- Hey, y'all I'm Paula Deen
0:02
and there's nothing I like better
0:04
than a night out at the movies.
0:06
And I mean really out.
0:08
So today I'm gonna show you what's in my goodie basket.
0:12
When I go to the flicks like savory bacon breadsticks
0:16
just perfect with a summer splash
0:19
or spread the word,
0:20
get the crackers for this cheesy chaser,
0:22
or maybe a quick sweet peanut treat,
0:25
you can eat till the credits roll,
0:28
followed by a popcorn recipe that's really worth its salt.
0:32
And finally, we're gonna find some fine wine
0:35
to match up with my movie munchies.
0:37
So pull up a piece of lawn
0:39
and unroll your blanket, because it's movie night.
0:43
Have you ever been to Italy?
0:45
If the answer is no.
0:47
Well, neither have I,
0:48
but I had a friend share a story with me about
0:52
an experience that he said was probably
0:55
one of the most beautiful things that he had ever witnessed.
0:58
He was in Italy
1:00
and that night all the village people came out,
1:03
hung up a sheet in the streets
1:04
and watched a movie, drank wine
1:07
and enjoyed their favorite foods.
1:10
Well, the wine makers here in our country
1:13
went to Italy to study wine
1:14
and when they saw this going on
1:16
they decided it was a wonderful idea
1:19
and they brought it back to the United States.
1:21
So a lot of your wineries today
1:24
have what they call "a movie night" on the weekends.
1:27
You come out in the open air, watch the movie,
1:30
drink your wine and eat your food.
1:32
And that's what we're doing today.
1:34
I am preparing my favorite picnic snacks
1:37
to take to our local winery later this afternoon.
1:40
I'm fixing to learn a little about the wine
1:43
that I should have
1:44
with a simple sensational movie night snacks.
1:47
And these bacon cheese sticks
1:49
are both simple and scrumptious.
1:52
Well, I don't think I've ever had a cocktail party
1:55
that I didn't serve these.
1:57
You just take your piece of bacon
2:00
and just spiral it around
2:02
and I recommend that you use breadsticks
2:04
that have the sesame seeds
2:06
because the sesame seeds give it a rough texture
2:10
and that bacon will adhere to it.
2:12
Another thing I love about this dish
2:15
is I prepare these in my microwave a lot of times
2:18
I'm not really a big microwave fan
2:21
but these do beautifully in the microwave.
2:24
And I can't remember exactly how it will take them to cook
2:28
but you'll just put them on high for
2:29
about two minutes rotate them and take it from there.
2:33
When the bacon is brown and crisp
2:35
and clinging into the breadstick,
2:37
you'll know they're done.
2:39
In fact, I have some in the oven right now
2:42
depends on how many I'm serving.
2:43
I may have to do like three different cookings of these
2:47
but I've got a pan that should be about ready.
2:50
So I'm gonna finish up here
2:51
and we're gonna check behind us and see what we've got.
2:55
These go so great with wine, or even a beer.
3:01
So let's see what we've got.
3:14
Yeah, looking good.
3:15
You can see the breadsticks
3:16
have even gotten a little bit browner
3:18
and the bacon is adhering to the breadsticks.
3:21
So I'm gonna stick these in
3:29
and while these are warm
3:31
we're gonna take just a graded Parmesan cheese.
3:34
And we're gonna just doctor it up
3:35
with a little garlic powder half a teaspoon for that much.
3:39
We're gonna stir it up
3:40
and then we're gonna take our breadsticks
3:43
and we're just gonna dredge them in that mixture,
3:46
while they're warm.
3:47
because if you wait for them to cool
3:49
might not stick quite as well.
3:52
The beauty of this hors d'oeuvres
3:54
is that you can make it a day ahead.
3:56
And lots of times, usually when I'm making these
3:59
I'm making these for a hundred or 200 people
4:01
and I'll take just an ordinary brown grocery sack
4:05
and throw them into the sack
4:08
and just roll it up and seal them up good
4:10
and they're just fine for the next day.
4:12
So they don't take up cabinet space or bowl space.
4:16
They really work with you.
4:19
And isn't that an interesting and pretty appetizer
4:24
bread, bacon and cheese,
4:26
I don't know that it gets any better.
4:29
(biting)
4:31
(crunching)
4:33
You'll love them.
4:35
These are ready to pack up now and when we come back
4:38
I'm gonna show you how to make
4:40
a yummy hot baked cheese spread and sugar peanuts.
4:47
I so hope y'all are enjoying the show.
4:50
And if you do.
4:51
Be sure to click like, subscribe and
4:54
notification bell so you'll never miss a video.
4:58
And we'll be right back after the break.
5:06
This next dish that I'm working on
5:08
is called baked cheese spread.
