I'm Paula Dean and it's up, up and away
0:03
today in my beautiful big balloon.
0:05
With a picnic basket chopped full of nibbles for the ride.
0:09
So first I'm gonna show you my son Jamie's own recipe
0:12
for the best chicken salad sandwich in the whole wide world.
0:16
And not to be out done by brother Bobby's
0:18
pimiento cheese spread.
0:21
I'll share a simple old fashioned,
0:23
bread pudding recipe for chocolate lovers high and low.
0:27
Then I'll show you a French bread sandwich
0:29
stuffed to the crust,
0:30
and tips galore coming your way.
0:32
So let's get picnic packing cause we gotta fly.
0:37
In my opinion, there's nothing better than fresh bread.
0:41
It's right up there along with the finest desserts.
0:45
I love big steamy, hot, fresh buns.
0:48
You can't beat it.
0:50
And today's show is all about bread,
0:53
and things that you can do with it.
0:55
You can make sandwiches, you can use it as a snack,
0:58
or it even makes a fabulous dessert.
1:01
And before I can get started today
1:03
I'm going to find the best bread that's around.
1:07
And to find that great bread,
1:09
I've got to find a great baker.
1:12
So that's what I'm in search of today.
1:15
(playful music) And I know just the place
1:19
to find great bread.
1:21
My friend Daniel at Bread Alone
1:24
has every kind you can think of.
1:29
Hey Daniel.
1:30
- Hey Paula, how are you?
1:31
- I'm fine.
1:32
How are you doing?
1:33
Good to see you.
1:34
- Nice to see you too.
1:35
- I'm so excited about a show I've got coming up.
1:39
I'm going up in a hot air balloon,
1:41
and every item that I'm preparing today,
1:44
contains one of my favorite foods,
1:47
and that's bread.
1:48
- Well you came
1:49
to the right place. - I'm telling you (slaps).
1:51
I wanted to come straight to the expert.
1:53
- [Daniel] And what are you making?
1:54
- [Paula] My son Jamie's chicken salad,
1:57
gonna have sandwiches.
1:58
I'm making my son Bobby's (indistinct) cheese spread.
2:01
I'm making chocolate bread pudding.
2:04
(chuckles) And lastly, I'm making stuffed French bread.
2:07
So I really want that bread to be exceptionally good.
2:12
- Well. - So what do you recommend?
2:13
- [Daniel] Well, we've got some great breads right here.
2:16
This is our peasant bread.
2:17
It's reminiscent of country breads of France and Italy.
2:21
Again, it's a very, very simple bread.
2:23
- [Paula] Well, it looks yummy.
2:24
- [Daniel] Yeah.
2:25
And this is a semolina bread.
2:27
This is made from durum wheat flour,
2:29
covered with sesame seeds.
2:30
Very, very golden crumb.
2:32
- I love sesame seeds.
2:34
- This is great.
2:35
This is a bread actually from Alto Maura in Southern Italy.
2:38
It's all of our breads have been influenced
2:40
by either Germany, France, or Italy.
2:42
I travel a lot and visit bakeries all over Europe.
2:44
- [Paula] Well, I feel so lucky
2:45
to be able to be with you today.
2:47
- This is 100% whole wheat bread.
2:50
It's filled with sunflower seeds,
2:53
sesame seeds and flax seeds.
2:55
- [Paula] That looks delicious too.
2:56
- [Daniel] Yeah, isn't it?
2:57
- [Paula] Make sandwiches out of this?
2:58
- [Daniel] This Is wonderful for sandwiches.
3:00
- [Paula] So you're gonna fix me up now.
3:03
- Here you go. (paper crumpling)
3:04
- Okay.
3:05
If you have an opportunity today,
3:08
look up in the sky and you'll see me
3:10
and your bread flying in a beautiful hot air balloon.
3:14
- Sounds good.
3:14
- I appreciate it so much (paper crumpling).
3:16
- Bye bye. - Bye.
3:18
(bright music)
3:22
I didn't leave any bread for y'all.
