- Hey y'all.
0:02
When it's poker night at our house,
0:04
everyone's a winner,
0:05
'cause today we're gonna be dealing with three of a kind.
0:09
My sons Jamie and Bobby are in the kitchen with mom today.
0:13
Jamie is gonna whip up some chicken nuggets
0:15
covered in this favorite snack, potato chips.
0:20
Then he shows us how his herb cheese and cracker bits
0:22
are worth more to him than his poker chips.
0:26
And next up, Bobby takes us down memory lane
0:29
with our Grandma Paul's caramel corn.
0:33
Sweet and salty, just perfect for a late night game.
0:37
Then when it's my deal
0:39
I'm gonna shuffle up a fresh fruit pizza for dessert
0:41
that'll just round out our full house.
0:45
So y'all up open the card table
0:47
and pull out the poker chips
0:48
'cause the lady and sons are in the house.
0:53
In case y'all have just joined us,
0:55
I've got two very special men in my life
0:57
that I wanna introduce you to.
1:00
And this tall pretty thing right here
1:03
with the dimples and the blue eyes
1:06
is my son Jamie.
1:08
And this one over here--
1:10
- Short.
1:11
- With that beautiful olive skin
1:13
and those blazing black eyes
1:14
is my youngest son, Bobby.
1:17
So get to work.
1:18
- Hey mama.
1:19
- So what are y'all cooking for me?
1:20
- [Jamie] Mom, today we're doing chicken nuggets
1:23
and we're gonna roll 'em in potato chips.
1:25
- Oh you know how your mama loves a tater.
1:27
(laughing)
1:29
Perfect.
1:30
And what are you doing, son?
1:31
- I'm making the best honey mustard sauce known to man
1:33
to go with those chicken nuggets.
1:35
- That's my boy.
1:36
- [Jamie] This chicken is gonna take a little bit longer
1:38
than Bobby's sauce so let's get started on this end first.
1:40
- [Paula] Okay.
1:41
- This is really easy too.
1:42
All we're gonna do is start with
1:43
two and a half cups of crushed sour cream
1:45
and onion potato chips.
1:47
And we don't want them into little bitty tiny pieces,
1:49
so we're just gonna barely break 'em.
1:50
We're gonna put them into this shallow bowl.
1:52
And then kind of like most chicken batters that we do,
1:55
it just consists of one egg
1:57
and two tablespoons of milk.
1:58
- [Paula] Are you gonna season your chicken or anything?
2:00
- No, I'm not doing anything with it.
2:02
A lot of flavor's gonna come out
2:03
of these potato chips.
2:04
- Uh-huh, 'cause the salt's gonna be in your chips.
2:06
- And the sour cream season on it too.
2:08
- [Paula] Gotcha, gotcha.
2:09
- So we're just gonna put that into the batter
2:11
and we're just gonna lightly toss it in the potato chips.
2:14
Not too much at one time.
2:15
- [Paula] Okay.
2:16
I see that you picked out my very favorite
2:18
cast iron pan to choose these in.
2:21
- It makes clean up so easy,
2:23
although you really don't wanna do
2:24
too much cleaning on your cast iron
2:26
because it soaks up the flavor,
2:27
and it's just the best thing in the world to cook in.
2:29
So while you'll never scrub it down with a Brillo pad,
2:32
the raise just makes it a lot easier to clean up.
2:35
- [Paula] All right, Bobby.
2:36
- All right mom.
2:37
- [Paula] What are you up to over here?
2:38
- I'm making our honey mustard.
2:39
Starting with three quarters
2:40
of a cup of mayonnaise,
2:42
which we eat like yogurt in the south.
2:45
- Like ice cream. (laughing)
2:46
- Right.
2:47
Three tablespoons of honey.
2:50
We are going to add two tablespoons of yellow mustard.
2:54
Come on mustard.
2:56
- Ooh, oops.
2:58
(laughing)
3:00
Excuse us.
