Y'all, today's show is all about fathers and what they love to eat, what they love to cook
0:06
And I could not be with y'all today without premiering my favorite father in the whole entire world
0:16
My precious son, Jamie. Ta-da! You know, look at that. Nothing makes me happier than cooking for all my guys
0:24
And today we've got some dishes you fellas will flip for. Jamie combines yummy goodness cooking up pork chops and potatoes with a black pepper white gravy
0:34
I believe this is going to be delicious. I'm going to have tight pants
0:39
We're going to have tight pants. And this creamy roasted cauliflower is irresistible
0:45
I love cauliflower. Me too. And who could say no to a cake that came from an angel
0:51
My grandmother hires his butternut cake. One of the finest cakes you'll ever eat
0:58
I get to watch you, son, and how you father your children
1:12
You are a fabulous father, and they're lucky boys. And you know what else makes them lucky boys
1:19
Is their daddy knows how to cook, y'all. I'm a cooker. Today, y'all, I'm going to do something that has always been my favorite, and it's pork chops
1:28
We're going to make a white gravy. Brooke loves white gravy, and I do too. Yes, she does. That girl knows she likes her some white pepper gravy
1:34
We're going to take four tablespoons of butter. What do you want me to do with these potatoes, son
1:38
I know you've got something going on here. If you want to, Mom, you can measure me out 2 1⁄2 cups of milk
1:43
This is super easy to make your own gravy at the house. We're going to start with the roux. So I've got four tablespoons of butter, and I'm going to use a quarter of a cup of flour
1:51
And we're going to cook this down, and we're going to add 2 1⁄2 cups of milk to this. Okay
1:54
Okay, do you want these sliced thin like a hum-fry? You can cut them into a quarter, quarter inch, or you can chop your shallots, whatever you want to do. Okay
2:05
This, Mom, what is a potato casserole missing? White gravy and pork chops
2:09
So we're going to layer all of these and cook them in one container. This is a great recipe. You know what? This sounds like, son, it kind of sounds like my farmer's pork chops that y'all love so much
2:19
So I can't wait to see how you're going to put this together. Okay, my butter's done, y'all
2:24
So I've got this roux. This is going to thicken up our two and a half cups of milk
2:32
And I'm just going to keep stirring this slowly for the next few minutes until it thickens up
2:38
All right. The shallots are done. Now I'm going to start just slicing these potatoes
2:44
You say like a quarter of an inch, son? Yes, ma'am, please. About like this
2:49
That's good. And so I'm going to season this with a little bit of nutmeg. So how's this looking, son
3:02
It's good. Salt. A little salt. Some salt. I would put some pepper
3:06
All right. I like the flavor of the nutmeg. Yeah, I do too
3:16
Son, I can't seem to get it salty enough. You would salt, salt
3:22
Get out of my pot. We're going to season those potatoes. This is going to be fine
3:26
It's perfect now. It's perfect. All right, so what are we going to do
3:32
I've got your potatoes sliced. Okay. I've got your shallots. We're going to do a layer of potatoes
3:37
Okay. And then let's put a layer of shallots on there. And we're going to season this up layer by layer a little bit
3:44
Is this a Yukon gold? Yes, ma'am. And it's just like the white table potato, only it's gold
3:49
These just get real creamy and soft. Much better than those potatoes that you'd eat on the floor
3:56
These are table potatoes. The floor. Oh. I get it. Do you
4:01
Let's go one more thing of shallots. Okay. This is going to be really full. Okay
4:06
Okay, so we're going to... Okay. ...coat our potatoes in our casserole pot here
4:11
And we don't have any cheese in this, do we? No, ma'am. Doesn't this look awesome, Mom
4:18
Wow. My mouth is watering. Okay, now... You know, I never met a potato I didn't adore
4:24
I know, this is going to be so good. Let's cover it with four. Okay, and then we'll put it on this
4:29
I could clean out this pot a little bit more, I think. Well
4:33