3:27
One of the best things
3:29
that you can put on good fresh bread,
3:31
probably is a nice homemade chicken salad.
3:34
And that's what we're gonna start with today.
3:36
My son Jamie's homemade chicken salad.
3:40
Now I've already cooked my chicken till it was tender,
3:42
and pulled the meat off the bone.
3:44
You know, my son Jamie came up with this recipe
3:47
when he and his little brother Bobby,
3:49
used to help me in the kitchen.
3:50
Now we're just (knife tapping)
3:51
gonna coarsely chopping.
3:53
I don't like my chicken salad chopped real fine.
3:56
Some people even put it through a food processor
4:00
but I wanna know that I'm biting
4:02
into big, fat, plump, juicy pieces of chicken,
4:06
not some kind of spread.
4:08
So we're just going very lightly chopping.
4:12
And I love warm chicken salad.
4:15
By the time I get him mixed up,
4:16
he is still gonna be warm.
4:18
We're just gonna take some diced celery.
4:21
Simple is always
4:22
so good to me. (bowl clinking)
4:24
We're gonna add our boiled eggs.
4:26
Be sure when you're boiling your eggs,
4:28
to put plenty of salt in the water,
4:31
it'll help the egg slip right out of the skin.
4:34
Now I've added some lemon pepper,
4:37
and now I'm doing a seasoning salt
4:40
and this is called Jane's Krazy Mixed-Up Salt.
4:43
And then I'm gonna add the mayonnaise.
4:45
And I can't tell you how important
4:48
this one step is right here.
4:50
Don't skimp on your mayonnaise.
4:52
Don't buy store brand or cheap mayonnaise.
4:54
It's very, very important
4:56
that you start with a good quality,
4:59
(container tapping) rich mayonnaise.
5:02
(spoon tapping) So we're just
5:03
gonna toss this together.
5:04
Jamie's not real fond of onions.
5:07
Now that's where we differ.
5:09
I love them.
5:10
And I have found that I can put
5:12
a dehydrated dry onion in my chicken salad
5:16
and for the onion haters
5:17
they almost never, never even realize it's there,
5:21
because you don't bite into the pieces of them.
5:24
So at this point I would slip in some onion son
5:28
and you'd never know it.
5:31
Now, all I'm gonna do at this point
5:33
(grinder scratching) is throw some pepper in it.
5:35
And I love fresh ground pepper.
5:38
I don't know if it sound like playing
5:39
with a pepper mill (grinder tapping)
5:40
or if I just really like it. (knife scratching)
5:42
All right now I'm gonna come over here
5:43
for the very last thing that we do
5:45
to this bowl of chicken salad.
5:48
Is I'm gonna take just a little of this stock
5:51
and you can see the richness,
5:54
then I just pour (chuckles)
5:55
a little bit of that over there, just in case.
5:59
Insurance you know what I mean.
6:01
Just a little insurance.
6:03
All right now we're just gonna mix this up.
6:06
And you won't believe how creamy
6:08
that makes your chicken salad
6:10
especially after you refrigerate it.
6:12
I'm starving for a chicken salad sandwich
6:15
So I think (utensils slamming)
6:16
that's what I'm gonna make with this.
6:18
(bowl scratching) And I'm gonna use
6:19
this great brown loaf of bread right here.
6:23
Doesn't that look beautiful?
6:25
I'm gonna start
6:26
(knife scratching) by first cutting the end off.
6:30
That'll make great croutons or even toast.
6:34
Let's see do I want it little, or do I want it big?
6:38
How about in between?
6:40
And you really have to make sure
6:42
you've got a good serrated knife when you're cutting bread.
6:45
Otherwise it's gonna make (knife scratching)
6:47
your bread collapse,
6:49
and you want it to stay nice and perfect in its shape.
6:53
All this now (knife slamming)
6:54
is personal preference, but on the sandwich
6:56
that I'm gonna fix for myself,
6:58
I'm gonna put some purple onion and tomato.
