Hey, y'all
0:01
Tonight on Paula's party, it's all about ooey, gooey, decadent desserts. Mm, mm, mm
0:09
Carson Kressley, y'all, is gonna be stopping by with an outrageous dessert, banana split brownie pizza
0:17
I'm getting moist as a snack cake just hearing about it. And the sugar is just gonna keep coming
0:23
with a croissant pudding trifle. Whoo! Whoo! And the ultimate chocolate chef makes his chocolate mess dessert
0:34
Cheers. Cheers! So go get your sweet tooth and come on in
0:39
Let's party! Dig in! Dig in! Dig in! Y'all are so kind
1:16
Y'all are so kind. I'm so excited about today's show. You know why
1:23
Why? Because it's all about decadent desserts. I'm going to come back here, and my first guest is so sweet, so beautiful, and one heck of a cook
1:40
Come on out, Katie Joel. Yo, this is Katie Joel
1:56
Katie Joel, y'all. Katie! And I hear you're making one of my recipes right now
2:04
Oh, am I? Yes. Well, I'm going to show you exactly how I make it
2:08
Katie, you are so cute. Oh, thank you. Katie is a dear friend of mine. Katie is the wife of Billy Joel
2:14
I know that y'all loved his music for years, as I have
2:19
And Katie, not only is she beautiful, honey. Thank you. She can cook
2:25
And Katie's writing her own cookbook. Thank you. Thank you. So this is Katie's recipe
2:33
Yes. Why don't you show everybody? So this is chocolate croissant trifle
2:37
And Paula, I know you've been to Paris. Has anybody been to Paris? And they have these great chocolate croissants
2:44
And the first time I went there, I thought, I get to have chocolate for breakfast? This couldn't be any better
2:48
So it was the last day of the trip, and I thought, I want to take some home
2:52
So I got about five or six croissants, and I carried them on the plane. And I got home, of course, they were totally dried out
2:57
So I thought, I don't want to just throw them away. what can I do with it? And I came up with this bread pudding recipe. You stay out of that
3:06
All right, you got to share then if you're going to have a bite. I have to have a bite. That is so good. So decadent dessert. Let's take fattening decadent chocolate croissants
3:18
and make them even more fattening. Okay, I'm with you. Yes. I'm in. Paula's in. Who else is in
3:24
All right. Okay. So we've got three croissants that are already cut up
3:30
and I'm going to ask you to cut up these three more while I make the custard. Here, just in case anybody's germaphobic
3:37
Oh, nobody's germaphobic around here. No. Okay, one and a quarter cup of milk
3:42
Okay. Just regular milk, not cream or anything like that. I suppose you could add part cream if you wanted to
3:50
A little richer and thicker. If you wanted it to be a little richer. So I've got three eggs
3:54
Put those in there. Okay. I've got my croissants. You've got those all cut up
4:00
You're fast. All right, and then I've got some sugar. I'm hungry
4:06
Vanilla. How much sugar, Katie? It's a half cup of sugar. And then I've got some cinnamon
4:12
Come on, Missy. And some nutmeg. I suppose you could add more sugar, too, if you wanted
4:18
But later on, we're going to make this dessert into a trifle. So it's going to be even sweeter
4:24
All right. I got this all nice and beat up. Now what we're going to do, pour this over there
4:31
Get that all nice and mixed up. And then you're going to let it sit for at least ten minutes
4:37
because then they're going to absorb all that moisture, and then I'll make them nice and chewy and soft
4:44
So that looks good, Paula, but I've got one over here. Okay. So it's already set up
4:49
I think I have one. Here it is. Oh. Oh, I got the bursitis
4:54
I got the bursitis in the hip. The bursitis? Yes. Okay. You're too young to know what bursitis is
5:01
One of them ritus boys. Anything with an itis doesn't sound good. No
5:05
Mr. Itis will come visiting you soon enough, honey. Ain't that right
5:11
I won't be looking forward to it. All right. He probably already visits Billy
5:16
Probably so. Oh, God. All right, pour this in there
5:26
Do we need to spray this or anything? No, it's got enough fat in there
5:30
Here, let me hold this for you, honey, while you scoop. I'm delicate, thank you. Yes, you are
5:34
One of those delicate little southern bales. All right, look how nice and gooey that looks
5:40
Doesn't that look good? It looks very, very good. Yes. Okay. This is going to turn into the most beautiful, rich custard bread pudding
5:49