3:03
Again.
3:04
(laughing)
3:07
Bobby.
3:08
- Sorry.
3:11
We're gonna add a little horseradish to taste.
3:12
I like a little paprika in my honey mustard for color.
3:16
So I'm gonna add just a little bit.
3:17
We're gonna give her a whirl.
3:19
And for consistency you can always
3:22
add a little bit of lemonade
3:24
or orange juice or fresh squeezed lemon
3:27
or fresh squeezed orange, pineapple juice.
3:28
And it looks pretty good.
3:31
And I'm gonna let my momma be the taste tester here.
3:34
- Mm.
3:38
- That is pretty good.
3:40
- It's pretty good.
3:43
I think...
3:44
(laughing)
3:50
Hey darling.
3:52
You ready to finish it?
3:53
- I am.
3:55
Oh, okay, I see.
3:56
- I think that I would add
3:58
just a little bit more horseradish.
4:03
(Jamie laughing)
4:07
Wouldn't you?
4:08
- Yes, ma'am, immediately.
4:11
Just a little more for you.
4:12
'Cause I know you're spicy.
4:15
- Is that a compliment?
4:17
- No.
4:18
(laughing)
4:19
- Of course it is, I love you.
4:21
See if that's a little better.
4:25
- Yes.
4:27
I love it, love it.
4:28
All right son, how are you coming over here?
4:30
You ready to get your chicken nuggets in the oven?
4:33
- Yes, ma'am, I've got it all laid out
4:34
in our pain here.
4:36
This is a little bit of butter.
4:38
We're just gonna drizzle it over the top of this.
4:40
- They look great,
4:41
but why don't you put some paprika on 'em to brown 'em?
4:46
(Bobby laughing)
4:47
- Pass me the paprika, Bobby.
4:49
Little paprika to help brown.
4:51
I'm gonna put it in the oven,
4:51
and it's gonna go for about 15 minutes
4:53
on 350 degrees.
4:55
And so we'll just go ahead
4:57
and pop that right in.
4:59
- [Bobby] Got the honey mustard ready.
5:00
- Okay, and I've got a plate,
5:04
and I've got a cup for your sauce.
5:09
- [Bobby] It's perfect, it's perfect.
5:10
- [Paula] Yeah, looks yummy.
5:13
- [Jamie] I've got some chicken
5:14
in the oven that's ready to come out.
5:15
- [Paula] Even better.
5:17
- There you go.
5:17
- Oh my goodness.
5:19
Looks so good.
5:22
Now see aren't you glad you used the paprika?
5:25
(laughing)
5:27
- Yes ma'am, I am.
5:27
- Didn't it make it pretty?
5:29
- [Jamie] Sure did.
5:31
- Gosh, look, I love the brown crispy.
5:33
- [Bobby] Me too.
5:38
- So good.
5:40
Chicken and potato chips.
5:41
- You know what, as much as I love your fried chicken,
5:46
it doesn't have nearly the calories.
5:49
- Well good, I'm glad.
5:55
It's wonderful.
5:56
It really is.
5:58
- It really is.
5:59
- It is.
6:00
- So what are y'all cooking up next?
6:01
- One of my favorites,
6:02
herb cheese and cracker bits,
6:03
perfect for a poker game.
6:04
- What are you making, son?
6:05
- I'm making grandma Paul's caramelized popcorn.
6:07
I remember when we used to go out to grandma Paul's
6:09
and she used to make it for us,
6:10
and I loved it,
6:11
and so will you.
6:15
I so hope y'all are enjoying the show.
6:18
And if you do.
6:20
Be sure to click like, subscribe and
6:22
notification bell so you'll never miss a video.
6:26
And we'll be right back after the break.
6:34
- Boy, those nuggets and sauce were great,
6:36
they're gonna be perfect for tonight's game.
6:38
- I've been looking forward to poker night.
6:40
- [Paula] That's wonderful.