7:03
That way I feel like I'm at least getting a supply
7:06
of my vegetables.
7:08
Instead of lettuce, I'm gonna throw in a fresh spinach,
7:12
which I don't have to tell you how good spinach is for you.
7:15
It's looking good already isn't it,
7:18
Gonna top with just a little salt,
7:21
and a little more pepper.
7:23
And now that looks so good.
7:30
And this is the way.
7:34
Ooh, he's coming out the back over here y'all.
7:38
That in a potato chip doesn't get any better.
7:41
It'll be just perfect for my balloon ride later on.
7:48
(sniffs) Believe it or not,
7:49
bread for dessert.
7:50
Chocolate bread pudding coming up next.
7:54
I so hope y'all are enjoying the show.
7:57
And if you do.
7:59
Be sure to click like, subscribe and
8:01
notification bell so you'll never miss a video.
8:05
And we'll be right back after the break.
8:13
Can y'all imagine anything better
8:15
than chocolate and bread?
8:19
(chuckles) Personally I don't think I can.
8:21
That just sends me over the top.
8:23
You know, earlier I was talking about breads
8:25
are right up there with desserts as far as I'm concerned.
8:28
Well, we're fixing to have the best of both worlds.
8:31
We're fixing to have bread and dessert.
8:34
This recipe is called chocolate bread pudding
8:38
and I'm beginning by just cubing up some bread
8:42
That's a couple of days old.
8:44
It's not real fresh, great way to use that bread.
8:47
If you've got bread, that's going stale
8:48
just throw it in a plastic bag
8:50
and throw it in your freezer,
8:51
and save it for the day that you are hungry
8:54
for some good old hot bread pudding.
8:58
Now, some of your bread pudding recipes
9:00
will actually call for staling your bread.
9:03
In other words, cutting it like this
9:06
and leaving it on the counter overnight to dry.
9:09
But I found that a real quick way
9:11
to stale bread is to just cube it up,
9:14
put it on a cookie sheet.
9:16
throw it into a slow oven of about 200 degrees
9:19
and let it just dry out in the oven just for a few minutes.
9:24
And you've got stale bread.
9:26
All right, now this bowl,
9:27
we're gonna put just a white granulated sugar
9:30
and brown sugar and cocoa.
9:33
And we're just gonna kind of toss those up together
9:36
(bowl slamming) just like that.
9:37
We just kind of grind up that brown sugar
9:40
cause you know, it's kind of on the lumpy side.
9:43
And in this bowl, I've got six eggs that have been cracked.
9:48
I'm gonna add some ground cinnamon,
9:51
some vanilla extract about a teaspoon,
9:55
and then one of the extracts that I love so much,
9:59
it smells so good and I found that the flavor of it
10:02
just goes with so many things
10:03
like this is wonderful with peaches
10:06
and it's an almond extract,
10:08
and I'm gonna put two teaspoons
10:11
(cutlery slamming) of the almond into my eggs.
10:13
And I'm just gonna whisk that up.
10:15
(eggs whooshing) You know,
10:16
I think bread pudding, probably started out years ago
10:19
as probably a poor man's dessert
10:23
(eggs whooshing) like rice pudding started.
10:25
All right, so we've got bowl one, bowl two
10:27
and now we're going to bowl three.
10:30
And into the third bowl we're gonna add our milk,
10:32
(milk trickling) (container tapping)
10:35
little heavy cream,
10:38
and about a half a cup of Kalua.
10:43
Another one of my favorite aromas.
10:47
(ingredient trickling)
10:49
And we're gonna add grated semi-sweet chocolate.
10:53
(whisk tapping)
10:54
Now I'm just gonna whisk that up.
10:56
And now, all of the bowls that we've assembled
10:59
are going to go together.
11:00
I think I'm gonna add my milk to my dry ingredients
11:05
because to me it just seems to mix up easier.
11:09
If you put wet into dry.
11:11
And I'm gonna put enough just to blend it
11:13
and get all those ingredients wet, just like that.