Mm. And into the oven. It looks fabulous. So we're going to bake this in a preheated 350-degree oven for how long
5:57
40 minutes. 40 minutes, y'all. So don't go anywhere. Katie Joel's croissant pudding trifle
6:04
Don't go anywhere. Next, our croissant pudding becomes an over-the-top trifle
6:14
You're worried about calories you shouldn't be eating. Not at all. And later, the outrageous Carson Kresley makes an outrageous dessert
6:23
Banana split brownie pizza. Should we feed each other like we're at our wedding
6:28
Mmm. Welcome back, everybody
6:40
Today we're cooking up decadent desserts. Now, Katie has shared her recipe with us for chocolate croissant bread pudding
6:49
Yes. But now you're fixing to turn this into a trifle. And I tell you what, I like this trifle already, Katie
6:56
Now, this bread pudding I've let cool totally to room temperature because if you put it in warm, it'll melt your pudding and your whipped cream
7:03
Yeah. So see how nice and puffy and golden brown that is after it cooks? It's so tasty
7:08
Paula, I want you to slice up that banana. Okay. Now, how do you want them sliced
7:12
Are you however you want to do it killer? I'm not particular at all And I'm gonna finish myself can't please
7:20
Yes, so we're gonna have butterscotch pudding Bananas butterscotch and candy bars you can use any kind of candy bar you want this trifle You know one of the great things about making a trifle is you can really mess it up You cannot mess it up You can mess it up It like one of those classic desserts You can take whatever you have around the house
7:39
If you don't want to use bananas, you can use strawberries. If you don't want to use butterscotch pudding, use chocolate, use vanilla
7:45
You can use pound cake. You can use cookies. Anything. You know, there's just no rules
7:50
No, no rules at all. Whatever you kind of have left over. I always think they're so pretty, especially for a party
7:57
You put it in one of these dishes, and it's always best to make it the night before
8:00
which is great when you're entertaining because when it sits for a long time
8:04
those layers really settle, and they set up so nicely so that when you dip into it with a spoon, it comes out so good
8:12
I love it. I do, too. But it's perfect for a party. And the grand thing to me, Katie, about trifles is that they're so easy to make
8:20
They're not intimidating at all. I mean, no muss, no fuss. Exactly. And it's cheap
8:26
It's really cheap. And you can't mess it up. Not cheap. Inexpensive
8:30
Yes. We don't use the words cheap, do we, honey? No. I'm not free, but I am reasonable
8:39
We should ask Michael about that. I don't know. He'll tell you
8:44
I'm not free. Now we're going to put half of this trifle. You want me to put the bowl up here
8:50
so you can reach it? All right. We're going to layer it. Okay
8:54
See, this is cut into squares, you know. Makes it easier. Oh, this is still a wee bit warm
9:01
A little warm. I love it. If you're making it at home, let it cool all the way
9:06
Well, it's not warm enough to melt anything. Okay, good. Now put that butterscotch pudding
9:12
Put about half of it on there. Mmm, mmm, mmm. Now that looks good to me
9:19
Such a beautiful golden color. Isn't it pretty? Yes. That looks fabulous
9:24
And then we're going to dump some of these bananas on here. Like half
9:30
Yeah, like half of them. Scatter them on there. And see how easy this is
9:34
You know, you don't have to be a pastry chef to make a beautiful dessert
9:39
Dessert can be intimidating because you think, oh, it has to look so pretty. I can't ice a cake pretty to save my life, so I love making a trifle
9:47
All right, now the best part, some candy bar. Gonna just rub that chocolate off a little bit
9:53
Okay. You know, and it is, it's so important, Katie, that when we go into the kitchen, we should really have fun
10:01
Absolutely. You know, it's very hard when we walk out our door every day
10:06
Life can be hard. When we come back into our kitchen, it should not be hard
10:11
It should be fun. I'll tell you what's gonna be fun. And easy. What's gonna be fun
10:15
Eating this. All right. So, some whip chopping. Now, see, that's the only difference
10:21
I would use fresh whipped cream. Well, here's the reasoning behind this
10:25
because I found when you make a trifle that sometimes it just doesn't set up as well
10:29
when you use the whipped cream. Your whipped cream, you're exactly right, Katie
10:34
So this, you know, it sets up a little bit better. It will kind of become a little liquidy
