And they're expecting some Uncle Bub's beer biscuits.

So what beer would you recommend to use in beer biscuits?

- Well, let's go look at what we have and

- Well, this last one here, I just poured as a Munich style.

Helis it's a very mainstream kind of pale lager.

What most people are familiar with.

- And that's a traditional Irish dry stout.

Although it's a dark beer it's very light bodied,

It has sort of a roasted kind of espresso character too.

So that might be one you stay away from,

We make a stout bread out of that here and a pumpernickel.

These are no nonsense buddies of mine that races cars.

They like basic down to earth food.

So I'm going to make them a chocolate almond pie.

Very, very simple.

I'm going to use the double boiler method

and I'm going to put the marshmallows into the bowl

and you could use miniature marshmallows

or whatever you have.

And milk.

And I'm going to add the Hershey bars.

And we're just going to stir that until it smelted.

Before you know it we'll have this pie made.

And you see that chocolate it is turning that

milk into chocolate milk.

As soon as that milk gets hot

it'll melt the marshmallows right away.

I can't hardly wait to go to the races.

These guys have some really jazzy vintage cars.

Okay. This is melted now.

So we're going to take this off,

and put it in the ice bath

and let that cool down because we've got some nice

fresh sweetened whipped cream right here.

And if we added that whipped cream to our hot chocolate

Just for a few minutes, doesn't have to be slap cold

All right, that should be just about ready

Now, I told you, these guys are no nonsense guys.

this Graham Cracker crust as much as they would a homemade.

Now you can use a frozen whipped topping if you like,

like cool whip or something like that.

But personally it's worth the time to whip the fresh cream.

People in Georgia, call it chicken and rice.

I love the name chicken bog though.

Now I've gotten one quart of water boiling,

I'm going to add another quart

giving us eight cups of water.

Now I'm adding house seasoning to that water,

a seasoning salt,

black pepper,

and a few Bay leaves.

A stick of butter,

an onion.

Now the recipe calls for red pepper, but I think

I think I'm going to put some Louisiana hot sauce in it.

Now I'm going to take one three pound chicken fryer

and put over in here.

I have cut this into quarters

and I'm going to add some smoked kielbasa.

And we're going to let that come to a boil

Our pot is still nice and hot and boiling,

Now you could actually make this dish

and leave the chicken on the bone.

All right, now we're going to add long grain white rice

for about 10 minutes.

And then I'm going to put the lid on

You need to allow about 20 minutes for rice to be

really done through and through and be nice and fluffy.

and now I've cooked it for 10 minutes with the lid.

So when I check this pot, the rice should be nice and fluffy

and have drank up all that chicken broth.

So I'm almost through with the chicken.

I'm trying to pick it rather carefully.
