
14:49
- Okay.
14:51
All right. Now just a cup of flour.
14:53
Look up there? See, I didn't know this.
14:56
- Yeah. See there's so much water.
14:58
And then, I'll put mine on a paper towel,
15:01
- Okay.
15:02
- you know, and let them absorb the cloth
15:04
and just like 15 to 20 minutes that's right,
15:07
it keeps them from being soggy.
15:09
- Okay. All right.
15:10
So I'm just gonna transfer these on over to you.
15:12
- All righty. So I'm gonna do flour first,
15:15
- [Paula] Ah-ah?
15:16
- and then egg, and then the corn meal.
15:19
And you know what I like to cook these in? Coconut oil.
15:23
We've just started cooking a lot of,
15:24
a lot of things we fry,
15:26
- Ah-ah? - in coconut.
15:27
My mama even makes biscuits with coconut oil.
15:31
- You're kidding.
15:32
Well, I will have to try that.
15:34
Oh! Look at that peach?
15:36
- Oh, yeah! I love peaches.
15:38
- I do too. These are beautiful.
15:42
Now, how many of these peaches do you want sliced?
15:44
- Just a couple.
15:46
Please. Ma'am? - [Paula] Okie-dokie!
15:47
- [Kimberly] Get these in there. Oh yeah!
15:50
- Yup.
15:51
- There we go. All right! - Oh, my gosh!
15:55
- [Kimberly] Keep those going.
15:56
This is gonna be good! - [Paula] Yum!
15:58
- And I just cook 'em about three minutes a side.
16:00
- Kim, would you like for me to watch your tomatoes
16:04
while you're together your dressing?
16:06
- Sure. Please, Ma'am. - Okie-dokie.
16:08
- We're just gonna do this- - Let me just quickly,
16:10
just give that a squirt. - Those are good, don't they?
16:13
- Yes, they do. - Yummy!
16:14
We'll just do a simple little balsamic vinegarette here.
16:17
Couple of tablespoons of balsamic.
16:21
- Oh, look Kimberly! - They're look good?
16:24
- [Paula] Yes.
16:25
- [Kimberly] And I like to salt 'em when I turn 'em,
16:27
so that the salt seeps in they're really good.
16:30
- Okay. - Now 'cause they're all hot.
16:32
- [Paula] That's a good, firm, green tomato.
16:35
- [Kimberly] Yeah.
16:36
- You know, sometimes you get 'em in there
16:39
almost a little soggy,
16:40
'cause they're trying to wrap it on there.
16:43
All right. Now, you've got balsamic vinegar?
16:46
- Mm-hmm. - Dijon mustard,
16:47
- And some honey.
16:48
- And you're putting some of our wonderful
16:50
Savannah Honey in there.
16:52
- [Kimberly] Look at this fancy honey bottle.
16:54
Well, salt and pepper and about a quarter cup of olive oil.
16:57
- Okay.
17:00
Yum! (laughs)
17:04
- They're ready? - Yeah.
17:07
Well, here, let me take 'em up
17:08
and you get started on you salad
17:10
- Okay.
17:11
All we have is just some mixed greens,
17:15
and about a quarter cup of slivered almonds,
17:18
and a little bit of feta cheese,
17:19
which I think is right here in the fridge.
17:21
So, then we'll layer it with the peaches.
17:23
- Ah-ah? - They look awesome.
17:25
Put this balsamic on here. - Okay.
17:27
- [Kimberly] All right. Here we go!
17:30
- [Paula] Oh gosh!
17:31
- Toss this up a little bit on this plate it up.
17:34
- [Paula] That looks so good!
17:35
- Yeah. Put a tomato right on top.
17:37
Let's taste. - Okay, here Kim.
17:38
- Thank you. (upbeat country music)
17:42
- Uh, hot! - I know.
17:44
- Good. Mm!
17:47
- Boy howdy, is that good y'all?
17:49
- [Kimberly] Good.
17:50
- I can't wait to try this on that.
17:53
- Off of that!
17:54
- And then we're gon have that,
17:56
and then we're gon have some strawberry lemonade
17:59

18:35
- Y'all, look at this pot pie
18:38
- [Kimberly] Oh!
18:39
- [Paula] And what I smell is a cheese.
18:41
- Me too.
18:42
It smells like you're cooking cheese straws in here.
18:44
- I does. It smells just like
18:45
we have baked some cheese straws.
18:48
And it is so hot, Kimberly. - It's bubbly!
18:52
- We gon have to have something to wash this down with.
18:54
- [Kimberly] Whew!
18:55
- So why don't we get together
18:56
and make our strawberry lemonade?
18:59
We have got a simple syrup here in our pot
19:02
that we cooked with fresh strawberries
19:05
and some fresh basil.
19:07
So what we're gonna do is just drain that. And look at?
19:11
- It looks beautiful.
19:14
- Yes. - Yummy!
19:15
- We've got our two cups of lemon juice,
19:19
and just for looks.
19:21
- [Kimberly] Yeah, that'll be so pretty.
19:23
- Yes. We've gotta have a few lemon slices.
19:26
- My little Daisy loves pink lemonade.
19:29
- Does she? - Mm-hmm.
19:30
We gotta make... I gotta make this with her.
19:31
- I was gon say, you'll have to make this for Daisy.
19:34
- [Kimberly] I give it a little stir?
19:35
- Yes. Give it a stir.
19:39
- Ooh! - Wow!
19:40
There is nothing like sitting on the front poach, y'all
19:45
and having a little glass of homemade lemonade.
19:49
- Mm-hmm. Mm!
19:50
I've been saving up for this all day.
19:52
- Oh, my goodness! Look?
19:53
- Whew! It's beautiful.
19:56
- Thank you. Wow, kabow!
20:00

20:02

20:04

20:05
- Then old country Chicken pot pie.
20:08
- All right. - Oh, yum!
20:09

20:11
- All right. I'm not eating without your girl.
20:13
- [Kimberly] I don't know what to try first.
20:15
It's gonna have to be the pie.
20:16
- You think? - Oh, yeah!
20:17
- Just don't burn your mouth, - Okay.
20:19
- because you have got a voice
20:22

20:24
- Aw!
20:25
- and we don't want you messing that up.
20:26
- Okay. Look at that?
20:28
