Hi, y'all I'm Paula Dean.
0:02
And today we're going camping.
0:04
There's nothing more fun
0:06
for folks than being together under the stars.
0:09
But first we have to go find
0:11
ourselves some lip-smacking trail mix fixings.
0:14
And then we're gonna head home
0:16
and I'm gonna show you the tastiest hamburger,
0:18
that takes me back to my girl scout days.
0:21
And then, you know, a camp out
0:22
just wouldn't be a camp out without
0:24
a toasty marshmallow treat
0:26
and a creamy cup of hot chocolate.
0:28
The kids will be begging for s'mores all night
0:31
and last but not least, you know, there's a place
0:34
in scout heaven for my own special trail mix recipe.
0:38
So air out those sleeping bags
0:39
and grab a couple of buddies cause we're going camping.
0:44
You know, sometimes we just need a little change
0:47
of pace from the ordinary life.
0:49
And that's what I feel like doing today.
0:51
I don't have time to go out far camping.
0:54
So what I'm talking about is just pure backyard camping.
0:58
I'm talking about food like hobo burgers and s'mores
1:01
and creamy dreamy, hot chocolate and trail mix.
1:05
But before we can do that, I wanna go see a friend
1:07
of mine that makes the most wonderful granola.
1:10
And if y'all think that trail mix is boring,
1:12
wrong.
1:14
You hadn't met my friend, Connie.
1:15
We're gonna have a ball and we're gonna eat camp food.
1:18
So kids tell your mommy and daddy to get out the handbooks.
1:22
Cause we wanna go camping.
1:31
(bell rings)
1:32
- Hi! - Hi Connie.
1:33
- Glad you could make it.
1:34
Good to see you.
1:35
- Good to see you too.
1:36
How've you been?
1:37
- Good.
1:38
- Well, I tell you what
1:39
I'm getting ready to have a cozy little meal
1:42
around the campfire and I can't do it without your granola.
1:46
- Well, come on back.
1:47
- I'd love to.
1:48
Just come on around this way Connie?
1:49
- Yap, right around that way.
1:51
- Oh, it looks so delicious.
1:54
I just love your granola.
1:56
- Well, I was getting ready to make another batch.
1:58
If you wanna wait while this cools.
2:01
- Would love to.
2:02
- Already have the oats in here,
2:04
so we add maple syrup and just a little bit of olive oil.
2:06
You have to put some cinnamon in,
2:09
sunflower seeds,
2:11
- Pumpkin seeds.
2:13
That's the main seeds. - Sesame seeds,
2:16
and I like to add a lot of almonds.
2:18
These we roast, we don't buy them roasted.
2:20
We roast them here.
2:21
So when it pulls away from the sides of the bowl,
2:25
then it's about ready to put out on the pan.
2:29
- Is there anything I can do to help you?
2:30
- Well, this needs to be spread out a little bit.
2:34
- How am I doing?
2:35
- You're doing good. - Good.
2:38
- Roll it out and then after it's baked
2:40
it'll make big chunks.
2:42
If we leave it loose,
2:43
it will be like fluffy cereal,
2:45
but we like it big and chunky. - Yes.
2:47
It's a good snack.
2:47
- I like the big chunks too.
2:49
- I think yours is just about cool
2:51
and see if I can put some in a bag for you.
2:54
Let me know how it works out.
2:55
- I will, thanks so much for letting me come
2:57
into your kitchen. - Thank you for coming.
2:59
- So sweet. - A great pleasure.
3:00
- The pleasure was all mine
3:02
and I'll see you very, very soon.
3:05
- Good weather to you.
3:06
- Thanks Connie.
3:12
Well that trip was a lot of fun.
3:14
Got some great granola in here
3:16
and I can't wait to show you all what I do with it.
3:18
But before we do that,
3:21
let's get started on the entree.
3:24
And this, this one really takes me back
3:27
to the time I was probably 10 or 11 years old.
3:32
When I was a little girl scout.
3:34
We used to go out to the girl scout camp
3:36
and I don't remember us cooking
3:38
but two things that was hobo burgers and s'mores.
3:42
So I've updated the hobo burger just a little bit.
3:45
We've got about a pound and a half
3:48
of ground beef, and we're gonna put a little cheese in it
3:55
and I'm using Jack, but you can use any kind you want to.
3:59
I've got a cup of Cracker crumbs
4:04
and they're just an ordinary salting Cracker.
