I remember you making stuff like this when I was a kid. Yes, yes. In fact, that's where I learned to like artichokes and where I learned to like spinach was from my mom's very creamy dips

In fact, I think that's the way that you kind of trick kids into eating this sort of stuff. I'm going to do a couple things here

First, I'm going to blanch eight cups of fresh spinach. I'm going to chop up a little garlic, and I need for you to grate me pretty much this whole thing of Parmesan cheese