5:11
It's a slamming dish that you won't believe the end results
5:16
but just a few minutes time,
5:18
we're gonna grate our cheese
5:20
and I'm using a sharp cheddar.
5:23
If you like mild by all means, use mild.
5:26
But in my baking dishes, I just love the sharpness.
5:30
And I've actually doubled the recipe for tonight,
5:34
because I know I'm gonna have some folks
5:36
hungry and loving it.
5:40
So, we've got our cheese
5:43
or using just a chopped sweet onion
5:48
and my all time favorite condiment mayonnaise.
5:54
(mayonnaise scooping)
5:57
I even eat mayonnaise on my French fries
6:01
and I've actually heard that it's a European thing.
6:04
I don't know if that's true or not.
6:06
I thought I had invented
6:09
a little squirt of Worcestershire, just a dash,
6:13
little shot of hot sauce
6:16
or maybe a little more dash.
6:19
We're just gonna stir that up.
6:20
Now you can't get any simpler than this.
6:23
I was traveling,
6:25
gosh, I think I was in Pennsylvania
6:27
and a young woman came up to me and she said,
6:29
I have your cookbook
6:31
and I made a recipe out of it the other night
6:34
and took it to my literary club meeting.
6:36
And I said, oh, I hope it was good.
6:39
She said, yes, it was delicious.
6:41
It was your baked cheese spread.
6:43
And at the end of the meeting,
6:44
we vote on the favorite dish that was brought
6:47
and she said the baked cheese spread won.
6:51
So I think you're gonna love it.
6:54
We're just gonna put this in a baking dish
6:57
kind of looks like Pomona cheese, doesn't it?
7:00
We're just gonna spread it out and throw it in the oven
7:03
and when it's hot and bubbly and melted
7:05
it'll be time to take it out.
7:10
Now while that's baking,
7:12
I'm gonna work on a snack
7:13
that the little children really love.
7:16
And these are sugared peanuts.
7:18
You just start with a nice heavy skillet
7:22
and I've had this home,
7:23
but I'm gonna turn it up a little bit more,
7:25
just sugar and water.
7:32
We're gonna just stir that
7:33
until that sugar begins to dissolve just like this.
7:38
This recipe actually calls for a raw peanut
7:42
but today I'm using a roasted unsalted nut
7:46
and we're gonna see if it'll work as well.
7:47
And I really think it will.
7:50
(nuts pouring)
7:53
And you see some of them have this shell still on them
7:56
or not the shell, but their skin.
7:59
And I love seeing the skin on them.
8:01
It gives them a different color and a different texture.
8:04
So we're just gonna stir these
8:06
and cook them until they begin to crystallize.
8:09
In the south we would go to our local produce stands
8:12
to get our raw peanuts
8:14
and possibly up north,
8:15
you could go to your health food store.
8:18
So you can see they're starting to caramelize
8:22
and get real, real hard.
8:24
I think this roasted peanuts gonna work
8:28
all we're gonna do is
8:30
pour them on a cookie sheet
8:32
and just separate them with our spoon.
8:34
Just like that.
8:36
We're gonna drop these in the oven now
8:37
for about five minutes
8:39
and just let them finish dry and out for us.
8:45
And it looks like our baked cheese spread is ready.
8:53
How delicious does that look?
8:59
Oh my goodness. I got so into smelling and looking at that.
9:01
I bet our peanuts are ready, so I better check.
9:09
Thank goodness.
9:12
Thank goodness for roasted unsalted peanuts.
9:15
They've worked beautifully.
9:17
You can hear the crispiness
9:20
of them hitting the sides of the pan.
9:23
They look like they've worked.
9:24
So let's taste.
9:29
They're perfectly delicious.
9:31
When we come back,
9:33
I'm gonna make it my grandma Paula's
9:35
chocolate popcorn balls.
9:38
So see you in a minute.
9:42
I hope y'all are enjoying the show
9:44
and I want to hear from you.
9:45
Tell me what recipes or videos you'd like to see me
9:48
make by just leaving a short comment below.
9:52
Now, let's get back to the show, y'all.
9:59
There's all different kinds of popcorns
10:01
that you can buy out there.
10:02
You can buy an already bagged up pre cooked
10:04
but I just loved doing it the old timey way,
10:08
This really brings back some nice memories.
10:10
I'm gonna put just enough oil
10:12
to slightly, slightly cover our pan.
10:16
And then I'm gonna (popcorn pouring)
10:19
put a single layer (popcorn pouring)
10:23
of popcorn in the pot.
10:25
And you can see when I shake it up
10:27
that makes like a single layer.
10:28
We don't want to overfill our pot
10:31
because when it starts popping,
10:33
we could have a big mess.
10:35
Naturally, I had the pot already hot.