10:38
if you don't whip your whipping cream thick enough. And you have to be careful
10:43
because, you know, if you take whipping cream one step too far
10:47
turns back to butter. But this is good. I mean, it's easy to do
10:51
It'll do. And not that we care, but it's like no calories almost
10:57
I don't think that matters with this. That really doesn't matter, does it
11:00
No, if you're worried about calories, you shouldn't be eating this at all. All right, I'm starting all over with the layers
11:07
Okay. Back to the bread pudding. Yeah, this bread pudding doesn't have calories either
11:13
Oh, I know it doesn't. No, it is very, very light and low-fat
11:20
All right, let's start over, then, with the butterscotch pudding. Oh, the butterscotch
11:26
Don't you forget that. I won't, honey. You keep a lady straight. Look how pretty that is
11:31
And then we'll put the bananas. Katie. Doesn't that look good? Yes
11:41
All right, throw the bananas in there. I couldn't resist. One little lick
11:47
Oh, and more of these. Yes. I'm gonna save just a little bit of the candy bar
11:54
to decorate with on top. And then more of the whipped topping
12:04
Now that's decadence. Look at that. Katie! And more candy bar. Well, let's just go all over
12:15
Now you be the judge. Katie, it's beautiful. Look at that, y'all
12:24
I'm just digging right in. Make sure you get some of the croissant in there
12:29
Okay. Get a little bit of everything. What's Bill's favorite dessert? Mmm, mmm, mmm, mmm
12:36
No, that's Michael's favorite, too. There you go. Oh, look at that big old piece
12:43
I couldn't get it to cut. I think you can fit it in
12:52
We'll be right back, y'all. Jack of the dessert. My precious friend, Katie Jones
13:05
Next, Carson Kressley learns the ropes of the Dean family business. This is our chicken
13:12
This would give me a little bit more of fuller cleavage. And later, we're going to be making a big chocolate mess
13:28
Welcome back. Welcome back. Today's show, y'all, for those that just tuned in
13:34
it's all about decadent desserts. Ooh. So it just wouldn't be right if I didn't have a very decadent, sweet person out here with me to help me make this decadent dessert
13:52
I want y'all to welcome, like, the cutest guy in television. Come on out, Carson Kressley
14:00
Hey! How are you? I feel like we're dating. We keep seeing each other
14:08
I know. We make a good team, don't we? We're so cute
14:12
Is there anything you can do to make my straight eye? No, why mess with perfection, Paula
14:18
Oh, you're so sweet. Just leave it alone. Well, you know what? Today is decadent desserts
14:24
Ooh, I love that. Devalicious, sweet, saucy, sexy, hot, steamy, delicious. Yes, chocolatey
14:30
I'm getting moist as a snack cake just hearing about it. Okay
14:34
Do you know what we're going to make, didn't you, Carson? I see two eggs and some brown stuff
14:39
Well, I want to show you how to make this dessert. Okay, what is it called? Brownie pizza
14:43
Brownie pizza. I mean, everybody loves pizza. Something light. Yes. All my dishes are light. Okay
14:50
Because you see, I have this girlish figure that I have to tend to. Me too
14:54
You can always buy a new girdle honey You can pass up this one You can That exactly right So we have just gone to the grocery store and we picked up just any brownie mix that you like All we going to do to this is add oil
15:07
Oil. Oil. Okay. Oil. Oil. I'm so like Pennsylvania. I'm sorry. All right
15:14
Okay. And water. Okay. And two eggs. I have a surprise for you
15:19
Oh, you get out. When I met you on Oprah, I felt like we had a special connection
15:24
Yes, and we do. We're both gorgeous. We're both sexy. We both have piercing blue eyes
15:28
I thought maybe I was cradle robbed or something, and maybe I'm really a dean baby
15:34
You think maybe I had you? Maybe, and you didn't remember. I didn't remember. Okay
15:38
It happens. And I think I have... And I have ambrosia. I mean, amnesia
15:42
I have ambrosia, too. I think I have ESPN. I keep hearing a football game
15:49
But I think I'm a lost dean baby. You know you might be. And I did a little thing where I went to the Lady and Sons, and I was a Dean boy for a night
15:59
I was. Who were you? I worked there. Did you mop? I didn't mop at all
16:06
But Jamie really showed me the ropes, and when I got scared, he would hold me like a little baby
16:11
And we have to, I'll show you the tape. We have a tape. I met Paula Dean on Oprah
