Today, y'all, we're gonna do something that has always been my favorite, and it's pork chops
0:04
We're gonna make a white gravy. Brooke loves white gravy, and I do, too. Yes, she does. That girl knows she likes her some white pepper gravy
0:10
We're gonna take four tablespoons of butter. What do you want me to do with these potatoes, son? I know you got something going on here
0:16
If you want to, Mom, you can measure me out two and a half cups of milk. This is super easy to make your own gravy at the house
0:21
We're gonna start with the roux, so I've got four tablespoons of butter, and I'm gonna use a quarter of a cup of flour, and we're gonna cook this down
0:28
and we're going to add two and a half cups of milk to this. Okay. Okay, do you want these sliced thin like a home fry
0:33
You can cut them into a quarter, quarter inch, or you can chop your shallots, whatever you want to do. Okay
0:41
This, Mom, what is a potato casserole missing? White gravy and pork chops
0:45
So we're going to layer all of these and cook them in one container. This is a great recipe. You know what, this sounds like, son
0:50
it kind of sounds like my farmer's pork chops that y'all love so much
0:54
So I can't wait to see how you're going to put this together
0:59
Okay, my butter's done, y'all. So I've got this roux. This is going to thicken up our two and a half cups of milk
1:08
And I'm just going to keep stirring this slowly for the next few minutes until it thickens up
1:13
All right, the shallots are done. Now I'm going to start just slicing these potatoes
1:20
You say like a quarter of an inch, son? Yes, ma'am, please. About like this
1:25
That's good. And so I'm gonna season this with a little bit of nutmeg
1:35
So how's this looking, son? It's good. Salt Little salt Some salt I would put some pepper All right I like the flavor of the nutmeg Yeah I do too
1:52
Son, I can't seem to get it salty enough. You would salt, salt
1:57
Get out of my pot. We're going to season those potatoes. This is going to be fine
2:02
It's perfect now. It's perfect. All right, so what are we going to do
2:08
I've got your potatoes sliced. Okay. I've got your shallots. We're going to do a layer of potatoes
2:13
Okay. And then let's put a layer of shallots on there. And we're going to season this up layer by layer a little bit
2:20
Is this a Yukon gold? Yes, ma'am. And it's just like the white table potato, only it's gold
2:25
These just get real creamy and soft. Much better than those potatoes that you'd eat on the floor
2:31
These are table potatoes. The floor. Oh. I get it. Do you
2:37
Let's go one more thing of shallots. This is going to be really full. Okay
2:42
Okay, so we're going to... Okay. Coat our potatoes in our casserole pot here
2:47
And we don't have any cheese in this, do we? No, ma'am. Doesn't this look awesome, Mom
2:54
Wow. My mouth is watering. Okay, now... You know, I never met a potato I didn't adore
3:00
I know, this is going to be so good. Let's cover it with four. Okay, and then we'll put it on this
3:04
I could clean out this pot a little bit more, I think
3:08
Here, you want me to finish getting this out? If you think we need it, Mom
3:15
See, son, I knew there was another drop in there. Yay. Mmm
3:23
Ooh That is so good Throw some potatoes in that and some chunks of ham You have the finest pot of ham and potato soup you ever put in your mouth y
3:37
Mm-hmm. All right, so how long are we going to bake that for, son? This is going in the oven at 350 for 25 minutes
3:43
Jamie, what is your death row meal, son? It would probably be fried pork chops
3:49
I like some collard greens with cornbread dropped dumplings in them. Yes
3:54
And 17 beers. He loves his mama's pork chops. That's my favorite
4:00
So that's what we're going to do. Let's take a look at them. Mama, these are beautiful
4:05
Are they bone in or boneless? They're bone in because all the flavor's on the bone
4:09
Where did I hear that before? I don't know. Half a cup of flour
4:14
and we're going to season this with a teaspoon of paprika. Okay
4:22
And a half a teaspoon of garlic salt. And I'm working on some fresh garlic right now, son
4:28
getting that chopped. And a half a teaspoon of onion powder, Mom. And now the cayenne pepper
4:32
Now, Mom, I'm not going to put a whole bunch in here. I'm just going to go an eighth. But if y'all like it spicier
4:37
this is where you would get it from. My pie hole is a little sensitive
4:40
Mom is sensitive. The heat. and I'm going to salt and pepper these chops
4:47
So, Jamie, Jack is finishing up kindergarten. Yes, ma'am. He's going to be first grade next year
4:55
I can't believe it. I'm so proud of him. He's really learning a lot at a young age, and that makes me happy
4:59
You know, I'm having to be careful now, Jamie, because I spell something
5:04
He turns around and says, that spells Whatever Whatever Guinea has said We just gonna brown these pork chops y a few minutes on each side mom if you want to let pull out our potatoes
5:18
from the oven you can put them right here mom let's take a look y'all and see what we got
5:26
I think we could stand a little bit more on in this pan son ouch
5:34
that just came out of the oven Yes. Did I forget to tell you? I just took that out of the oven
5:39
Well, I watched you do it. Okie doke. You want these really brown
5:46
Yeah, I mean, you need to get them cooked. Yeah, these are so thick. I'm going to let them get first
5:50
Those are so thick, yeah. Here we go. Look-a-bear, Jamie. That looks great
5:58
Now, if you wanted me to, I could slice that. No, I think it would be perfect
6:04
because it's going into the oven, y'all, at 350. We're going to cook this uncovered for 35 or 40 minutes
6:13
Oh, my goodness. Whoa! Oh, my gracious. I'm going to... You can keep talking if you'd like
6:23
Be careful, Mama. I know that's hot. It is so hot. This is what my son wanted, y'all, so this is what he gets
6:32
Look at that. Whoa. Looks pretty daggum good. I'm telling you what
6:39
Let's try them. You want to? Yeah. Yum, yum, yum. Is it yummy
6:51
Oh my gosh