Here, you want me to finish getting this out? If you think we need it, Mom. See, son, I knew there was another drop in there
4:44
Yay. Mmm. Oh, oh. That is so good. Throw some potatoes in that and some chunks of ham
4:55
You'd have the finest pot of ham and potato soup you've ever put in your mouth, y'all
5:01
Mm-hmm. All right, so how long are we going to bake that before, son? This is going in the oven at 350 for 25 minutes
5:07
When we come back y we going to sear off some pork chops Pork chops and taters Perfect combination And it all about you daddies today Coming up you better believe you want to try these pork chops and taters y
5:25
Look a bear, Jamie. That looks great. And this creamy, roasted cauliflower is no joke
5:30
I believe that this is going to be delicious. Fine as wine
5:34
I'm going to have tight pants. Then I introduce Jamie to butternut cake
5:40
Back home. Yummy. Jamie, what is your death row meal, son
5:57
It would probably be fried pork chops. I like some collard greens with cornbread dropped dumplings in them
6:04
Yes. And 17 beers. He loves his mama's pork chops. That's my favorite
6:10
So that's what we're going to do. Let's take a look at them. Mama, these are beautiful
6:15
Are they bone-in or boneless? They're bone-in because all the flavor's on the bone
6:20
Thank you. Where did I hear that before? I don't know. Half a cup of flour
6:25
And we're going to season this with a teaspoon of paprika. Okay
6:32
And a half a teaspoon of garlic salt. And I'm working on some fresh garlic right now, son, getting that chopped
6:39
And a half a teaspoon of onion powder, Mom. And now the cayenne pepper
6:43
And now, Mom, I'm not going to put a whole bunch in here. I'm just going to go an eighth. But if y'all like it spicier, this is where you would get it from
6:48
Yeah, my pie hole is a little sensitive. Mom is sensitive. The heat
6:53
And I'm going to salt and pepper these chops. So, Jamie, Jack is finishing up kindergarten
7:02
Yes, ma'am. He is. Going to be first grade next year. I can't believe it
7:06
I'm so proud of him. He's really learning a lot at a young age. and that makes me happy
7:10
You know, I'm having to be careful now, Jamie, because I spell something
7:14
He turns around and says, That spells... Whatever. Whatever Guinea has said
7:23
We're just going to brown these pork chops, y'all. A few minutes on each side. Mom, if you want to
7:27
let's pull out our potatoes from the oven. Okay. You can put them right here, Mom
7:35
Let's take a look, y'all, and see what we got. I think we could stand a little bit more awe in this pan, son
7:44
Ouch. That just came out of the oven. Yes. Did I forget to tell you I just took that out of the oven
7:49
Well, I watched you do it. Okie doke. You want these really brown
7:57
Yeah, I mean, you need to get them cooked. Yeah, these are so thick. Those are so thick, yeah
8:02
What you going to make? I'm going to make some creamy roasted cauliflower
8:08
I've got my onions chopped. I've got my garlic diced. I've got heavy cream, and I've got some cream cheese
8:17
We are going to just cut those in flouettes, son. You want them big, or you want this cut in half
8:23
Not real big. Yeah, we maybe cut that in half. Here we go
8:31
Look a bear, Jamie. That looks great. Now, if you wanted me to, I could slice that
8:39
No, I think it would be perfect. I think so, too. It's going into the oven, y'all, at 350
8:43
We're going to cook this uncovered for 35 or 40 minutes. If you would just toss it in the olive oil and just a little salt and pepper
8:56
and I have put about a tablespoon of olive oil in this pan and a tablespoon of butter
9:06
Will you pass me that salt and pepper please mom? Yeah. Just hit mine with a little bit
9:11
Okie doke. So we're just going to saute these y'all until they're kind of transparent
9:17
and we're going to roast our cauliflower maybe for about 20 minutes in the 350 degree oven
9:24
until they're kind of tender and a little bit brown. All right, so we're going to let these saute
9:33
Then we're going to add four ounces of cream cheese and about three-fourths a cup of heavy cream
9:40
Mm-mm. I believe this is going to be delicious. Fine as wine
9:46