10:37
When I poured in the oil
10:39
you can hear the popcorn sizzling in that oil.
10:45
This is dangerous because
10:47
we don't know when one of those kernels
10:48
are gonna come flying up.
10:51
Up there it went.
10:53
I remember that my mother had a popcorn pot
10:57
that she used on top of the stove
10:58
and it had a clear lid
11:00
so we could watch it as it popped
11:02
but I don't even think they make those anymore
11:05
but maybe I could find one at junk shop.
11:08
(laughs)
11:11
I can eat it fast enough.
11:13
(chuckles)
11:14
(popcorn popping)
11:17
(chuckles)
11:21
Don't do that at home kiddies.
11:22
I'm just having fun.
11:25
And you can hear it.
11:27
You can hear it popping.
11:30
And we're just gonna shake that pan
11:32
because if I just left that pan sitting there
11:33
there's a good chance that the popcorn might burn
11:36
and we don't want that.
11:38
There's all different popcorns now that you can use
11:41
instead of copying your own.
11:43
All different brands but I would recommend
11:46
an unsalted popcorn for this recipe.
11:50
Okay, the pot is quiet.
11:53
So I think all the kernels have popped.
11:55
Let's take a look.
11:58
And hopefully, there's no burned popcorn on the bottom.
12:05
There's not one burned kernel in our pot.
12:09
Now while our popcorn is cooling,
12:12
we're gonna come over here
12:13
and we're gonna make our chocolate coating
12:15
that's gonna just make these luscious
12:19
chocolate filled popcorn balls.
12:21
And we're gonna start with a half a stick of butter.
12:25
Always butter,
12:26
sugar,
12:30
cocoa,
12:33
corn syrup.
12:36
Then it seemed like forever when you're
12:38
draining corn syrup out of a bottle.
12:41
Pinch of salt.
12:45
We've got all of our ingredients in here,
12:47
now we're just gonna bring them to a bowl.
12:50
And that shouldn't take very, very long.
12:53
You know, I remember my grandmother Paula
12:55
making these for the young children in our family.
12:58
I tried not to call them my grandmother very often
13:00
to keep my children because
13:02
I felt like she had already done her job with her children
13:05
and I hated to pawn her great grandchildren off on her.
13:09
But when I had to call on her
13:11
she would make sure she had these popcorn balls
13:14
as a snack for my children
13:16
and everything would be all right.
13:18
She was a wonderful grandmother.
13:20
In fact, both of my grandmothers were just the best.
13:24
I had one that I swear that walked around
13:26
with a halo over her head
13:28
and then I had another one that was spicy.
13:32
And I think at sometimes she had little horns
13:35
coming out of hers.
13:36
So I had a nice variety.
13:38
I was most lucky.
13:39
The feisty grandmother's name was Irene.
13:42
And she was the one
13:43
that I spent many many years in the kitchen with.
13:47
And the other grandmother was Nellie Lou
13:50
and I have fun fun memories
13:53
of Irene and little Nellie Lou.
13:56
This has come to a ball in the sugar's dissolved.
13:59
So now we're gonna add eight cups of popcorn, to our pot.
14:07
A heap and one for good luck.
14:11
Oh, these are looking so good.
14:14
And if you wanted to, you know you could even add
14:17
some chopped peanuts or pecans to it.
14:21
It almost make it like a chocolate Cracker Jack.
14:24
Wouldn't it?
14:25
And I know those two little boys of mine sure did love this.
14:29
So I think tonight, while we're watching the movie
14:32
there'll be other little children around
14:34
that'll love them just as much as mine did.
14:38
So we're gonna let this cool for a minute
14:40
and then I'm gonna just mold them into their shape.
14:47
I've got a nice toting on our popcorn.
14:50
Now I'm just gonna pour down to our cookie sheet
14:54
and let it cool for a minute
14:57
so that I can touch it
14:58
because it's still kind of warm.
15:00
Look at the threads.
15:03
My granddaddy was aggravatin' me, I was 15 years old
15:07
and I ran to her and I said,
15:09
grand mama he won't leave me alone.
15:11
And I remember her walking in
15:13
and she had a sofa that sat out in the middle that floated
15:16
in granddaddy was happened to be standing behind the sofa.
15:20
She walked out there with her hands on her hips
15:23
and she said, Johnny, I told you to leave her alone.
15:26
And he said, I'm not bothering her.
15:27
Well, she walks out.
15:31
He aggravates me some more.
15:32
I run back and get her again.
15:34
And this time when she comes back into the room, she said
15:38
I told you John Paula to leave that child alone
15:41
and I mean it,
15:43
and she balled it up her left fist
15:46
knocked him for a loop,
15:48
sent him and the sofa flying over.
