Jamie and I are having a fiesta for two today
0:03
Yay! So we're making all of today's dishes with a mouth-watering Mexican kick
0:10
Y'all know fiesta flavors. And first up, it's Jamie's yummy five-layer taco dip
0:16
That is gorgeous. And then a roasted corn, pepper, and black bean salsa that's just bursting with flavor
0:24
Y'all, great day in the morning. And we've got the crunchiest fish tacos smothered in a creamy rumelade sauce and a sweet radish coleslaw
0:35
And then finally, it's the perfect sweet treat. Ooh, ooh, ooh, ooh, dessert quesadillas
0:44
Don't miss our fiesta. You know, I think my children could eat Mexican five nights out of seven nights a week
0:57
My wife would eat it eight nights a week. I know she would. So, Mexican it is
1:03
Well, I'm making a five-layer dip. This is Mexican pie. Yum. And we're going to make a roasted corn, pepper, and black bean salsa
1:11
And we're fixing to roast this off in the oven, y'all. the fresh corn, the tomatoes, and the poblano peppers
1:18
You just want me to line them up? Yeah, just line them up, and then we're going to throw them in a hot oven
1:23
you know, just until they kind of blister up. Ooh. Yeah. Salsa is something that you can make at the house
1:29
that is so good, and I love to make it. All right, and then, son, if you will finish cutting that corn off the cob
1:37
I'm going to heat our pan up. I'm going to get your dip going
1:42
Okay, if you would, Mom. Some of the ingredients to your five-layer dip
1:46
Well, we're going to have some ground beef. So if you want to take a tablespoon of oil. Okie do
1:51
Get it cooking in that pan. Okie do. And we're going to add a pound of ground beef
1:56
Okay. And to that, we're going to add, you can use a prepackaged taco seasoning that you can find at the store if you like
2:03
But we made this up ourselves. It's got some paprika and some cumin and, you know, fiesta flavors
2:09
It's about an ounce and a quarter, Mama. It's a whole packet or exactly what I've got up for you
2:14
Okie doke. Let me get these in the oven. Okay. This is going to be very, very spicy
2:27
I'm not going to put every bit on it. Okay, Mom, all you got? What are you doing
2:31
I'm not doing nothing. Let me see that jar. It's empty. It's not too hot for you, Mom
2:41
Let's flavor. Would I ever steer you wrong? A couple of times you have
2:47
Yes. Okay. Yes. While you're doing that, I've got some tortilla chips here
2:53
Would you like me to grate the cheese? You can go ahead and grate that if you'd like, and I've got it
2:57
Thank you, Daddy. I'm going to need a cup and a half of tortilla chips. So I'm going to..
3:01
Okay, how much of the cheese now am I grating? You can't ever have too much cheese
3:05
Just keep grating. You're so good at grating. Aren't I great? So I've got about a cup and a half
3:14
I'm going to hold back some, Mom, to put on the top of this. Okay. The rest I'm going to put in the bottom of our pan here
3:23
I'm going to give our hamburger meat a stir. I need the meat on top of the chips, but while you're doing that, I can go ahead
3:29
I'm going to cube out an avocado. You hear our corn
3:44
I hear our corn. We got popcorn. Oh, my goodness. Oh, that is some popping corn
3:53
Ow! It's a fiesta. Oh. Whoa. Are you okay
4:06
Yes, it just scared the mess out of me. All right, so our tomatoes and our poblano peppers have blistered up
4:18
Corn's all popped, and it looks like you've got our avocado diced up
4:23
All right, son, do you want to drain this, or do you want that little bit of... I'll take that little bit. Okay
4:29
Ooh, I love these kind of dips. Mm-hmm. Oh, it smells so good
4:34
Yum. Okay, now, right on top of this, I'm going to put one cup of salsa. About half of our container here
4:41
All right, that's a cup. This isn't about perfect measurements anyway. Yeah
4:47
You know, this is however much you like, okay? I'm going to use just about a cup of sour cream
4:54
Yum. And now right on top of that, I'm going to put these chunks of avocados that we've done
5:02
And I'll take some of that cheese now, Mom. Okay. This is the sixth item of our five-layer dip
5:09