I'm going to have tight pants. You're going to have tight pants. Right here in about 45 minutes
9:50
All right, so we've just got to let that cream cheese get melt into that
9:55
heavy cream and those onions and the garlic. And then we're going to toss in our
10:02
cauliflower, our roasted cauliflower. It's going to be so good, we're going to
10:06
have creamy cauliflower, we're going to have creamy potatoes, and then guess what we're going to have
10:11
A butternut cake, y'all. You don't want to miss this old-timey delicious cake. I may
10:20
cry because I have not had it since my grandmother was alive
10:24
Wow. Coming up I can believe there a cake in the family I never eaten Well this is hard to find now But before dessert there dinner y Is it yummy
10:36
Oh my gosh. I could just make my whole meal off of the cauliflower. All right, Jamie, that looks good, y'all
10:50
We've got our cream cheese and our heavy cream, our onions and garlic
10:54
son, you want to get out the cauliflower. And we're going to toss this in
10:59
And this is nice and thick, Jamie. Ooh, yummy. Just throw it in
11:07
Look at that. I could eat. Mmm. I love cauliflower. Me too. Mmm
11:17
I'm going to add just a drop of milk, son. Not much. That's good. If you get out the
11:22
pork chops and the potatoes, Oh, my goodness. Whoa. Oh, my gracious
11:32
I'm going to... You can keep talking if you'd like. Be careful, Mama
11:36
I know that's hot. It is so hot. This is what my son wanted, y'all, so this is what he gets
11:44
Look at that. Whoa. Looks pretty daggum good. I'm telling you what
11:51
Let's try them. You want to? Yeah. Yum. Yum, yum, yum. Ooh, is it yummy
12:03
Oh, my gosh. Well, son, I tell you, I could just make my whole meal off of the cauliflower
12:09
I would make a plate three times bigger, but I would be satisfied. Oh, son
12:15
That pork top. Wow. Y'all, quit watching TV and go look right now
12:22
Wait, wait. In 15 minutes. Y'all stick around 15 more minutes because I got to share this cake with her
12:29
I want to see it. Show me. Your granddaddy, my daddy, used to refer to his mother as an angel, a talking, walking angel
12:38
And I have to say she was. And every time we'd come down to Florida to visit, she would have this cake on the counter waiting for us
12:46
So we're going to start with two sticks of butter. Do you want me to cream that? Yes
12:50
and we're going to add two cups of sugar and we're going to cream that well, son
12:57
And our actual cake part is like your standard one, two, three, four cake
13:04
It's a cup of milk, two cups of sugar, three cups of flour and four eggs
13:09
One, two, three, four. Now I'm going to take our cake pans
13:13
and I'm just going to spray these real good. Plus, I'm going to dust them with a little flour so that'll make sure they come out good
13:28
We're going to add one egg at a time. Break them into another bowl and make sure each egg is fine
13:39
And turn it up as high as it'll go, son, to do your cream
13:42
There you go. Egg number two. All righty
13:52
So we're going to measure out one cup of milk, and we're going to alternately add our flour and our milk to our cake batter
14:02
You always want to start with flour and end with flour. It makes the creamier batter
14:09
I can't believe there's a cake in the family I've never eaten. I know
14:18
Look what it's going to look like when we add the flour. There we go
14:28
All right, the last of the flour. So now I want to talk to you about butternut flavoring
14:37
Grandmama would always have this in her cabinet, and there was a certain brand that she would buy
14:43
but this is the closest that I've been able to find. This one is called a vanilla butter and nut flavor
14:52
Grandma's butternut flavoring always made her cakes orange. I bet you this will make it orange
14:57
Yes, that will. So that's three tablespoons
15:12
All right. Back home. yummy. Isn't that delicious, son
15:22
I think I'm going to add just a wee little bit more. More? All right, now, son, our cake pans are ready
15:29
Here comes the worst part of making cakes for Mom. I just like to make sure, son, my cakes are nice
15:34
Let's try to eyeball it. You want to? Let's go outside your comfort zone. No. One time. No