4:07
We're gonna put in about two teaspoons
4:10
of house seasoning,
4:12
about a half a cup of chopped green pepper.
4:18
Oh, and just maybe about a fourth of a cup of lemon juice.
4:21
Maybe not quite that much.
4:23
That looks good.
4:24
And one egg.
4:29
And then we gone go to work.
4:32
Y'all probably know me well enough now to know
4:33
that this is one
4:34
of the favorite parts of my cooking.
4:36
When I can get my hands in it.
4:42
Just want to squish that up real good.
4:45
And we're gonna divide that into bout four meals.
4:50
It looks like I got a daddy one here.
4:53
We're gonna shape'em kind of oblong
4:55
like a hamburger steak.
4:57
Actually, what we've got is almost a little mini meatloaf.
5:00
They look good already, don't they?
5:09
Okay, so the next step is to wrap these little babies.
5:14
Now, if we were gonna cook these over a fire,
5:16
you would wanna use a double thickness of tin foil.
5:19
And I especially like when I'm putting food
5:22
on the grill, to use the heavy duty tin foil.
5:25
But because we're doing these in the oven,
5:28
a single layer is gonna be fine.
5:30
(foil crinkles)
5:35
We're just goin' take our burger
5:38
and place it on our tin foil,
5:40
and we're gonna take just a red potato skin and all.
5:48
And we're gonna slice it rather thin.
5:50
And we're just kind of fan them on to the meat.
5:53
But before we put the potatoes on
5:55
we're gonna put down some onion.
5:57
So it can be right next to our meat
5:59
and get all that flavor in there.
6:02
Then we're just goin' fan out our potatoes
6:05
and we're gonna put a few carrots on it.
6:09
And before we seal it up, I'm gonna sprinkle that potato
6:12
and carrot with just a little salt.
6:14
And then I'm gonna put on a piece of bacon.
6:17
Now we definitely didn't do this in the girl scout days.
6:21
That was before I knew about pigs.
6:23
(laughs)
6:25
We're gonna lay that right up there, just like that.
6:28
And the bacon's gonna give it a nice smoke flavor.
6:32
We're just gonna seal him up,
6:38
real good, just like that.
6:40
(crinkles)
6:45
Ain't that nice?
6:46
No muss and no fuss.
6:48
I've got all four of them wrapped now
6:50
all we're gonna do, is put this on a cookie sheet.
6:55
When I say this is a no cleanup meal, I really mean it.
7:00
We're just gonna stick them on the cookie sheet,
7:02
put them in a 350 degree oven
7:04
and cook'em for about 45 minutes.
7:13
And I just happened to have some more
7:15
that should be ready in this other oven.
7:21
Oh, they smell so delicious.
7:28
So let's see what we've got.
7:30
(foil crinkles)
7:33
Oh, they look delicious.
7:35
The bacon is not brown.
7:37
And if you wanted to brown, you could just run them
7:39
under the brawler real quick like.
7:42
Let's see how that meat looks.
7:45
Ooh, it looks scrumptious.
7:47
It's just amazing the flavor in this little dish.
7:51
Now for my favorite part
7:54
I'm gonna just check this and make sure they're as good
7:56
as I think that they are.
8:00
You could do this, the number
8:02
of ways you could have coded it in ketchup
8:05
and treated it more like a meatloaf, which would be great.
8:10
All right.
8:11
Let's just check our seasonings,
8:14
see how it tastes.
8:18
(laughs)
8:20
I feel just like a girl scout again.
8:23
Y'all hang with me because coming
8:24
up next, we're doing sure fire, no fire s'mores
8:27
and dreamy hot chocolate.
8:30
It's just gonna get sweeter.
8:34
I so hope y'all are enjoying the show.
8:37
And if you do.
8:39
Be sure to click like, subscribe and
8:42
notification bell so you'll never miss a video.
8:46
And we'll be right back after the break.
8:53
Do y'all know of anybody that doesn't like a s'mores?
8:56
I've been trying to think out of my crew.
8:58
I can't think of anybody that doesn't like'em.
9:02
Well, that's what we're fixing to make.
9:04
These don't have to be made outside on a campfire.
9:06
You can do them right here in your kitchen.
9:07
It'll be such a
9:09
a different quick treat for your children.
9:12
So very simple.
9:15
We're gonna get our sheet pan
9:18
and we're gonna take a Graham Cracker
9:21
the Graham crackers
9:22
just snap right in two at the pref rated edge.
9:27
And we're gonna just put our marshmallows on'em.
