- Hey, y'all I'm Paula Dean
0:03
and today we're fixing
0:04
no-fuss meals that won't take but just a few minutes.
0:08
First up on the hot and bubbly mini Mexican pizzas
0:12
that's just dripping with an ooey, gooey cheese.
0:15
And then I've got hot and chunky chili served
0:19
in the cutest little mini biscuit bowls
0:22
that are just bursting with flavor.
0:24
And finally, I wanna show y'all Mama's banana dessert.
0:27
It's so sweet and creamy,
0:29
you won't believe how good it is.
0:31
So get out your plates and napkins
0:32
'cause it's mini meal time, y'all.
0:36
Y'all know, I don't know how it happened, but somehow
0:39
in my later life, I became one lucky chick.
0:45
You can see I'm here in our backyard
0:47
and I'm just enjoying this beautiful sunny day.
0:50
And you know, sometimes you don't want your meals
0:54
to be this huge production.
0:58
You want to just have real casual food.
1:00
So today is all about quick mini meals.
1:03
Now I'm gonna start
1:04
by making some mini pizzas and I've got my pot heatin' here.
1:08
I'm gonna put a little oil in there
1:10
and I'm gonna saute quickly some bell peppers
1:13
and some mushrooms.
1:15
You can see I had my pot hot.
1:20
And think, for this pizza,
1:24
I wanna make like a Mexican pizza.
1:27
Instead of using a pizza sauce,
1:29
I'm using a jarred salsa and I'm gonna be using one
1:34
of the store-bought pizza crust.
1:38
These are wonderful.
1:39
Now I'm gonna take a large biscuit cutter,
1:43
and you could put anything in here that you wanted to.
1:46
You could use zucchini.
1:47
You could use onions.
1:50
What I've chosen today though
1:52
is the mushrooms and the bell pepper.
1:54
And do y'all know what I'm using as a table today?
1:58
Michael has had this thing around the house
2:01
or around in the yard for years.
2:04
It's a trough that holds water for horses.
2:08
Michael and his daughter, Michelle, and Anthony
2:11
are just huge horse lovers.
2:13
They love to ride horses.
2:15
All right, now I've got our pizza cut out for our crust,
2:20
and now I'm gonna take just a jarred salsa
2:22
and you can use anyone that happens to be your favorite.
2:27
And I'm just gonna put a little bit
2:30
of that on each one, just like that.
2:34
The children in my family love Mexican.
2:38
Karrie and Michelle could eat it four times a week easily.
2:45
I think our vegetables are sauteed enough.
2:47
I don't wanna saute 'em,
2:49
I don't want them to be like mushy.
2:53
Now I'm gonna put a little salt and pepper in the veggies
2:58
and toss those around.
3:03
And then I'm gonna put these own each of our pizzas.
3:10
This is also fun to do after everybody gets to your house.
3:15
Everybody can make their own pizza
3:17
and put anything you want.
3:19
You can have a variety of everything.
3:22
Some people love black olives on their pizza.
3:25
All right, now I'm gonna put these in the oven
3:27
and I'm gonna bake them for a few minutes
3:30
and then I'm gonna come back and I'm gonna cheese 'em.
3:33
But right now, look at the boat.
3:35
Hey!
3:36
(Paula laughing)
3:37
I can't tell from this far who that is,
3:39
but I know I know 'em.
3:41
The next thing I wanna show you today
3:43
is chili in a mini biscuit bowl.
3:46
Now we're gonna start with two cups of biscuit mix
3:50
and 2/3 cup of milk.
3:53
And I'm gonna put, because it's chili,
3:56
I'm gonna put just a little cayenne pepper in it,
3:59
just to give it a little kick.
4:03
So you can see, I got some mini muffin tins sitting here.
4:07
We're just gonna mix this up.
4:10
And if you wanted to, you could even add cheese to this mix.
4:15
All right, you can see how easy that came together.
4:18
Now we're gonna take our muffin tins.
4:21
And instead of cooking in 'em this way,
4:23
we're gonna cook on 'em this way.
4:26
And I'm gonna spray them with a little spray
4:29
so that our biscuit mix will stick.