11:19
Now it's safe to go ahead and add
11:20
all of my (indistinct).
11:23
And then I'm gonna add (whisk tapping)
11:24
my beaten eggs, that has those delicious aromatic flavors.
11:30
And we're just gonna kind of whisk them together.
11:33
All right, we've got all those mixed together
11:35
and all we're gonna do now is pour this over our bread.
11:40
You can see our bread rising up (chuckles)
11:43
and I'm gonna take my whisk
11:45
and kind of just press my bread down in there
11:48
until it soaks up all that fresh milk and eggs and chocolate
11:53
you can see the bread going from white to brown.
11:56
Now, if you want to, at this point
11:58
if you've got something else that you can be doing.
12:00
you can just walk away from it,
12:02
leave it on the counter for 10 or 15 minutes
12:04
and let it finish soaking up.
12:06
But I have helped this along.
12:08
So I think this ready for the oven.
12:10
This is soaked up nicely for us.
12:12
So we're gonna slip it into a 325 degree oven
12:16
and bake it for about an hour
12:18
or until it's nice and set. (tray slamming)
12:22
(door slamming) But I can't wait
12:23
for y'all to wait that long.
12:24
So I have another one ready.
12:27
I've just gotten to show you the finished product.
12:32
(tray slamming)
12:34
Doesn't it look delicious?
12:36
Chocolate and bread.
12:39
I'm gonna see if this is set good enough for me
12:42
to just cut me out a little square.
12:45
Personally I like my bread pudding hot
12:48
like I like my bread.
12:50
Like I like my men (laughs).
12:54
I really do like this hot,
12:56
but it's also good warm or cold as far as that goes,
13:00
but I just love hot bread.
13:03
Little cocoa for garnish, a dollop of fresh whipped cream.
13:07
And because I wanna be really (indistinct),
13:10
I'm gonna do me just a few chocolate curls.
13:13
Just in case I hadn't had my chocolate fix for the day.
13:22
It's so delicious.
13:25
Up next, my son Bobby's pimento cheese spread,
13:28
and we're gonna stuff that French loaf.
13:32
(flame roaring) I hear the crew
13:33
getting the balloon ready right now.
13:35
So y'all stay with me.
13:38
I hope y'all are enjoying the show
13:40
and I want to hear from you.
13:42
Tell me what recipes or videos you'd like to see me
13:45
make by just leaving a short comment below.
13:49
Now, let's get back to the show, y'all.
13:56
Now, for my youngest son's Bobby 62nd per pimento cheese.
14:03
We've got a sharp yellow cheese.
14:06
We got a little Jack cheese. (saucer slamming)
14:08
We've got fresh graded onion.
14:11
Remember there's a difference between graded and chopped.
14:14
You can see all the onion juice coming in.
14:16
So that's really gonna give it a nice kick.
14:19
We've got diced pimentos,
14:22
a three ounce block of cream cheese
14:25
and we're gonna kind of break him up.
14:27
A little seasoning.
14:28
Not much because pimento is real salty
14:31
so remember not to oversalt
14:35
(spoon tapping) your pimento cheese.
14:36
And that good blend of mayonnaise again.
14:41
(mixer buzzing) We've got pimento
14:43
cheese spread y'all.
14:45
Just that simple.
14:49
Bobby, I did you proud today son, it's delicious.
14:53
Not as good as yours, but pretty close.
14:56
And now for my stuffed loaf
14:59
This recipe is so simple and easy it's almost pure silly.
15:03
We're gonna start (paper crumpling)
15:05
with two eight ounce packages
15:06
of cream cheese,
15:08
and these are nice and soft.
15:10
We've got one dry package of Italian dressing,
15:15
fresh chopped parsley, (bowl tapping)
15:18
fresh chopped red bell pepper, (bowl tapping)
15:21
and a little ingredient that I don't use very often
15:24
but when you need him, he's the only thing that'll do.
15:28
And that's dried beef.
15:30
And you buy him in a jar in the meat section
15:33
at your grocery store.