9:30
Just like so.
9:32
Personally, I kind of like using the small marshmallows
9:34
but you could always use two big ones.
9:38
This is an old girl scout recipe.
9:41
Anybody that's ever done any scouting,
9:45
has had a s'mores.
9:48
And they called 'em that because
9:50
the kids would say, I want s'mores.
9:53
But you can do this right here in your kitchen.
9:56
And you don't have to wear that funny looking outfit.
9:59
(chuckles)
10:02
So all we're gonna do is run these
10:03
under the brawler just for a minute.
10:05
And you're gonna have to watch them closely
10:06
cause they can brown and burn on you just that quick.
10:09
So we kind of, kind of stay down here with them.
10:12
We've got our oven on brawl.
10:19
And we're just gonna shut that oven door,
10:21
and I'm gonna hang real close here with 'em
10:24
cause I don't want'em to burn on me.
10:27
They're starting to puff up in there.
10:30
While they're browning,
10:32
I'll tell you a couple interesting facts.
10:35
Girl Scouts was actually formed
10:36
in Savannah in my hometown by Juliette Gordon Low.
10:40
And she played such a big part.
10:43
She really went to the very end.
10:45
She made a lot of sacrifices for those girl Scouts,
10:47
right to the end.
10:51
Wow.
10:52
Don't they look good?
10:55
Yeah, we're gonna quickly put our piece of chocolate on it
10:59
because the heat
11:01
from the marshmallow is gonna help melt that chocolate.
11:04
So you don't wanna waste any time.
11:06
Do you wanna trap that chocolate bar in that heat
11:10
of that marshmallow
11:12
and you wanna kind of press them down
11:13
so the chocolate can get in there
11:16
and melt with those marshmallows.
11:18
Oh, look, it's starting to melt.
11:21
Look, doesn't that look delicious?
11:26
We're gonna let those sit there just for a few minutes
11:28
and you can't have a s'mores without something
11:31
to wash it down with.
11:32
So we're fixing to make a dreamy, creamy hot chocolate.
11:36
And these are ever so simple toO.
11:39
Another dish that the kids can help you with.
11:42
All right, we're gonna turn our fire on
11:44
and we're gonna start with a 14 ounce can
11:47
of sweetened condensed milk and a half a cup of cocoa
11:53
a pinch of salt,
11:55
and we're just gonna make sure
11:57
that we get all that cocoa mixed in
12:00
with that milk before we add our water.
12:04
All right, I've got that mixed up real good.
12:06
So we're gonna add about six and a half cups
12:08
of hot water to it.
12:16
And I'm gonna start by adding just about a cup.
12:19
Okay, now I think it's safe to add some more.
12:27
That should be about six and a half cups of hot water.
12:32
And when we cool it off,
12:33
I'm gonna add just a little bit of vanilla.
12:36
I wish y'all just look outside at that sunset.
12:40
So beautiful.
12:42
I think it's ready now.
12:43
I'm gonna add about a teaspoon and a half
12:47
of vanilla to it.
12:49
Don't put your vanilla in too early
12:51
cause you don't want it all to evaporate out.
12:54
You can't have a cup of hot chocolate
12:57
without some good, fresh sweetened whipped cream.
13:14
How delicious.
13:18
Y'all excuse me for a minute while I stepped back
13:20
about 40 years.
13:34
So good.
13:36
Y'all hang around.
13:38
What's coming up,
13:39
lips smacking trail mix.
13:42
(country music)
13:52
Got s'mores?
13:53
(laughs)
13:57
I hope y'all are enjoying the show
13:59
and I want to hear from you.
14:01
Tell me what recipes or videos you'd like to see me
14:04
make by just leaving a short comment below.
14:08
Now, let's get back to the show, y'all.
14:14
The last recipes I made were sinfully sinfully rich
14:19
and delicious.
14:20
This next dish that I'm gonna share
14:22
with you is a little bit more on the healthier side.
14:25
You won't mind the children odd-ing on it too much.
14:28
And we're gonna start with that
14:30
wonderful granola from Connie's.
14:35
When I make this for my family, I swear,
14:38
I don't know who likes it the most.
14:39
My birds are my family.
14:41
All right, now I've got pecans and walnuts
14:44
and I'm gonna toss in there
14:47
and I've got some wheat germ.
14:49
I've got some sunflower seeds,
14:54
got some sweetened flaked coconut.
14:58
I'm gonna add a teaspoon of salt,
15:01
I've added a teaspoon of cinnamon.