6:42
- It brings back great memories of grandma Paul's house,
6:43
when she used to make the caramelized popcorn
6:45
and the chocolate popcorn.
6:47
And it's so simple that even I can do it,
6:51
so four quarts of popcorn to start with.
6:54
And I haven't really measured these nuts,
6:57
but I like mine pretty nutty.
7:00
All right, I'm gonna start
7:01
making the caramel glaze for this,
7:02
and we're gonna start out with two sticks of butter.
7:05
- Always a stick of butter.
7:07
- [Bobby] Indeed.
7:08
- [Paula] Are you poking fun at me?
7:09
- Always.
7:10
(laughing)
7:12
- Two cups of brown sugar,
7:12
and you wanna make sure that you pack that brown sugar
7:14
down in there real well.
7:17
One teaspoon of salt
7:18
that I'm about to add to my caramel glaze here.
7:22
And then to finish it off
7:24
is gonna be a half cup of Karo syrup.
7:26
I'm gonna cook it for about five to eight minutes.
7:30
And I've got one back here that's finished.
7:34
- It's looking good son.
7:35
- It is looking good.
7:38
- So now it's time to
7:41
add your baking soda.
7:42
- One teaspoon of baking soda.
7:45
- [Paula] Is it gonna foam?
7:46
- It's gonna be delicious.
7:47
Yes, it's gonna foam.
7:48
And it looks like we're good to go.
7:50
- [Paula] Doesn't it look delicious?
7:52
And smell wonderful.
7:53
- About to have a clean up.
7:55
- Yes, I am.
7:56
- All right, you better pour it over your popcorn.
7:58
- [Bobby] Just gonna pour that right over the popcorn.
8:00
- Ooh, can I stir it?
8:02
Can I be stirring it for you?
8:03
- Please.
8:04
- It looks yummy son.
8:05
The first time you ate this,
8:08
gosh, you were a little bitty boy, weren't you?
8:11
- I was probably four or five.
8:14
- Maybe three.
8:16
- [Bobby] Jamie, how you doing over there?
8:17
- Doing good.
8:18
I'm fixing to get this recipe started.
8:19
Iv'e just got two boxes of crackers.
8:22
And you have to make sure
8:23
that you get the cheese Ritz crackers.
8:24
It won't take you long to discover
8:26
you've made a mistake
8:27
until you dump oil and dill weed on a peanut butter cracker.
8:31
How we're gonna do this
8:33
is I need a half a cup of oil.
8:34
We're gonna do a heaping tablespoon of dill.
8:40
Okay, I've got a teaspoon of celery salt in here,
8:43
and I'm just gonna put a teaspoon
8:43
of garlic powder in here as well.
8:47
And the final thing is just one pack
8:49
of ranch dry dressing mix.
8:52
- You know what, Jamie?
8:53
- Ma'am.
8:54
- One time I went to make these
8:55
and I didn't have any ranch dressing,
8:58
but I had Italian, dry Italian.
9:01
- How was that?
9:03
- [Paula] Oh my God, it was delicious.
9:06
- [Bobby] All right, mama,
9:07
I'm gonna need your help right here, okay.
9:08
- [Paula] Okay.
9:09
- [Bobby] It's time to pan up this caramel popcorn.
9:11
- [Paula] Okie doke.
9:12
- We're gonna put it in a 250 degree oven
9:14
for about an hour.
9:14
Stir it every 15 minutes.
9:16
- [Paula] Sounds good to me.
9:17
And that'll crisp it all back up.
9:18
- [Bobby] It'll be wonderful.
9:19
You won't believe it.
9:20
- [Paula] Can't wait to eat.
9:22
All right, you gonna put it in this oven, son?
9:24
- I am.
9:25
- Okay.
9:32
How you doing son?
9:33
- Doing good, mama.
9:34
I'm fixing to coat these crackers,
9:35
and we're gonna be almost done.