4:33
And I'm just gonna rub a little on my hands
4:35
and I'm gonna come over here and I'm gonna pinch off
4:38
a piece of biscuit mix about the size of a walnut.
4:42
And then I'm gonna flatten it and I'm gonna put it.
4:47
I wanna move things around so y'all can see.
4:49
Can you see?
4:50
Right, now, I'm just gonna form that little bowl
4:53
around our muffin tins.
4:57
Now I'm gonna use every other muffin
5:04
because if I tried to make them side by side
5:07
on every one of them, they would stick together.
5:11
You know, 'cause they're gonna puff up some.
5:13
Just flatten it, and then I'm gonna go to here
5:17
and get our next bowl going.
5:19
You can see how easy this is
5:21
and you could season this up any way you wanted to.
5:26
Now, if you wanted to make your bowls a little bit bigger,
5:29
you could, you could use the medium-sized muffin tins,
5:33
or if you wanted to make a big bowl for everybody,
5:36
you know, they make those muffin tins
5:39
that are like jumbo size that are like that big.
5:45
Y'all can see probably how I'm dressed today,
5:48
that it's a little cool here in Savannah.
5:50
And I got some heaters going around me
5:52
and I can hear them crackling and popping.
5:54
It sounds so good.
5:57
All right, now let me show y'all a little trick.
6:00
I'm gonna come behind each one
6:04
and flatten our biscuit bowls out,
6:09
so when they come out, they'll have a smooth bottom
6:12
and they won't sit cattywampus, you know, and rollout.
6:15
So these are ready
6:16
and we're gonna stick these in the oven.
6:19
And when I come back,
6:20
I'm gonna finish up those pizzas for ya.
6:23
So y'all, don't go anywhere
6:24
'cause today we're noshin' out with Mini Meals in Minutes
6:28
that are delicious.
6:33
I so hope y'all are enjoying the show.
6:36
And if you do.
6:38
Be sure to click like, subscribe and
6:40
notification bell so you'll never miss a video.
6:45
And we'll be right back after the break.
6:51
And look at these cute little biscuit bowls.
6:55
Aren't those the cutest,
6:58
aren't those the cutest little bowls?
7:01
We're just gonna sit those aside for a minute.
7:04
Now I'm gonna pull out our pizzas.
7:07
Now you can do this any way you want to.
7:09
Oops.
7:12
But I think that I'm gonna top these with cheese.
7:19
And you can see they're steaming
7:20
'cause it's a little nippy outside.
7:24
And I've got some cooked ham here.
7:28
And you could use bacon or beef or chicken,
7:31
anything you wanted to.
7:34
And I'm gonna run these back in the oven
7:36
and just let that ham and cheese melt.
7:41
All right, now while that's melting,
7:43
I'm gonna come over here and I'm gonna make our chili.
7:46
I'm gonna start with a pound of ground chuck.
7:49
So this is probably 90% lean and 10% fat.
7:54
Personally, when I'm making chili for us to eat
7:57
by the bowl, I use a link sausage,
8:00
I use ground turkey and I use ground beef.
8:03
I just love all those flavors mixed together.
8:07
But for this, I'm just gonna use the ground chuck
8:11
and I'm gonna brown it off
8:12
and I don't even think I'm gonna have to drain it
8:14
since it's a chuck,
8:16
so there shouldn't be much fat in it.
8:19
And now I'm gonna toss some onion
8:23
and some diced bell pepper.
8:29
And give that a toss.
8:37
All right, now I'm gonna add a little salt,
8:41
a little pepper,
8:44
and two tablespoons of chili powder.
8:54
This is really starting to smell good.
8:57
(wood spoon banging)
9:00
And our cheese should be about melted on our pizzas.
9:04
And I guess y'all have noticed
9:05
that I'm not in my own kitchen today.
9:08
I'm not in my regular kitchen, but you know,
9:10
Michael and I are building a house here in Savannah
9:12
on the water.
9:13
And you can see where all the shrimp boats
9:16
are kept right down the way.
9:18
And there's just nothing more beautiful
9:21
than seeing these old shrimp boats coming down
9:25
this little bitty creek.