Mmm yum We cover the whole thing We going to stick this in the brawler and we just going to brawl it until the cheese melts y We not cooking it because our ground beef is totally done and we want our avocado still cold and firm
5:22
but we want the cheese melted on top of it. Look how pretty this is
5:26
That is gorgeous. Now I'm gonna broil it for about three to five minutes
5:30
You don't want to turn your back on it. Now remember, y'all, when you're using the broiler
5:36
You never broil with the oven completely closed. You always keep it cracked because broil is very, very hot
5:46
Mama? Mmm. Oh, my goodness. Wow. Look how pretty that is. Oh, why are you sitting it so far away, son
5:58
Please, would you join my fiesta? Yes. I'd love to come to your fiesta
6:03
We only have parties for two people. I've noticed. No matter what we do
6:08
It's always a party for two. What's up with that? Do we not have any friends? Look at this chip that I have fixed myself
6:15
Now, what am I going to do with that? Same thing I'm going to do with this chip that I fixed for me
6:20
Okay, after I take this bite, I'm not going to be able to talk, so you're going to have to ask everybody to come back
6:25
Mmm. Mmm. Mmm. Oh, Jamie. Mm-hmm. Mmm. Mmm. Mmm. Mmm
6:35
That is so simple. Mmm. This is so delicious. Jamie Jean. Mm-hmm
6:41
The fresh avocados. Jamie and me is having one heck of a fiesta today
6:47
Ay caramba. Coming up next, crispy catfish tacos that are just overflowing with flavor
6:55
Oh, my goodness. I don't know how I'm going to get it in my mouth, Jamie. And finally, it's a heavenly dessert quesadilla
7:02
Wait till y'all see what's underneath there. Hey, y'all, welcome back. Jamie and I are having a fiesta for two today
7:14
and we're really having a good time. Nothing like being with your kids
7:19
Well, the next thing up, kids, is fish tacos. Yum. Now, my kids love, love, love fish tacos
7:29
You can do them a couple of different ways. You can grill your fish or broil it or bake it or fry it
7:37
Well, guess which way I have chosen to make our fish tacos
7:41
I don't know, Mom. Tell us. I'm going to fry it. And I'm going to make catfish strips
7:49
Well, I'm taking these peppers that we blistered in our tomatoes, and I'm going to be chopping all this up for our salsa
7:54
And I'm taking our catfish fillets, and I'm cutting them into strips
7:59
because, you know, you have to kind of roll your taco up to eat it
8:03
Yep. It's hard to roll up a big old piece of fish. You know, the first time I ever had a fish taco, Mom
8:08
was when Bobby and I went to just outside of Santa Cruz. We stopped at a place and had fish tacos, and they are so good
8:14
Well, you know, they really have become popular in recent years. All right, now I'm going to just salt our fish
8:21
because fish need salting. It's just not the same without the salt
8:27
But I'm going to mix a Cajun seasoning in with my cornmeal mix
8:34
So I just need enough to just, like, dredge the fish in, not much
8:41
And I'm going to add about a tablespoon of my Cajun seasoning and just mix that up
8:52
and then take my fish and just dunk it in there. And because I'm not putting our fish in anything wet
9:00
this is going to have just a real light crust. And how's it coming down there, son
9:06
Salsa is one of my favorite things to do at the house, and you can buy a salsa, but if you make it yourself
9:11
you can make it any flavor you want. It can be hotter, or you can even make it sweet
9:15
And what we're using today, all these beautiful roasted vegetables are going to give it a really big flavor
9:20
and some you can't find in a bottle. Okay, so this is ready to go into the fryer, Jamie, and we've got it preheated to 350 degrees
9:29
And I'm using catfish because I love, love, love catfish. Do you remember when your daddy moved us to Warner Robins for a little bit
9:38
We were renting this house that had a little pond, and we had catfish three times a day
9:44
I'd get up in the morning, go down the pond, catch the fish
9:48
I loved every bite of those catfish. All right. It's not going to take this fish very long to fry, y'all
9:55
Look at that. It's already nice, pale, golden brown. So when they come to the top and float, they're going to be ready for me to take them out
