I've got my mom, I've got Georgia football, and fried food
0:04
Today, Jamie and I are tailgating with some of our favorite recipes, y'all
0:09
like jalapeno bottle caps with a blue cheese dip. These are incredible, y'all. You must try them
0:17
Next, Jamie shows off his touchdown shuffle for our barbecue chicken in cornbread cups
0:25
And then, your guests are sure to cheer for these, y'all. Yay
0:29
Homemade mini corn dogs. Finally, we're going along with a double fudge bread pudding with a chocolate whipped topping
0:38
Awesome, awesome. Look at us. Georgia. Georgia colors. I guess I'm the dog, aren't I
0:47
Ruff, ruff. Go dogs. We're bringing you awesome food today. Can't wait to get started
0:52
The first thing we're going to do is one of my favorite finger foods. Barbecue chicken in a cornbread cup
0:57
We're going to start with cornbread mix. It's the easiest thing in the world. I got two boxes of seven ounce cornbread mix right here
1:03
Mom, will you measure me out? Sweet cornbread. How about a cup of milk, Mom
1:09
I'm so going to behave. I wouldn't bet on that. One cup of milk, Mom
1:15
I got two eggs that I'm going in here. Okay, okay. I'm even going to get down and check it
1:22
One cup of milk. Thanks, Mom. This is easy and so good
1:28
I'm just going to beat this up. I don't want any lumps in this. Now, I've got our mini muffin tin is what I'm using today
1:34
I love mini muffin tins. We do a lot of things. You want me to spray it? Please, Mom, spray
1:38
Okay, pass it, please. I love my time in the kitchen with you, son
1:47
We always have fun. Yes, we do. Football season is my favorite time of the year
1:52
I love college football. Bobby and I go up to Athens and spend a lot of time
1:55
We love our bulldogs, and it's just good fun. I'm going to pour our mix into our pan here
2:06
I'm going to pour this in here, y'all, just because it's easier. I'm going to put these in the oven at 400 for about 10 to 12 minutes
2:14
They won't take too long. Oh, so we're not going to put the chicken in them yet. No, ma'am. I'm going to show you what we're going to do
2:19
The next thing we're going to do, Mom, is call bottle caps. and we're going to be serving it with a blue cheese dip
2:25
You don't know how to look at it, but this is going to be our bottle cap, just a traditional green store jalapeno
2:30
But first what I'm going to do is put our dry ingredients together. I've got three cups of flour going in here
2:36
Mom, if you would, get started on our green onions, please. Yes, sir. We want some green and some white
2:40
Yes, sir. About a half a cup, your recipe says. About a half a cup for our dipping sauce
2:45
Now, I've got half a cup of our cornmeal mix that's going in here. Got one teaspoon of pepper, one teaspoon of salt
2:54
Uh-huh. All I need is a cup of this that we're going to work with
2:58
You can throw this in your freezer, y'all. It freezes beautifully. Or in your refrigerator
3:04
Yep. And I'm going to use eight tablespoons of any kind of beer that y'all like. Uh-huh
3:10
Okay, just make sure you beat all the lumps out of that. You want this to look much like a pancake batter, y'all
3:16
and that yeast from that beer is going to do its magic with all the other ingredients
3:23
I've taken the top off of these peppers and I'm going to cut them, you know, this way, like bottle caps
3:29
But depending on how hot you like your food, you can go ahead and get rid of a lot of the seeds right there from the top
3:34
So, Mom, if you want to, put together the rest of that dip. The dip that we're doing today and, Mom, you tell them. It's so simple
3:40
I'm going to use about a half a cup of sour cream and I'm just going to eyeball this
3:45
This is an eight ounce carton. So I would use about half that carton
3:50
Then I'm going to add a fourth of a cup of mayonnaise. And I'm going to eyeball that
3:57
And just mix those together. And remember, while Jamie was working down there
4:02
I was working down here on the green onions. So I'm just going to put that in there
4:09
I'm going to use a teaspoon of salt and about a half a teaspoon of black pepper
4:17
And now the last ingredient to go in is my half a cup of crumbled blue cheese
4:25
Ooh, Jamie, look, son. Did it turn out? Yes. This is going to be a wonderful dip
4:32
Now, I think that... Whoa, get back in there, you old blue cheese devil, you
4:37
And just that easy, I've got a wonderful blue cheese dressing dip made