16:17
Love her. I think we're like separated at birth. and now little Bobby Dean is out sick
16:22
so I'm gonna fill in for him and I think I have what it takes to be a Dean
16:26
or at least a big queen. Carson, there's some things you're gonna need to know
16:31
if you wanna succeed as a Dean brother. You're not gonna make me sell sandwiches
16:34
and baskets all over town, are you? That's how everybody gets started. Okay. Come on, I'll show you
16:39
You cannot work here without being a master of the kitchen. This feels like I'm really pretty now
16:44
Wow. This is our chicken. This would give me a little bit more fuller cleavage
16:49
May I handle your breasts? Please. Ah! Ah! Look, there you go
16:55
People wouldn't know it, but the dishwasher is one of the most important parts of our business
16:59
Isn't there just a big machine we can run it through? There is
17:03
Over there. Welcome to the job. OK. OK. Don't want to ruin the manicure
17:09
Sacrifice everything for the good of the customer. We're here to please, brother
17:16
Cheese biscuit. OK. OK. One of each to every person in the dining room
17:19
Who are you calling a hoe, cake? Go get them, tiger. Can I just have a little tiny smidge of that
17:27
That looks real, real good. I'm going to put some biscuits for the baby in here
17:35
While I'm here. She watches all of that. Yeah. You got to sell
17:40
You got to sell. You got to sell. I don't know what I want to buy. Well
17:44
Maybe a cookbook. We have a cookbook would be great. Okay, let me sign this for you
17:49
There you go. Thank you for stopping. 20 bucks, we'll call it a day
17:54
Thank you so much. Alrighty then. Love you. Thanks for coming, honey
18:02
Did I do okay? I was really... You did great! It was really fun
18:08
I so appreciate you turning to the business. You are so welcome. When Bobby and Jamie and I can't be there
18:13
When you go on vacation, when you go on some fabulous booze cruise somewhere
18:19
and you're, like, hooking up with Mexican guys, I'll be at the restaurant taking over
18:25
Now, you get back to making our brownie pizza. You can just whip that right on up, baby
18:30
Okay, we're going to whip away. Like about 50 strokes. 50 strokes
18:34
Faster than usual. Okay, I'm whipping. Should I be whipping faster? No, you're whipping it just right
18:43
I'm going to crank it up to... Whatever feels good to you
18:46
Oh, that's no wonder you like this mixer so much. This is fun
18:56
You don't want to overbeat this, Carson. You just kind of want to wet all your ingredients together
19:01
All right, now I want to show you a little trick. Okay. Clean your beaters. Yes, clean my beaters
19:05
Uh-huh. We're going to turn this down. Uh-huh. And then we're just going to slowly raise it up
19:13
See, it's on low. Oh, that's fantastic. This is the dangerous part. Whoa
19:18
Okay. Just like SeaWorld. You get a little splash, but you'll be fine
19:23
So see that cleaned our beaders. Fantastic. And, Carson. Can I lick the beader
19:28
Absolutely. Oh, take it off the thing, though. I'm worried. Okay. And I need to lose a tongue that way
19:33
One more time. Carson and I have taken too much time talking
19:38
We'll be right back. We're going to finish up this brownie pizza with Carson Kresley
19:43
It's all about decadent dessert, y'all. Next, we're finishing up our sweet as pie pizza
19:52
Ding dong, dessert's here. And later, the ultimate chocolate chef makes his chocolate mess dessert
20:07
So far tonight on Paula's Party, it's been delicious decadent dessert. Mmm, mmm, mmm
20:14
First Katie Joel made a sinful croissant pudding trifle. Now that's decadent
20:20
And Carson Kressley became an honorary Dean family member. I'll be at the restaurant taking over
20:26
With his banana split brownie pizza. And later, the sweetest chocolate mash you've ever tasted
20:35
Woo! Look, we have cherries. Oh, my God, we're being so decadent
20:44
Can you tie a knot in that stem? Of course not. Can you
20:48
No, heck no. Welcome back, y'all. I'm here with Carson Kressley. And today is all about decadent desserts
20:57
So we've made us a brownie pizza. Right here. Just in a pizza pan
21:03
Carson, we're going to make, like, the marinara sauce. Okay. Okay, so we're going to have some cream cheese
21:10
Yes, we're going to have some cream cheese. Okay. So you just take your little mixer again
21:14
Oh, my God, I beat again? Beat again. Do I put the, um... When I tell you..