9:37
So I'm just gonna take our mixture we did earlier
9:39
and I'm gonna pour this on.
9:41
I'm gonna make sure and get all the good tastings
9:44
out of this bowl.
9:45
- [Paula] All right, I taught you that much,
9:47
waste not, want not.
9:48
- You taught me that,
9:50
and how to keep an extra 20 pounds on, thank you very much.
9:56
So what we're gonna do now,
9:58
mom, is make sure that we shake this up
9:59
really well to get all the crackers seasoned well.
10:01
That or you can put it in your trunk
10:03
and go down the dirt road.
10:04
We're just gonna make sure
10:05
and coat every cracker really good.
10:07
That's where all the flavor comes from.
10:08
Okay what we're gonna do now
10:10
is put our Ritz cracker mix
10:11
into the refrigerator,
10:12
and this has to stay in for 24 hours.
10:13
And before you eat it,
10:15
pull it out an hour before,
10:17
let it sit, get to be room temperature,
10:19
and the flavors are so good.
10:21
And that's it.
10:22
All you have to do is eat.
10:23
It's just delicious.
10:26
- [Paula] Is it taste time?
10:27
- Mm-hmm.
10:30
That's good, Bobby, you want one?
10:32
Not bad.
10:34
- Just like I remember.
10:35
- All right, Bobby, darling,
10:37
how's yours doing?
10:38
Is it to get yours out?
10:39
- It's time to taste the caramelized popcorn.
10:44
- Oh it looks delicious, doesn't it?
10:47
- [Bobby] It really does, it looks perfect.
10:47
- What does this remind you of, Bobby?
10:50
- Good times.
10:51
- Yeah.
10:53
It's delicious.
10:54
- It's so good.
10:55
- It's kind of gotten stickied up.
10:58
Like you--
10:59
- [Bobby] Like you want it.
11:00
- Yes, like you want it.
11:01
And coming up next, it's my turn to cook,
11:04
and I'm gonna make fresh fruit pizza.
11:14
I hope y'all are enjoying the show
11:16
and I want to hear from you.
11:17
Tell me what recipes or videos you'd like to see me
11:20
make by just leaving a short comment below.
11:24
Now, let's get back to the show, y'all.
11:30
All right, the dish that I'm gonna be fixing
11:32
for our poker game today
11:34
is one of Jamie and Bobby's favorite dishes.
11:37
And it's called fresh fruit pizza.
11:41
And it's so good.
11:42
Don't you love it guys?
11:43
- Love it.
11:44
So simple too.
11:45
- Oh, it's so simple.
11:46
I'm gonna start with just a refrigerated cookie dough.
11:50
And I'm gonna use a standard pizza pan.
11:53
While I'm doing this, Jamie's over here cutting fruit,
11:57
and Bobby's over here making the cheese sauce.
12:01
- I've got eight ounces of cream cheese
12:03
and about a half a teaspoon of almond extract.
12:05
- Okay.
12:06
Taste that son, 'cause sometimes I like to slip in
12:06
a little bit more of the extract.
12:09
See if it needs just a little bit more.
12:14
Could it?
12:14
- No, actually it's good.
12:16
- It's good like that?
12:20
Is he smart mouthing me?
12:22
Sometimes I can't figure it out.
12:28
Thank you, my precious.
12:29
- [Bobby] You're welcome, ma'am.
12:31
- [Paula] All right,
12:32
now I've about got my dough worked in this pan.
12:35
How you coming, darling, over there?
12:36
- Fine, ma'am, I'm just cutting up this fruit.
12:37
- But are you cutting it the way I like it?
12:40
- You're standing right next to me,
12:42
yes, ma'am I am.
12:45
- Thank you, son.
12:46
- [Jamie] You're welcome, ma'am.
12:48
- And how's that cream cheese over there, darling?
12:50
- [Bobby] It's ready to go.
12:51
- Okay, well mine's ready too.