15:35
I just love him, he gives a powerful kick to any dish.
15:39
So I'm just gonna kind of fork all those things together
15:43
just to give me a little headstart.
15:45
And now I'm gonna add some mayonnaise,
15:48
(spoon scratching)
15:50
In this dish pretty, it looks like Christmas
15:53
kind of doesn't it?
15:54
This is so, so simple.
15:57
As I said earlier, it makes a great snack.
16:00
Sometimes when Michael and I go for a boat ride
16:02
I'll fix some of these
16:03
and just throw them in a bag and toss them on the boat.
16:06
They are good on the fishing trips.
16:08
If we're running down to Charleston,
16:11
I'll throw some
16:11
in the car for us to snack on
16:13
and sometimes I'll even fix some
16:16
and just take to work with me to munch on
16:18
when I'm working upstairs in the office
16:20
and not down in the kitchen.
16:21
The whole meal that we prepared today
16:23
travels very, very well.
16:25
See how simple that was.
16:27
You could even put this in a basket and fly away.
16:33
We're ready to stuff our bread.
16:35
At this point, now you can,
16:36
it's up to you to decide the kind of bread that you want.
16:39
Personally.I like the French bread,
16:41
but when I was at the bakery, I found this bread
16:45
that I just fell in love with and I've got to try it
16:47
so that's what we're gonna do.
16:49
I love a crusty tough bread. (knife scratching)
16:52
Oh, I just love the sound that it makes.
16:55
And I'm going to pull just a little bit out.
16:57
So we'll have someplace to tuck our filling in.
17:00
The beauty of this dish is I would make it the night before.
17:04
It's great for a trip on the boat or a trip in the car,
17:08
a lunch box or a snack at the office.
17:11
So just mix this up quickly before you go to bed,
17:15
Stuff and into your loaf, just like this,
17:18
and don't be partial, both sides now.
17:22
breads and cream cheese, make a heavenly snack
17:25
they just go together.
17:26
In fact if you wanted to, to really kick it up a little bit
17:31
and give it even more flavor,
17:32
is we could have put a stick of softened butter in there
17:36
and made it really, really sinful.
17:39
So you can see how simple and easy that is.
17:43
Now at this point, before I went to bed,
17:45
I would just take this and wrap it in some Saran wrap
17:48
nice and tight and let it chill overnight,
17:51
and that cream cheese is gonna get back
17:54
to the consistency it was
17:55
when you bought it from the grocery store
17:57
on the firm side.
17:59
But you know, I can't wait that long (sniffs).
18:01
Y'all all know me.
18:03
I'm gonna dig into it right now.
18:05
(knife scratching) So there you go.
18:07

18:08

18:36
(bright music)
18:37
Before I fly today
18:38
let me tell you just a couple of quick things
18:40
that you can do with old bread.
18:43
They make wonderful bread crumbs for casseroles
18:46
or coating your crab cakes and there's many,
18:48
many things that you can do with them.
18:50
All you have to do is break it up,
18:52
put into your food processor and grind it
18:54
until it's very fine crumbs,
18:56
store it in a plastic bag or a plastic container
18:59
in your pantry or freezer until you're ready to use them.
19:02
Another great way to use up old bread is making croutons.
19:08
They make out of this world over the top croutons.
19:11
If you've got a loaf of bread that's going stale on you,
19:14
all you have to do is wrap him up good,
19:17
put him in the freezer,
19:18
and when you're ready to use him,
19:19
pull him out let him thaw and put him in a slow oven
19:23
and letting heat back up and he's almost good as new.
19:29
I've had so much fun today playing with all the breads
19:32
and the fun ain't over yet,
19:34
because I'm packing a basket
19:36
full of Jamie's chicken salad sandwiches,
19:39
Bobby's pimento cheese spread, my chocolate bread pudding
19:43
and my beautiful stuffed loaf.
19:46
Well, I got to fly now y'all, and I mean literally fly
19:52
(bright music)
20:04
I hope your bread rises as well as my balloon.
20:07