21:18
Oh, hi, bossy. Okay. There we go. I'm going to use my..
21:23
Oh, it's all clunky in my... Look, it's just staying in there. But listen, you've got to beat it
21:27
Beat it. Okay. Okay. All right. Now, you want to make sure that your cream cheese is at room temperature, right? Okay
21:38
So it won't be hard to beat. Okay. Otherwise it would be so lumpy and clumpy and not spreadable
21:44
Okay, I hate when it's not spreadable. I hate it too. Let's see what this is. Okay
21:48
Keep beating. Keep beating. Keep beating boy, till I tell you to quit, okay? Okay, I'm beating, I'm beating
21:54
Alright, this is sugar. Okay. I have accidentally before picked up the salt thinking it was like sugar
22:00
That's not good. No, that's not good. One day I was trying to burn the sugar on top of creme brulee
22:07
Right, with a little blow torch? Yes, and it was salt, and I said, this thing ain't burning
22:13
Okay, this is getting nice and light and fluffy. All right, now turn that down a little bit so I won't mess this up
22:19
Oh, okay. All right, now we're going to add some crushed pineapple
22:23
Okay. Why do you keep wanting to put your beater down I don know I sick of beating I want the real thing Come on Come on Beat it boy Oh I have to beat it here Just a little bit On low now
22:35
On low. God, cooking's hard. It is hard. Oh, I'm exhausted. Can I lay down
22:41
Okay. In a minute. Okay. Well, that's coming out nicely. Isn't that coming out nicely
22:46
Beautiful. All right. Now, that's enough. Oh, it's going faster. All right
22:50
Now, turn it back. There you go. All right. Now, I told you how to... Turn it off. I told you... Yes
22:55
There we go. Everyone's safe. That's exactly right. Look at that. Now we're going to take our spatula, and we're going to go around here
23:03
All right, now spread that out just like you would if it was a dish
23:07
Frosting or something. If it was a marinara, yeah. Okay. You know how you'd put a marinara
23:12
I don't, but... Listen now, honey, we ain't got all day to make this pizza
23:19
All right. Okay. All right, there you go. Now we're going to spread
23:24
Yes, just spread that out. Okay, beautiful. All right. Okay, now what
23:30
Now. Our toppings. To put our pizza together. Okay. There's so many combinations that you can put it on your pizza, Carson
23:38
You can do the strawberries. You can do bananas. You can do coconut. Okay. Marshmallows
23:42
And then drizzle it with a little. Oh, we're going to drizzle
23:46
Chocolate syrup. Look at this. Oh, look at that. May I? Please, I want you to take it
23:50
This is kind of like a fruit pepperoni. So much. Yes, this is like our pepperoni
23:55
Fruit pepperoni. All right, now look down underneath the counter, and you'll see one that's already finished
24:01
Look at this. It was just waiting here. Look at that. Mmm
24:05
With the bananas. With the bananas. Can we put, can I sprinkle the, shave it, shave coconut
24:11
This is like a banana split almost, isn't it? Mm-hmm. But it's nice because this is portable
24:16
You could take this with you in the car or something. Lord have mercy, yes. You could deliver this to your friends like a pizza
24:22
Get you a pizza box? Yeah, just go ding dong. Dessert's here
24:28
Oh, my goodness. You cracked me up. All right, let's see a little marshmallows
24:32
Or you could eat this off a loved one. Just put it on their stomach and go to town. You know, whatever makes you happy
24:37
You said decadent. You knock yourself out. All right. Grab your nuts over there
24:43
Oh, these. Yes. All right. Okay, we're just sprinkling. A little cherries
24:50
Little cherries. And see how pretty, see how pretty this one was made
24:57
Right. You're quick. Listen, I have to be only. That's the restaurant business
25:01
I only, yes, that's exactly right. We got folks hungry, folks waiting. Right
25:05
But you can still make it pretty, but you. Oh, and then we can. All right. Now drizzle
25:09
Oh, drizzle. I was going to garnish. I always do that. I drizzle, then I garnish
25:14
Okay. Slowly now, slowly, and make it pretty. Make it pretty. I'm going to do like a crisscross
25:22