12:53
So I'm gonna put this in the oven.
12:55
About 10 to 12 minutes
12:56
of a 350 degree preheated oven.
13:00
And we're gonna have the best pizza dough
13:03
you ever put in your mouth
13:04
in just a few minutes.
13:10
All right guys, I've already gotten one pizza dough ready.
13:14
All right, son, you wanna frost the crust?
13:17
- [Bobby] Yes, ma'am
13:17
- It's gonna be so good with that fruit.
13:19
And speaking of fruits.
13:20
(laughing)
13:22
Jamie is cutting up the fruit over here.
13:24
- Imagine that.
13:25
Remember to put all your fresh fruit
13:28
through a lemon wash,
13:29
and that keeps it from browning so quick.
13:30
That's your apples and bananas,
13:32
and anything that can bruise.
13:33
- All right guys, our pizza's ready to assemble now.
13:35
Before we put the fruit,
13:36
I'm gonna sprinkle just about
13:38
maybe a tablespoon of powdered sugar
13:42
over that cream cheese to just
13:43
give it a little bit of sweet taste.
13:47
I really want my cookie pizza
13:50
to look like a regular pizza.
13:51
You know how that pizza has that big
13:53
old puff of crust all around it?
13:56
So I really want this pizza to look like that.
13:58
So I'm gonna try to achieve that
14:00
by using a peach around the edge.
14:04
Just like this.
14:05
And I'm just gonna go all the way around.
14:09
Do y'all remember,
14:09
what did we spend,
14:11
either 20 or 25 consecutive Thanksgivings
14:15
at Uncle Bernie and Aunt Glenice's house
14:17
in Statesboro.
14:19
If we weren't eating, we were playing poker, weren't we?
14:21
- Every night.
14:22
- And Uncle Bob, oh my goodness,
14:24
it would kill him if he lost $1.
14:27
He was ready to take his records and go home.
14:29
You remember?
14:31
- [Jamie] I sure do.
14:32
- But we had more fun.
14:33
And I remember Uncle Bernie,
14:34
God rest his soul.
14:36
When it was time for him to anty,
14:38
he'd throw in his money
14:40
and he'd say alcihol.
14:42
(laughing) you remember that?
14:44
Instead of I call, alcihol.
14:47
- 'Cause that's what he was full of, alcihol.
14:50
(laughing)
14:51
- You might be right.
14:53
- [Jamie] Do you want me to start heating up this marmalade
14:55
or is it too--
14:56
- Yes, son.
14:57
But don't heat it,
14:58
don't get it like real, real thin.
14:59
I've got Jamie back here now
15:01
heating up just some store bought orange marmalade.
15:05
And we're gonna drizzle that on top of our pizza.
15:09
- Really the only way you could mess up this part
15:11
is to heat it up so much
15:12
that it breaks down
15:13
and it turns into a watery,
15:15
you want it just a nice medium
15:17
so it runs off your spoon.
15:18
But you just have to be careful.
15:20
Too much heat and it'll totally break down.
15:21
- I don't think that needs another thing, do you guys?
15:24
- It's beautiful.
15:27
- Just to sweeten up that fruit
15:29
just a little bit more.
15:33
Guys, it's just looking too, too good.
15:36
- Mom, do you want me to go get
15:37
the poker table and the chips ready?
15:38
- Shoot, yes, son.
15:40
I'm done here.
15:42
- [Jamie] Ah, it looks great.
15:44
- Not till I have a bite of that.
15:45
- You want a piece now?
15:47
- Yes.
15:48
- Okay.
15:53
- [Jamie] God, that looks delicious.
15:54
It smells so good.
15:55
- The fresh fruit is just,
15:57
look at that.
16:00
It's fantastic.
16:01
- [Bobby] Give me a piece.
16:07
- How about a strawberry.
16:08
I didn't get a strawberry on that piece.
16:11
Add a strawberry.
16:13
That's your brother's, he asked for it first.