9:28
Now our cheese is melted.
9:31
Those are piping hot.
9:33
Now I'm gonna take one of these out for ya
9:39
and put right there.
9:41
Now I think I'm gonna finish this
9:42
off almost like a taco since I've used the salsa
9:47
as a base, and I'm gonna put some lettuce on it
9:53
and sour cream and ooh, I wish I had some green onions,
9:58
some green onion tops, but look how good that is.
10:01
And I think you can't have too much cheese.
10:05
All right.
10:06
I can't hardly wait to dig in, but before I do that
10:08
I've got to finish getting everything in our chili pot.
10:13
Now I'm adding the red kidney beans and I'm adding a can
10:17
of Mexican-style tomatoes.
10:21
So they've got some seasoning in them too.
10:23
So we're just gonna put that in there
10:27
and let this simmer, I'm gonna give it a quick stir.
10:32
Oh, doesn't that look good?
10:33
And I got a full pot.
10:35
Ooh, great time of day.
10:37
That looks so good.
10:39
I think I'm gonna sit that plate on top of it
10:41
so it can get hot quick.
10:43
And now I'm ready to taste.
10:46
You know, I'm weird about something.
10:49
I love ripe olives to just stand up here and eat.
10:53
In fact, I've been munching on them while I was piddling
10:58
around back here, but I don't like them on my pizza.
11:02
So I'm gonna forego that, but I do love sour cream.
11:10
Look how delicious that looks
11:12
and the pizza crust is so crispy.
11:16
It's gonna be like eating a fat crouton.
11:21
(pizza crunching)
11:24
This is perfectly yummy.
11:27
When we come back, I'm gonna show y'all
11:29
different variations that you can do with this little pizza.
11:33
We're gonna finish up our chili,
11:35
and I'm gonna be making Mama's banana dessert.
11:38
So you don't want to miss out one.
11:40
It's just out-of-this-world delicious.
11:43
So I'll see y'all back in a minute.
11:47
I hope y'all are enjoying the show
11:50
and I want to hear from you.
11:51
Tell me what recipes or videos you'd like to see me
11:54
make by just leaving a short comment below.
11:58
Now, let's get back to the show, y'all.
12:04
We're back and I'm ready to pull together
12:08
the last thing that's just gonna complete
12:11
all of our little mini meals today and that's dessert.
12:15
Now I'm putting some nuts in.
12:16
I've got some pecans and I'm gonna throw them
12:19
in the oven and I'm gonna toast those off
12:21
because when you toast them, it just really pulls out
12:23
the oils in them and the flavor.
12:25
And while those are toasting,
12:27
I've got two cups of heavy cream,
12:31
and I'm gonna whip this up along with some sugar.
12:35
(hand mixer whirring)
12:51
And I'm gonna
12:54
just load this up.
12:57
Load the whipped cream up into our bag.
13:07
And I'm gonna nip the corner
13:11
because I am using a small-rimmed container.
13:17
And I'm gonna start with a banana.
13:23
And I'm gonna do these last so they won't turn brown on me.
13:27
But if you're in a hurry and you wanna do these
13:29
ahead of time, just put a little lemon juice
13:31
on them and that'll keep them from turning dark.
13:36
I love bananas and they are a wonderful source of potassium
13:42
which women really need.
13:44
And I smell our nuts.
13:47
Let me go ahead and get these out.
13:53
So I'm gonna drop about four bananas down in there.
13:59
And I'm gonna come in here with our bag
14:04
and put some whipping cream.
14:06
Now I'm gonna come in here with a little chocolate syrup
14:10
and just drizzle over this.
14:13
This is almost kinda like a mini banana split.
14:18
Now I'm gonna come back in here with a couple
14:20
of more bananas.
14:24
Now I'm gonna crush some cream-filled chocolate cookies.
14:29
(rolling pin banging)
14:33
It's gonna be so good with those bananas
14:37
and that chocolate syrup.
14:44
Looks so good.
14:47
And then we're gonna come back
14:48
with some more whipping cream.
14:56
And some more chocolate syrup.
14:59
And then I'm gonna top these with our toasted nuts.