Yes, I love it. Oh, look at that. Perfect. All right, now, reach over there and get our whipped cream. Okay
25:32
And get our mint. Our mint. See, our beautiful mint. Right. I always like to serve vegetables with my desserts. Okay
25:41
Yeah, for a little fiber. Absolutely. This is the healthy part. Yes. Okay
25:48
Doesn't this look great? It sure does. Now do we garnish? Yes
25:53
Do we put a sprig right here? Yes, you know how to do it. I used to always put the parsley in my mashed potatoes
26:00
and make a little lake and then put the parsley in like a tree. Yes. Yeah, and then my parents are like, I don't think he's right
26:07
You're gay? What? Didn't the food landscaping, Kluyen? All right, so you've got the knife on your side
26:15
This big giant thing? The big one. Okay, should we eat this one
26:19
Well, do you think which is the prettiest? This one looks much more decadent
26:24
I think so. Okay, should I slice right in here? Yes, cut it just like a pizza, Carson. Okay
26:30
Yes. Okay. All right, look. See your little pie server? Look how cute these plates are with the little reindeer on them
26:38
I knew that you would love them. I love those. I knew that you would. Uh-uh, your pie cutter
26:45
Your pie server. Ooh. Ooh, that one's a little snippy today. Okay, just making dessert pizza here
26:53
It's not like we're curing brain cancer, all right? Just calm down
26:59
Okay, oh. We'll hide that. Look at that. See? It's perfect
27:10
May I serve you? Please do. I'm not gonna mess your pizza up
27:15
I want my piece pretty. I'm going to make it pretty. Okay, look how nice that one came out
27:22
Now that's beautiful. Wait, I'm not done yet. Okay. Let me give you a little dollop
27:27
Okay. Okay. And then a little spriggage. Yes, it's your job to make it pretty
27:34
Exactly. Look at that. Oh, here. Beautiful. Now do we get to dig in
27:45
Yes, we get the digging. Should we feed each other like we're at our wedding
27:49
Yes. Mmm. Mmm. Isn't that yummy? Mmm. Mmm
27:59
It's like a banana split, isn't it? Mmm. I love that. Listen, tell everybody we'll be back in a minute
28:06
We'll be back in a minute. We'll be back in a minute
28:10
With more decadent dessert. Mmm. Carson Cresley, everybody. Thank you so much
28:21
Thank you, my love. Coming up, there's nothing yummier than this chocolate chef in my kitchen
28:38
Welcome back. If you like chocolate, this next guest is going to blow you away
28:48
He is like the king of chocolates. He owns chocolate restaurants now, y'all
28:56
Not chocolate candy stores, but chocolate restaurants all over this world. Max Brenner, come on out
29:09
Brought you some chocolate for the party. Thank you. So we're sure going to have enough, no
29:18
Now, y'all, his name is Max Brenner. Are you Ewell's son? They put enough makeup, you know, that people can see
29:27
You know who Ewell Brenner is? Of course. You do? You really do
29:31
I'm trying to imitate him, you know? You are. Well, you're doing a good job. You know, I have to say
29:35
I think you might have the perfect shape of the head. Thank you very much. Sorry
29:41
Listen, I want you to tell everybody about your chocolate restaurants. Yeah
29:49
Now, he has two in New York City, correct? Correct. 12 in Australia
29:54
12 in Australia. Singapore, Philippines, Israel. How many like... Selling some chocolate in the world. I would say that you are. Well, you know, I would think, Max, that chocolate would be fairly easy to sell
30:09
Yeah, it's fairly easy to... I don't know anybody that doesn't love it. Why didn't I go open a chocolate restaurant
30:16
I don't know why I didn't think about that. So what have you got here? You've got three different kinds of chocolate
30:20
Yeah, it's three different kinds of really heavy Willy Wonka style bricks of chocolate
30:27
Willy Wonka. Willy's one of my favorite people. Really? Yes. Mine too
30:32
And we're going to use some of this chocolate to make a real amazing thing that I call it a chocolate mess
30:38
Chocolate cake with ganache, with caramel, with ice cream. And we're going to eat it with spatulas directly from here
30:45