16:15
(laughing)
16:22
- Oh my God.
16:23
- I'm glad you like.
16:24
Don't you wish you could have some?
16:28
Would you like some?
16:29
- Please, ma'am?
16:30
- Yes.
16:32
- Cut me a slice, will you?
16:33
- I would love to cut you a slice.
16:39
Gotta have a strawberry.
16:42
This is really the way to eat this pizza.
16:46
Is just like that.
16:51
Is it good?
16:52
It's real good, isn't it.
16:57
- How many flies have you killed
16:59
with your bare hands today?
17:00
- Son, we're on the air.
17:01
- Are we?
17:03
- Just for that you get some more
17:04
little bit of around there.
17:06
Okay, I gotta have something to wipe off.
17:08
Now wasn't that good?
17:08
- Thank you, ma'am it was delicious.
17:12
- Y'all stick around because I got some hot tips for you.
17:17
Maybe about cooking,
17:18
maybe about playing poker,
17:20
'cause I'm gonna beat their brains out.
17:24
- It's all your money, anyway.
17:25
(laughing)
17:33
I so hope y'all are enjoying the show.

17:51
- I'm ready to get in the table.
17:52
Last one there is a rotten egg.
17:54
(laughing)
17:57
That would be you.
17:58
- No.
17:59
- Oh no.
18:02
- My vignette for today, y'all.
18:04
Brush your teeth after every meal.
18:06
- (laughing) That, he's on it y'all.
18:12
He's a jokester.
18:15
- You're just mad 'cause yours got stolen.
18:17
- Somebody did steal mine.
18:19
But I got a real tip.
18:22
My tip is to flavor your cookie dough
18:26
with sweetened cocoa powder, make you a chocolate crust.
18:29
And if you really want some like cheese on it,
18:35
how do you like this melted mozzarella cheese?
18:42
It's really not cheese though,
18:45
it's white chocolate.
18:47
But it makes it look like cheese, doesn't it?
18:50
And on top of that you can sprinkle a little coconut.
18:56
- Okay.
18:57
(laughing)
18:58
If you wanna shake up this caramelized popcorn,
18:59
once this cools you can use malted milk balls
19:01
or plain m&m's or heath bar bites,
19:05
and just let your imagination go wild.
19:07
- Sound good.
19:08
Why don't we put some more?
19:09
(laughing)
19:12
- All right, a lot of them.
19:13
- That's my imagination.
19:14
So, Jamie, what's your tip?
19:16
- My tip for the chicken nuggets today, y'all,
19:18
don't forget that the coating for your chicken,
19:20
you can change it any way you want to do.
19:21
We did a sour cream and onion potato chip today,
19:23
but don't be afraid to do cream or corn chips.
19:26
And a really good chef told me
19:27
that Captain Crunch makes a great coating for the chicken.
19:30
- My tip to both of you guys is don't bet all your money
19:33
on a hand if it ain't a royal flush.
19:36
Y'all remember that.
19:40
All right guys, y'all ready to play?
19:42
- I'm ready.
19:43
- Good.
19:43
I feel hot tonight.
19:47
You know, my boys really are good cooks,
19:50
but we thought it'd fun to share some time with y'all
19:53
and use some of the recipes
19:55
from their boyhood that they love so much,
19:58
like Jamie's potato chip encrusted chicken,
20:01
and Bobby's honey mustard.
20:03
And the fruit pizza.
20:05
And the herb cheese bits.
20:06
And of course the caramel popcorn
20:08
that y'all's great grandmother used to make
20:10
for you when you were teeny little boys.
20:13
I know you love that.
20:14
- It's delicious.
20:15
Thanks for having us today, mama,
20:16
it was awesome, we had a great time.
20:17
- And as my mama always says,
20:20
best dishes from our kitchen to yours.
20:23
- Bye, America.
20:28
I told y'all I felt hot tonight.
20:30
- Yep.
20:34