4:45
Now, Mom, I've got all this down in our beer batter, and I'm going to just use my hands, the best tools that the Lord gave me
4:51
Yeah. I'm going to make sure I cover everything really well. I've got our fryer all ready
4:56
And Jamie's got our fryer set at $3.75, y'all. Just watch the popping
5:01
Would you like for me to help you drop? Yay. These are going to be delicious
5:07
And I would say that by the time they fried Jamie that a lot of that heat gonna fry out of them wouldn you think Probably so And whatever heat left if you don want it you can just cover it with blue cheese Yeah That it
5:21
All right, now I'm gonna make sure I wash my hands real good, y'all, because those peppers were hot
5:26
You know the peppers that'll light you up? I've got a pepper bush in my yard
5:30
I know you have the same one, the little purple ones. Woo-hoo! I thought, look at me
5:36
I'm growing peppers in the yard. They're going to be so good, like a banana pepper
5:41
Whoo! Listen, we were going down the walkway the other night. I know how Michael loves hot stuff, and I said
5:48
Michael, why don't you sample the peppers and see if they're hot? So he reaches down, pulls out a pepper, pops it off the stem
5:56
throws the stem away, and goes to chewing. And he's not saying anything, and I look over at him
6:05
The man is choking to death. They're so hot. And of course, here I'm..
6:13
You wet your pants laughing. Oh, I'm in the gravel. I'm in the gravel dying laughing
6:20
He's... Made my day. These look fabulous, son
6:31
Let's drain them. Okay. Look at that, son. Doesn't that look good, y'all
6:43
Mm. Do you like them? Mm-hmm. Delicious, aren't they? These aren't hot at all
6:52
This is a great treat to keep around the house. Mm. And simple, too
6:56
Fabulous. Jamie, your dip. Isn't that delicious? These are incredible, y'all. You must try them
7:03
I'm glad that I had something that you hadn't had that you liked. Oh, my goodness. When we come back, I've got another dish that Mom hasn't had yet
7:09
We're going to do barbecue chicken in our cornbread muffins. Oh, son
7:13
Coming up, just wait till you see how we're dressing up this tailgating party
7:18
Hey, Mama, we just happened to make some fancy-looking food. Then. Go corn dogs
7:23
This fun finger food gets a real high score. It's the best corn dog I've ever tasted
7:29
And later, my most divine dessert. It's chocolate heaven in a bowl, y'all
7:36
Mom's checking on her muffins and I'm chopping up some chicken here
7:41
Oh my gosh, they look beautiful, son. Awesome. Now, I think there's going to be a trick to this
7:47
I think the key is going to be mashing them down when they're warm
7:52
Yeah, you don't want to let these get cold, y'all. Get them while they're hot. Get them while they're hot and they'll move
7:59
Perfect, son. Now, here's a little tip for you. When your muffins are cooking, you can debone a rotisserie chicken that you buy at the grocery store
8:07
These are mini muffins, so I'm going to take a couple extra minutes and give this a really good chop
8:13
because our mini muffins are so small that I want it to really fit down inside of there. Yeah
8:18
Jamie, this is so cute. And look what I'm using. I'm using a cheese knife, and this just fits perfectly down in there, y'all
8:26
Now, if you don't have a tool like this, don't worry. Just use your thumb. Okay
8:31
I'm going to put our chicken in this bowl. Mom, if you want to, open that barbecue sauce
8:36
Okay, and we're just using a store-bought barbecue sauce. About a third of a cup
8:42
And you want it wet enough so that it will stay cuddled up in your corn muffin
8:47
Mm-hmm. And while you're doing that, Sonny Boy, I am going to be dicing up some sweet pickles
8:54
And we're just going to garnish the tops of our muffins. I'm going to go ahead and fill these up
9:01
I'm going to take a spoon. I'm just going to nestle this right down in the cornbread
9:10
And I'm just going to take my minced sweet pickles, and I'm just going to put a little dollop right on top
9:23
This is the perfect plate, son, for this little appetizer. Awesome
9:32
Looks really fancy. Awesome, awesome. These are beautiful. They are beautiful. Hey, Mama, we just happened to make some fancy-looking food
9:42
I know it, and it's so simple. To the Georgia Bulldogs. Go Dawgs
9:47
Or your favorite team. Dawgs. Mmm. One bite. Mmm. Mmm, mmm, mmm, mmm, mmm, mmm, mmm