15:38
Oops, you know what? Grandma put nuts in her cake Here the pecans right here You want to chop them Yes So let me just chop them real quick like Jackie I can believe we used to pick up pecans and sell them
15:51
Yes, to take y'all to the fair. And I would go out there and pick up pecans and take
15:56
them to the nut house and sell them. Not our house. Nut house. The other nut house
16:03
The pecan nut house. What would we get a pound? I don't remember
16:07
son. Maybe 39 cents a pound, something like that, 29 cents a pound
16:12
Back after back. But it was enough money to get us to the fair
16:17
I did not like doing it. I knew that. Yes, but you loved going to that fair
16:22
I did. And there was no fair money. This cake is beautiful
16:26
Isn't it beautiful? It brings back the fondest memories. I'm a stickler about my cakes being the same size
16:36
so I tried to... That's an understatement. I tried to measure out the same amount, and as the cake batter goes down, then my amount goes down
16:52
Okay, now we've knocked them about to just get the air bubbles out, y'all, and level them out
16:59
We're going to put these in the oven, 350-degree preheated oven, and we're going to bake them for about 30 or 35 minutes
17:09
I'll be keeping a close eye on them, and when I see them pulling away from their pan
17:13
or if I touch the top and it springs back, we'll know that they're ready
17:18
So don't go anywhere. I really, really, really, really want y'all to see how this cake turns out
17:26
So far, so good. Nellie Lou's butternut cake. Let's clean up. Okay
17:32
I'll start by cleaning up the pork chop. Mine's already clean. Mm-hmm
17:38
Coming up, there's no sweeter memory, y'all, than my grandmother Hires' butternut cake
17:44
Mm. Mm. Let's do it, Mom. This is incredible. Our cakes turned out beautiful
18:00
We've got our icing made, y'all. Y'all, it's four cups of confectionate sugar, an eight ounce block of cream cheese
18:08
Oh, and a stick of butter. And I'm going to flavor it with our vanilla butter and nut flavor
18:15
And I'm not going to measure it. I'm just going to pour until I get it the color that I like it
18:20
You put more of that orange stuff in there? Yes, that's what gives it the flavor, Jamie
18:24
You want to fold it or beat it? Well, I would love to beat it
18:28
Okay, and then I'll just fold in the nuts. Yum. Do you like that color, son
18:38
It's beautiful. I'm not even going to chop those nuts up anymore
18:44
That smells awesome. Mm-hmm. I'm going to put down just a little bit of that, Jamie
18:52
That's just so my cake won't move. Okay
19:02
Yum. Yeah, I love the pecans in it. It looks awesome. Yes
19:10
You want some more sticks? Yes. Sticks that fit, though. Jamie Dean
19:17
Look, it fits. Oh, okay. One more right there, please. Okay, here we go
19:21
All right, now this is when you start making me nervous. No, I'm not going to make you nervous. Wait, wait, wait now
19:25
Not in the middle. You want me to help you? No. You want me to do the sides
19:30
Look at this, Grandma. Jamie, you are going to send me straight to hell
19:36
while I'm trying to talk to an angel. Mama! See how I do it, son
19:42
Look, give me some on this side. I put it right there on the edge. No, Jamie
19:46
Yeah, we're starting a new tradition, Mom. No, we are not. Yes, we are. Jamie, I will knock the..
19:50
I will knock the breath out of you. Celebration of fathers and your favorite father, remember
19:57
That's me. You know I'm a baker by trade. You have never baked
20:03
Give me a chance. You make me so nervous, son. Well, what do you think I'm going to do
20:08
Calm down, Paula. We almost there. Yum. Wow, that was good. I know
20:16
Mm-hmm. The big reveal. Wow. That's a cake right there
20:26
Isn't that a beautiful cake? Cheers, Mama. Cheers, son. Mmm. This is incredible
20:37
One of the finest cakes you'll ever eat. And simple, too. So easy
20:42
A one, two, three, four cake. Love and best dishes to all you dads out there
20:47
Remember, it takes a great mom to make a great dad. Thank you, son
20:53
Bye, y'all. That is like the sweetest thing you've ever said to me
21:00
Thank you