Are you kidding me? And we're going to fulfill our team. You're a man after my own heart
30:50
So the cake thing is very simple, okay? Because you can take any cake, chocolate cake you want
30:57
but the most important thing is to keep it inside the pan. Keep it inside the pan
31:02
It's the best. All right, now what kind of chocolates do you have here? So we have here white, dark, and milk chocolate
31:07
Milk chocolate, okay, that's what I thought. In order to use it, you know, I love to use chocolate this way
31:13
So we're going to slice some chocolate. This is for you. Maybe because it's a party, we'll give some to other people here
31:27
Oh, my gosh. My favorite is milk. It's a party, no? Cheers
31:40
Cheers! Kind of a chocolate sandwich, no? Oh, my goodness. Where did this chocolate come from
31:49
Belgian. That's good. So we're going to make something very simple, but very basic in chocolate. You should put some attention
31:59
to what I do because we're teaching the audience. So we're going to make the most basic thing in chocolate, but you can do
32:08
anything in it because the most simple it is cream and chocolate
32:11
Right. Always the best. Simple is always the best. Yeah, especially in chocolate
32:15
I mean, the more sophisticated you will do it, you will probably ruin it because it's good
32:22
Like you see, it's good like this. So the only thing you have to do, and you can use it after for whatever you want
32:31
for a chocolate fondue, for a sauce on an ice cream. You just take a cup of cream and you boil it
32:38
And then you pour it on the chocolate. I understand today I'm not going to get any help from Paula, so I'm going to do it by myself
32:50
I lost you, huh? You supposed to feed me last You don start off feeding me I get distracted So what you gotta do is just mix the cream with the chocolate
33:07
The hot cream is gonna melt that chocolate. And you can add whatever you want. I am really a fan of cinnamon
33:12
Uh-huh, me too. So, you just add some cinnamon, but you can add any spice
33:17
And I love almonds. Do you love almond? Love it. Love almond. So, we're gonna take..
33:23
By gosh I love a ganache. Take this thing. We gonna shoot up
33:29
No, it's a chocolate fix for you because... I was thinking I had a problem
33:36
The thing is that after this thing, you really need a chocolate fix
33:40
So we're gonna take some chocolate with our syringes. It doesn't come up. Oops
33:47
Here, take this one. Uh oh. You get it? Take this chocolate
33:53
Take this chocolate face. I'm making all kind of lewd noises. Are you kidding me
34:02
Try a little. Okay. Is it good? You want to share with somebody
34:09
Yeah? You want to try? Sure. Open up those pretty teeth. Mm
34:23
Gargle. Open up, honey. She doesn't do it. Mm. It's pretty good, isn't it
34:34
Good, huh? Let's put some on the cake. So, we're gonna... Woo
34:42
All right, so we're gonna put some chocolate... Wait, wait, wait, wait
34:46
We gotta go on break, Max. Don't go anywhere. We're gonna see what he's gonna finish doing
34:51
with this chocolate cake. I'm just going with you. Next, I'm doing some finger painting
35:02
with one of my favorite chocolate chefs. What am I? The chocolate diva
35:07
Oh, I like that! Welcome back
35:18
I'm sorry I had to stop you, Max, But finish up this chocolate mess
35:23
So we're going to put on the cake some chocolate ganache. Yes, I like that
35:30
The more you put, the better. The better it gets. All right
35:34
So I just put it around. And it's important that you leave your cake in the pan, y'all
35:38
Yeah, because if we want to fulfill a childhood dream, we must eat it directly from the pan
35:43
We must. What are we going to do after? What is this? This is a caramel
35:47
The most easy thing to do, kind of a toffee thing. You take sugar and you just mix it until it melts
35:56
When it totally melting just sugar that I put on fire mixing it and slowly slowly by mixing it it is melting So you just going to brown it off and this was regular white sugar white and a light brown or dark brown or anything
36:13
And that's how it looks like. Now, in order for it to stay soft, we take some..