10:04
All right, son, what can I help you with? I've got my tomatoes going here, Mom
10:08
If you would, take one clove of garlic. Okay. I will mince your garlic for you
10:12
Okay, I've got our scallions, our peppers, our tomatoes, and our corn
10:17
Okay, there's your garlic. Mm-hmm. Everything's going in here. I have a feeling this catfish is floating
10:23
We don want to overcook it So I going to take this out Cut off my deep fryer I gonna add our corn and you can see y by not tossing that many any wet ingredient that
10:43
we just have a very very light crust on it oh those look delicious don't they
10:47
look yummy I look mom I've got a can of black beans that I've washed and drained
10:52
Good. And our dressing that I'm going to put in here, it's a quarter cup of oil, Mom
10:57
Yeah. How about, do you need any help from me? No, ma'am
11:01
Down there, do you? All I have to do is this, the oil. You can do, roll one of these
11:05
Okay. Lime juice, two limes. Okie doke. I have to stick my fingers up in them and kind of break down that pulp, y'all
11:19
because I just don't have the strength anymore. And you girls that are around my age
11:26
y'all don't know what I'm talking about. Okay, Mom. Yeah. A little bit of salt and pepper
11:32
Okie doke. I'm going to give that a turn and see. Okay
11:41
Ooh. Look how beautiful. Great time of day. That looks delicious. Isn't that beautiful
11:49
Yes. Mmm. Oh, my gosh. Does it need salt or anything? Maybe a little bit more salt
11:59
Ooh, ooh, ooh. Yum. Roasting off your vegetables first just really makes those flavors pop
12:09
Don't go anywhere because we're going to gather up all the things that we need to put these tacos together
12:15
Don't miss our fiesta. Coming up next, we're making a sweet radish coleslaw and a rumelade sauce to spice up those fish tacos
12:26
It's the best fish taco I've ever had. And later, a dessert quesadilla that's out of this world
12:32
That is insane delicious. Jamie, I am so ready to get to the entree of this meal
12:42
Me too, Mama. This fiesta that we're having. I'm going to make the coleslaw for it
12:47
I'm doing a coleslaw with radishes today. That's a purple radish. We got a purple, a white, a red, and then kind of a..
12:53
It's beautiful. Kind of a mixture. Aren't these pretty? Beautiful. And we got our fish ready
12:58
We've got our salsa. Now I want to make a little rhumolade sauce to go on this because, you know, we got to
13:06
have some kind of condiment. I'm just washing those radishes off before I chop them up
13:11
Mmm, I love radishes. You know, I ought to try to plant some radishes
13:17
You might as well. You got your chickens, you got the herb garden, the vegetable garden
13:23
When are you going to open your roadside stand? Mama, in this coleslaw, I'm going to just use, I've got really thin sliced cabbage
13:32
Yeah, I noticed that you're using the packaged angel hair cabbage, which I love
13:38
Yeah, you can't beat it. It's a good price. All right, now I've got my garlic all minced up
13:42
Now, I'm going to mince my green onions, three green onions, and I'm going to use the whole things, y'all
13:51
I'm going to do a half a cup, Mama, really thinly sliced purple onion
13:56
Sounds delicious. Now, I've got a little fresh dill, and I'm going to put a little lemon juice, and it's really going to complement that catfish
14:12
I'm going to mince me up two teaspoons of fresh dill. Now the dressing for this, I'm going to use limes and honey
14:34
That's the only dressing that I'm going to use here. Ooh. So I'm going to use the... That'll be good
14:39
...juice of two limes. Now I'm going to add three teaspoons of lemon juice
14:51
Teaspoon of honey. And now I'm going to add a tablespoon of Dijon mustard
15:01
Make it a little tart. I'm going to dress this, Mom. Okay
15:07
And I'm going to add an eight-ounce container of sour cream. Look how light this coleslaw is
15:13
Oh, son. And we want this to be kind of light. We don't want it to be. No, we don't want it mayonnaise
15:19
Too wet because you got your arumalad sauce. Yes. A little salt and pepper in here
15:27