9:58
So good. This is fantastic. So what's next? I've got another great dish today, Mom
10:06
I love corn dogs. And this is super simple. The batter that we're going to make is really easy and super versatile
10:12
You can do a lot of different things with it. It's just a half a cup of self-rising flour
10:17
Now down here, I've got a package of hot dogs. And Jamie has instructed me to cut them in thirds
10:23
Cut them in thirds. We doing small bites today Yes because it all about appetizers And I gonna have one and a half cups of cornmeal I don know if y have ever noticed that when you eat a corn dog it kind of sweet
10:36
So we're going to put three tablespoons of sugar into our batter
10:44
Now this batter is going to look a lot like the first batter we did earlier this morning, kind of like a pancake
10:48
It's got to be a little bit thicker and not so runny. Now down here, I've got our hot dogs cut in thirds
10:53
So now I'm going to toss them in some cornstarch. That cornstarch is going to help the batter stick better to the hot dogs
11:01
Yes. My liquid in this is going to be one and a quarter cup of buttermilk
11:13
I'm going to give this a turn and make sure my consistency is good. But this is going to be perfect
11:18
and then I've got some little skewers, wooden skewers, that we have soaked in water so that they won't burn
11:26
and now I'm just going to stick a stick into each of our hot dogs
11:31
I'm going to take these and knock a little bit of that corn starch off, and I'm just going to dredge it down through the batter straight into the fryer
11:38
And Jamie's got the fryer at 350 degrees. You know the corn dog started at the Texas State Fair
11:45
That's where this came up? I didn't know that. They are beautiful, beautiful
11:58
Son, I'm just going to move these around and give you room to drop in some more
12:05
Those are perfect. They're ready. Okay. All right, so I'm just going to toss those out on the platter
12:10
Look at that, y'all. Son, those are like picture perfect. Little mini corn dogs
12:18
A little in the mustard, a little in the ketchup, and a little in the mouth
12:24
Go corndogs! Ah! Mmm! Mine's hot. Jamie, this is the best corndog I've ever tasted
12:34
Yay! The best corndog I have ever tasted. Look, y'all, delicious. You know, I don't care what it is
12:44
anything you cook at the house with people you love is better than something that you go out and buy
12:49
Even from the Texas State Fair. I think he almost said he loved me
12:53
Oh, mama, don't start. You know I love you. Just like I love corn dogs. And we're going to do something else when we come back
12:59
I love double fudge bread pudding. Y'all come back. Oh, my gosh, and I do too
13:05
Coming up, we got a tempted tailgating treat. Oh, look, it's steaming hot
13:11
Hurry, mama, hurry. Okay. Later. We whip up a scrumptious dessert topping in a snap
13:18
Is that not sinful looking, y'all? Welcome back, y'all. Mama, what's better than a fudge bread pudding
13:28
A double fudge bread pudding? Double fudge bread pudding. And that's what we're going to do today
13:32
It's the fastest one in the South. We've got one and a half loaves of French bread down here that Mama's cubed up
13:37
Mama, if you want to go ahead and get to work on the rest of this. Sure thing, son
13:41
I'll just cube this up for you. Thanks, Mom. You're doing great. Okay, down here in this soft band, what I'm going to do, I've got three cups of whole milk
13:51
Glug, glug, glug, glug, glug. Three. I'm going to put my milk in here
13:57
I love bread. I love bread, too. I love bread. I love pudding
14:03
I love chocolate. I love double. I'm going to put a little bourbon in this, too, later
14:09
I've got a quarter cup of heavy whipping cream. and I've got one giant
14:14
tablespoon of vanilla. That's a lot of pudding, son. I know it
14:20
We got a big family, Mom. I've got one pound of semi-sweet chocolate
14:24
that I'm going to break up here. This is just the kind that you buy in the baking section
14:29
I'm going to put these in a separate bowl, Mom. As soon as my milk gets hot, I'm going to use our milk and heavy cream
14:35
and vanilla mixture to melt the chocolate down. Oh, gosh. Sounds delicious, son. Now, I'm going to get the other ingredients
14:40
ready for this bread pudding. And we're gonna need one cup of white sugar
14:45
three quarters of a cup of packed light brown sugar, and now I'm gonna add a fourth of a cup of cocoa powder