36:18
I was going to say, I always like to add a little cream. Yeah, a little cream. And can you help me
36:23
Yes, I would be delighted. And I'll mix it. Do you need a whiz? It's a real family thing because somebody has to pour and somebody has to mix
36:34
That's what's so fun about cooking. It's a great activity to do with somebody
36:40
Absolutely. Or if you need therapy, it's a great thing to do alone and tell everybody to get out of your hair
36:49
So we are mixing now our candy toffee concoction. Meanwhile if you're bored you can have some chocolate
36:57
Oh thank you. I'm not bored but... Alright. Don't leave me alone okay
37:06
Come here. At least make a nice drawing on my... Make my face on my head
37:14
What do you say? I understand. You make me a Buddha now
37:19
I understand. What is that? Is that the dot in the center? This is the chocolate Buddha here. Okay
37:25
Thank you. You're a Buddha. So... What am I? The chocolate diva. Yay
37:34
Oh, I like that! I like that! So, after our coffee is totally melted, okay? Yes
37:45
We melt it. Yes. And then we add... You want me to turn the fire off
37:49
So we add to this some apples. Apples? Yeah. In our country, that'd be apples
37:56
Apples. Then, in order to really make it take a day. That looks like liquor to me
38:01
So don't look, but it is going to be brandy a little bit
38:06
So we have some brandy with our apple and caramel, and we let it cool a little bit
38:13
Am I in your way, baby? Yeah, you're a little bit. Just let me know if I get in your way
38:17
If you want, come back after, okay? So come, chocolate diva. I will come, Mr. Buddha
38:24
Thanks. So we have our... That's like a caramel apple. Exactly. How is it
38:34
Approved? On our... Oh, my goodness, my gracious. Little childhood dream. A candied apple that you can..
38:44
A caramel apple that you can eat with a spoon. Exactly. Now..
38:48
You are just like brilliant, Max. So in order to finalize our
38:54
You look pretty goofy, but you sure are smart. What are you doing I giving you a fix of your makeup Chocolate makeup A fix of my makeup
39:07
Now you're a perfect diva. I am. Okay. Oh, look at me
39:11
How am I? Now you're perfect. I'm having a chocolate shower now
39:27
You're having a chocolate? Well, listen, I heard y'all do all kind of funky things in your store
39:32
I heard that folks have syringes and they have squirt bottles. And they squirt it all over each other and lick it off there in the store
39:39
I'm not saying anything because the surprise is... I heard about you, baby. The surprise is part of it
39:45
So, let's go back to our mess, all right? Okay. On top of it
39:50
Oh, my. Max. We're going to have some ice cream that you're going to put in the middle
39:55
How come you're not fat? I'm gaining. Don't you see that I'm wearing a..
39:59
This is not fair. And, uh... I felt you suck when I touched it
40:08
All right, where do you want me to put this? In the center? In the center. Meanwhile, to help you, I'm going to decorate it around
40:17
Oh, decorate it. With some whipped cream. This is enough. That is enough. Yeah
40:25
All right. Now it's enough. And now we need some... Cherries! Cherries on top
40:32
Some chocolate chunks to make kind of a... All right, now do you want me to just put cherries all over it
40:38
Yeah, wherever you want. Or what do you want me to do? Yeah. You can put wherever you want
40:42
Well, this is your party, honey, so I want to do it just as you would have me do it
40:46
And let's create kind of a small chocolate porcupine. Yes. I love chocolate porcupines
40:55
I've never had a chocolate porcupine. But I know I would... Let's dig inside
41:01
Where's the other one? I don't know. You take the big one and I'll take the little one
41:06
Okay, here we go. All right. Oh, my goodness. Childhood dream come true, no? Yes
41:13
Mommy, don't look now because... Mommy, don't look. Mm-hmm. Mommy, don't look
41:32
If you're ever in Australia or ever in New York, you have got to go to Chocolate by the Bald Man
41:42
You must go. This is delicious. Thank you all so much for coming today
41:46
I hope you had a great time at the party. I did. It's been da-da-da
41:54
Thank you, Max