15:02
And I'm just gonna kind of crush the nuts
15:07
in my hand.
15:10
And look how delicious that looks.
15:17
So we've got our bananas and the beauty of this dessert
15:20
is there's no cooking to it.
15:23
The hardest part is whipping the cream
15:25
and of course there's nothing to that.
15:29
And then last but not least, the things that make desserts
15:33
so stinking good is pecans.
15:38
How delicious do those look?
15:41
Now I'm gonna come in here and just get our chili.
15:46
Now, if you don't wanna pre-make these,
15:49
you can just have a basket filled with your little bowls
15:53
and people can come by and fix their own.
16:00
In fact, you could keep your chili in a crock pot
16:04
so it stays nice and hot in case you don't have a stove.
16:11
So when everybody has a little mini bowl of chili,
16:17
the chili's gonna be piping hot.
16:22
Now I kept around a couple of things that I used
16:26
on our pizzas that to me go really well
16:29
with our chili bowls.
16:33
You know I'm a condiment girl.
16:34
I love my condiments.
16:37
So I think I would like mine
16:39
with a dollop of sour cream and maybe just a little cheese.
16:45
And I've got some fresh chives here.
16:49
You can use chives or you could just use a green onion,
16:54
but just for color,
16:56
I'm gonna use a little fresh chive on mine.
17:01
Doesn't that look yummy?
17:05
(Paula chuckling)
17:07
So good.
17:10
When we come back, I'm gonna show y'all some ways
17:14
that you can mix up your pizzas and please everybody.
17:18
So y'all don't go anywhere 'cause we still eatin'.
17:24
I so hope y'all are enjoying the show.
17:27
And if you do.
17:28
Be sure to click like, subscribe and
17:31
notification bell so you'll never miss a video.
17:35
And we'll be right back after the break.
17:42
Okay, today's tip
17:45
about your mini meals.
17:48
You saw that I made the Mexican pizza earlier.
17:51
Well now I'm gonna make an Italian pizza and a Greek pizza
17:55
and I'm gonna use an olive tapenade for the Greek.
18:00
And I'm just gonna spread that around.
18:02
And that's gonna serve as like our base, like the salsa did,
18:08
and like the marinade for our Italian.
18:11
Just a little fresh spinach,
18:15
put on my that.
18:16
And then I'm gonna top it with feta cheese.
18:22
And onto our tray those go.
18:25
Now for our Italian,
18:27
I'm gonna use a nice rich tomato sauce.
18:31
Now you can buy this from the store
18:33
or you can make your own.
18:35
And I'm gonna use provolone cheese.
18:37
You can make any pizza you like.
18:40
You could do salmon.
18:41
You could do pineapple.
18:43
Now I'm gonna throw these in the oven.
18:45
All right, now I've got some that's already ready
18:49
in the oven and I can hear those little things sizzling.
18:53
I'm gonna put these in and let them get ready.
18:56
Now, on our Italian pizza,
19:01
I've got some prosciutto and I'm just gonna come in here
19:07
and make us some slices and put that on top
19:13
of the provolone cheese.
19:21
And just that easy, we've transformed
19:24
that regular little pizza into three different kinds.
19:29
And I hope your family's gonna love every one of them.
19:33
You got something for every taste.
19:39
I love prosciutto.
19:41
You know, my family and I are notoriously big eaters.
19:47
We love a big hearty meal, but sometimes even us big eaters
19:52
like to just spend the afternoon or the evening,
19:54
just kind of grazing
19:55
and making that meal last all night long.
19:59
And this is just perfect for us.
20:01
The Italian, the Mexican and the Greek pizzas.
20:05
I've got something for everybody's taste,
20:07
and these adorable little chili cups in a biscuit bowl
20:11
everybody loves.
20:12
And last but not least, Mama's banana dessert
20:18
in the little bitty glasses.
20:21
I think it might be all right if I have two of these.
20:25
I hope that your family likes some of these recipes
20:28
and y'all will try them when you're in a mood
20:30
to graze all night.
20:33
So until next time America, I always send you love
20:37
and best dishes from my family's kitchen to yours.
20:45