15:51
And I walked around the sofa and I looked down at him
15:53
I said, I told you to leave me alone. (laughs)
16:00
She was a sport, my grandma.
16:02
Like I said, I adored both of my grandmothers.
16:04
They were just so entirely different.
16:06
And I have people say,
16:08
oh, you're just like Nellie Lou.
16:11
And then I'll have people say,
16:12
oh my God you just like Irene?
16:15
So, (laughs) and these are heavenly.
16:19
Even if you think you might be sinning.
16:21
Because you know, popcorn, it's a vegetable.
16:24
How bad can it be for you?
16:25
Not that bad.
16:27
It's just air.
16:28
(laughing)
16:31
And we all know air aint fattening.
16:33
These are actually fun to do.
16:35
And after they cool off the children can help do this.
16:38
They'd have a ball doing it.
16:41
And that's it.
16:42
They're ready for the movie.
16:44
Well, I've got all of our snacks ready.
16:46
All I have to do now is get changed.
16:48
And then we're off to the movie.
16:53
I so hope y'all are enjoying the show.
16:56
And if you do.
16:57
Be sure to click like, subscribe and
17:00
notification bell so you'll never miss a video.
17:04
And we'll be right back after the break.
17:12
The food that I prepared today is delicious
17:14
but either in your house or for an outside picnic
17:17
like we're doing tonight before we start the movie
17:20
I've got sugarcoated peanuts for the young people
17:23
and I've got my grandmother's chocolate popcorn balls.
17:28
They're yummy for any age.
17:30
And I've got a hot dip here,
17:32
a cheese spread that will melt in your mouth
17:35
along with a good buttery cracker.
17:37
But the very favorite thing that I have today
17:40
is my bacon wrap breadsticks, right over here.
17:43
They're so simple to make, it's a microwaveable dish
17:46
and it goes great with your favorite wine.
17:49
But before the movie starts,
17:51
I'm gonna take a quick walk with my friend Sean,
17:54
from Millbrook Winery.
17:56
He's gonna help me pair some wines
17:58
with all these delicious snacks
18:00
that I've prepared for today.
18:02
One of the issues that we always have at the restaurant is
18:05
trying to pair the different wines
18:06
with the different foods.
18:07
And of course the food that I serve is a very simple food,
18:11
fried chicken and macaroni and cheese.
18:13
So what would you suggest there in the pairing?
18:16
- Well, I think some of your lighter bodied reds
18:19
like a Pinot Noir
18:20
are great with varieties of foods,
18:23
the Cabernet Franc, as well
18:24
is another red variety that that does very well.
18:26
For the kind of foods that you're serving
18:28
some of your fuller-bodied whites are also a good pairing.
18:31
- [Paula] What will go well with a bacon rep breadstick?
18:34
- A nice oaky chard neck
18:36
because it's got a little smokiness, just like the bacon.
18:38
It's got a nice acidity.
18:40
That'll help cut through the fat
18:41
and just cleanse the palate.
18:42
- And how about this one for another upscale dish,
18:45
baked cheese spread?
18:47
- You know, again, you could really go with a Chardonnay
18:50
a nice pinot noir, a light-bodied red.
18:52
- I know I'm probably pulling out
18:54
a real funky menu on you today,
18:56
but for the younger people in the crowd,
18:57
chocolate popcorn balls
18:59
and I may be stealing them from the children
19:01
and then throwing them at the adults, got any ideas?
19:05
- A little bit more difficult because it is sweet.
19:07
However, the Cabernet Franc grape
19:09
actually goes very well with chocolate
19:11
and usually has a nice fruitiness
19:13
which will contrast nicely with the saltiness.
19:15
So if I had to pick one, I'd probably go with that.
19:18
As far as picking out good wines
19:20
it's just finding a nice little wine shop
19:22
where it seems like the people are friendly
19:24
and they know what's going on
19:25
and just go and ask them,
19:26
tell them your price range,
19:27
tell them what you're looking for.
19:28
Tell him when you're eating and they'll help you.
19:29
It's really pretty simple,
19:31
experiment by all means.
19:33
(upbeat music)
19:36
- Sean's really shared a few really nice tips with me today.
19:39
For starters you should always marry
19:42
the wine that you're gonna drink
19:44
with the food that you're cooking.
19:45
So don't beat cheap.
19:47
Make sure you've got a good good drinking wine
19:50
going into your dish.
19:52
Another tip is to put out
19:54
several different containers of the same food.
19:56
So as people move around
19:58
they have the option of this bowl,
19:59
this bowl, or this bowl.
20:01
That way everybody's not trying to dip into the same bowl
20:04
at the same time.
20:06
And for keeping your food warm,
20:08
it's no trouble traveling with a trivet
20:10
and little tea candles.
20:12
So until next time America,
20:14
best dishes from my picnic to yours.