Oh, doesn't this look delicious? A little bit of pepper. It looks beautiful, Jamie, and I don't know why this word comes to my head
15:36
but it looks so organic and clean It because it not covered with two cups of mayonnaise All right Jamie looking good son But let move on down here and put together our tacos Yum
15:50
I don't know what to start with, Jamie. I'm going to start with a piece of fish. I think I'm going to
15:55
start with two pieces of fish. There we go. This is just
15:59
going to be deliciously good. Oh, my goodness
16:09
I don't know how I'm going to get it in my mouth, Jamie. How are we going to get this in our mouths
16:17
Mmm. I'm just going to... This is not going to be pretty. Y'all may want to close your eyes
16:26
That wasn't pretty. I told you it wasn't pretty. I warned you
16:31
I got a big mouth. Let me see. Great time of day
16:35
You got a huge mouth. Mmm. Mmm. Y'all, great day in the morning
16:44
And you know what sets this taco apart, y'all? It's this wonderful slaw
16:49
It's totally unexpected. And catfish is delicious, too. It's delicious. Well, what are you going to fix your mama for dessert
16:56
Grilled banana quesadillas. Y'all don't want to be late to this party. I'm in
17:00
Coming up next, an over-the-top dessert quesadilla. I'm picking up what you're putting down, sonny boy
17:11
Welcome back, y'all. This is the best part of our fiesta. It's dessert time
17:16
We're doing grilled banana quesadillas. And it couldn't be simpler. I've got some butter down in this cast-iron pan
17:22
I'm going to put down a quesadilla. And as that's browning, Mama, if you would, we're going to slice up a banana
17:26
Do you want it long ways or circle? No, just kind of do it circle. Okay. I'm going to put this all on one quesadilla, then we're going to put a top on it
17:33
So it's not going to be a folded quesadilla, it's going to be a whole quesadilla. All right, now where do you want me to put them, just like that
17:40
That's right, just like that. Well, let's leave a little bit of room because I'm going to put chocolate on here
17:44
and I want it to get all melty. Now I'm going to use three tablespoons of brown sugar
17:49
We've got to have some seasoning in there. Quarter of a teaspoon of cinnamon
17:55
banana is like my favorite fruit I've got some chocolate chips
18:04
you can cut these if you want to our pan is pretty hot so I'm going to leave them full and I'm just going to sprinkle chocolate chips over there
18:11
I'm picking up what you're putting down sonny boy where's that butter going to come in
18:16
I'll put butter on the bottom and we're going to put butter on the top
18:20
brown sugar and cinnamon and sprinkle it This is a good fiesta
18:26
Put our top on it. Okay. I'm going to butter this, and you can flip it. Okay
18:33
Mmm, mmm, mmm. Mmm. I sure would hate it if some brown sugar and cinnamon wound up on this top
18:39
I would hate that myself. Oops. Mmm. All right
18:49
I'm going to just put a little bit more butter on that side, and, um..
18:54
More sugar. More sugar. And we're gonna just let him start to brown
19:01
and toast in that sugar. Smells so good already. The cinnamon smells incredible
19:10
These shells can brown pretty quickly. So, ooh, ooh, ooh, ooh. We need a bigger spatula
19:19
Wait till y'all see what's underneath there. This is what I need. Whoa
19:29
All righty. Let's do it. Where's that? Yeah. Dookie lookie. Whoa. Look down there
19:39
You bad boy. I take after my mother. I need to spank you
19:45
Mm-hmm. This isn't my first fiesta. It's not. Caramel
19:58
Yes, yes, yes. Look at that. It's just... Yes. Come on, Jamie
20:07
It's going to be pretty in my pie hole. Oh, my goodness
20:14
That looks beautiful. Yes, it does. Now, what an easy dessert is that to make
20:21
I don't know about y'all, but my mama is always right. Is it too hot to eat
20:28
Mm-hmm. It sure is. Mm. Mm. Whoa. That is insane delicious
20:40
And it's gotten so crunchy. Uh-huh. That's from all that brown sugar, y'all, frying it in sugar
20:48
It's awesome. It is awesome. I love you sonny boy love you too mom
20:52
thanks for having me and I had a no thank you for having me loving best dishes y'all