15:04
I'm just gonna toss that around again.
15:06
We're gonna add oil to our mix.
15:13
And you know that I'm not gonna make a dish
15:17
without using a little something that's sinful.
15:23
So in goes our sweetened condensed milk.
15:34
We're just gonna toss those all up.
15:36
You know, you can buy trail mix already made.
15:39
It's pretty good, but it can't hold a candle
15:42
to what this is gonna taste like.
15:45
All right, now we've got that all mixed together.
15:47
And you see all these other ingredients sitting over here.
15:49
Well, we're not gonna put those in yet.
15:51
Now we're actually gonna bake this
15:53
and this can get sticky.
15:56
So we wanna make sure that we line our pan
15:58
with foil and we're gonna spray it real good.
16:02
Just like this,
16:06
just like I said
16:07
is that condensed milk gonna become very, very sticky.
16:13
You're gonna be amazed
16:15
at just how good a trail mix can be.
16:19
And we're just gonna spread this out
16:22
and we're gonna put it
16:23
in a 300 degree oven and we're gonna actually bake this
16:26
for about an hour, but every 15 minutes
16:29
we're gonna go to the oven and take our spatula
16:32
and just kind of rotate it and flip it around on our pan
16:35
so that it won't burn and get too dark on the bottom.
16:40
So that's it.
16:43
So we're just gonna put that in there
16:46
But in the meantime, I've got one ready here.
16:50
Cause I make a lot of this at one time.
16:52
Cause it keeps so well.
16:56
See how good that looks.
17:02
You can see what that condensed milk did to it.
17:09
The smell is incredible.
17:11
Now, at this point, you can add any of your favorite fruits.
17:14
I love the raisins, the golden and the dark.
17:18
So I'm gonna use some of both
17:20
and I'm gonna put in some dried cherries.
17:22
These are very pretty in there
17:24
for the color
17:26
and dried apricots.
17:29
And I love these banana chips in there.
17:35
We're just gonna toss all that together.
17:37
Look how pretty.
17:41
You can store this for a long time
17:43
in a Ziploc bag.
17:45
I guess the last batch I made, I probably
17:47
had it around three or four weeks and it was just as good.
17:51
That last bowl that I eat is the first one.
17:54
So the important thing is to just seal it up good.
17:57
But how pretty is that?
17:59
And it looks like a snack that you don't
18:00
actually mind your children overeating on.
18:03
How great is this?
18:03
You can actually eat it for breakfast, eat it as a snack.
18:08
My niece Carrie especially loves this with a bowl
18:11
of plain yogurt and she stirs it into the yogurt
18:15
and she just loves it that way.
18:17
So it's really very versatile.
18:19
You can put you some in a little Ziploc bag and take to work
18:22
and munch on this instead of that chocolate
18:24
that we all love.
18:25
I think it's cool enough for me to taste
18:33
It is lip-smacking.
18:35
In a few minutes, I'm gonna give you all some extra tips
18:37
for your camping trip.
18:38
And we're also gonna visit my secret hideaway,
18:41
the tree house.
18:42
So don't go anywhere.
18:46
I so hope y'all are enjoying the show.
18:48
And if you do.
18:50
Be sure to click like, subscribe and
18:53
notification bell so you'll never miss a video.
18:57
And we'll be right back after the break.
19:04
You know, even though you're camping
19:06
in your own backyard, you still wanna protect your food
19:09
and make sure it's just as fresh when everyone eats it
19:11
as it was when you towed it out the door
19:14
these disposable containers make great carrying cases
19:17
for things like bread.
19:19
Then when you're through with them,
19:19
you can just throw them away.
19:22
For your s'mores, you can live a little dangerously
19:25
and use a rich, rich, dark chocolate or a white chocolate
19:30
and it can give them a whole different change.
19:32
And for that hot chocolate
19:34
just in case it's not chocolatey enough, throw
19:38
on some chocolate chips.
19:43
I hope that I've inspired y'all to be a little adventurous
19:46
and have your own backyard camp out.
19:48
And you know you don't even have to have children
19:51
to do this.
19:51
Ask a buddy or your sweetheart
19:53
and get out there under the moon
19:56
and the stars and have a fabulous night eating
20:00
and drinking and being with your friends.
20:02
And I think this is really a perfect menu
20:05
the hobo burgers, the lip-smacking trail mix
20:08
and the s'mores.
20:09
And don't forget that big old steamy cup of hot chocolate.