14:52
and one teaspoon and a half of ground cinnamon. I'm gonna add six eggs, one at a time
14:59
Okay. I need this whisk so I can whip it
15:16
Whip it good. All right, I think that's about ready, isn't it, son
15:23
You think it's hot enough to melt that chocolate? Let me stick my... Ah
15:29
Is it hot enough? I was kidding. But I do think it is hot enough. What do you think
15:33
I think so. Oh, my God. Gosh I like that I in chocolate you like that Mm I do I do We could just drink it right now
15:49
Would you like for me to get a mug? Two, please. Okay, Mom, I'm going to add this to what you've got. Okay
15:56
And I'm just going to whisk, whisk, whisk. Mm-hmm. And the last thing we've got
16:02
we're going to put a quarter cup of bourbon in here. Now, y'all don't have to put bourbon in yours if you don't want to
16:07
but bourbon really helps make that chocolate flavor just big, big, big
16:12
Now the fun part. Are we going to pour this over on that bread? The whole thing
16:17
You know what, son? We're going to have to do this very carefully
16:24
So what I'm going to do... You're going to dip? I think I'm going to start dipping
16:29
and let that bread soak up this wonderful chocolate mixture. Is that not sinful looking, y'all
16:37
We're going to put it in the refrigerator for an hour. So it's going to soak it all up
16:42
Okay, I think we're safe to pour it in. I'm just going to pat that bread
16:48
And you can see, son, I'm taking the spatula. I'm just pushing it, pushing that yummy bread
16:54
into that double chocolate bourbon mixture. And now I'm going to take our spatula
17:01
Be sure to be very quiet when you do that. Yes, yes. All righty
17:07
All right. We did it. All right, so we're going to cover it with a plastic wrap
17:13
We're going to put it in the refrigerator for one hour. Okay. It smells so good
17:18
You can't even hardly smell that bourbon in there. It's really not enough to offend anybody
17:23
Not much. Okay, I'm going to stick this down in our refrigerator
17:29
Okay. You probably need to go to the bottom rack, son. There you go, yeah
17:34
All right. This one's been sitting in there for an hour, and it is totally saturated with chocolate goodness
17:42
Yes. Now, this is going into the oven. Okay. It's going to cook at 325 for about one hour
17:50
Sounds delicious, y'all. It's going to be delicious. So it's the end of the third quarter in our fantastic show today
17:57
When you come back, we're going to do a special topping for our double chocolate fudge bread pudding
18:03
and we're going to get to eat some. Now stick around. Coming up, we got a topping for our bread pudding
18:09
that takes it into the end zone. You know what this is, Mom? There's a touchdown
18:17
Mom, you know what's better than a double fudge chocolate bread pudding? A triple fudge chocolate bread pudding
18:24
Triple fudge, yay. We're doing my favorite thing for dessert, homemade whipped topping
18:28
And I'm going to take one cup of heavy cream. You can make all flavors of whipped cream, y'all
18:33
You can put different extracts in it. And I like the formula that Jamie is using
18:40
and that's one cup of heavy cream and a quarter of a cup of powdered sugar
18:47
I'm going to get this a little stiff before I add the chocolate. Yes. Well, I was very comfortable where I was prompt, but..
19:00
Well, come on back. I got it under control. I see you do. This is good. I'm going to add my chocolate
19:15
That's my mama, y'all. Half a cup. I would slowly add that
19:27
Yum. Oh, that looks so good. Normally, I use a cocoa powder
19:36
But you know what? I love the looks of that whipped cream using that chocolate syrup, Jamie
19:43
Mm-hmm. Oh. Jamie, okay. Mm, look. Oh, look, it's steaming hot
19:53
Hurry, Mama, hurry. Okay. Okay. Great time of day. That can be yours, son
20:04
That's bigger. Thanks, Mom. Look how beautiful that is. Oh, my gosh
20:21
Whoa. Is it good? Whoa. Mmm. This is so good, y'all. It's chocolate heaven in a bowl, y'all
20:34
It's bread, and then chocolate, and then chocolate, and then chocolate. You know what this is, Mom
20:40
Fantastic. That's a touchdown. Yes. Thanks for having me on the show, Mom
20:45
We always have a good time in the kitchen. Yes, we do. We always have a good time with y'all
20:50
Thanks for tuning in. Go team. and best dishes from our team to yours
20:56
Bye, y'all. Until next time
