Well, I've got a few surprises for you today. I'm going to make you a chocolate flank steak

Okay, I like flank steak and I like chocolate, but I don't think that will go together

You know what? I'm going to prove you wrong, baby. Bring it. Bring it. So you're dicing that pineapple for our salsa that we're going to go along beside it

because we're going to marinate this in chili powder and cumin, so we need just a little something sweet to go along with it

And that sweet pineapple salsa is going to be very good with it

I'm going to spray our griddle just a little bit. And we're going to get this marinade made up for our flank steak, y'all

And if you'll stop chopping just for a second and hold my bag for me

I'm going to start with four tablespoons of wine vinegar. And we're going to add two tablespoons of olive oil

You can use a vegetable oil. It's fine. And then I'm going to use two tablespoons of brown sugar

Plop. Plop. And then to the chocolate. And I'm using just an unsweetened cocoa powder

So two tablespoons of that. Must have been heaping spoons. Well, it was kind of heaping

And then two teaspoons of chili powder. And one tablespoon of cumin

A little bit of salt. A little bit of cracked black pepper

All right, so we're going to use about a two-pound flank steak stand

And we're just going to put him down in there. And let's just press the air out of it and seal it up

And we're going to let him marinate for an hour or two

You know, if you want the flavor stronger, we can even let him marinate overnight

Let's put this marinated steak on the grill while we finish our salsa

And y'all, our salsa is going to give us about two cups of fresh pineapple, and then we're

going to add an avocado, about a fourth of a cup of chopped onion, about a tablespoon

of fresh lime juice, and a handful of cilantro. All right, now look at here, Stan

I'm gonna show you how to cut this avocado. You just go around like that

and you know there's a big seed in there. We're just gonna take our knife and pop him like that

and pop him right on out. You got some tricks. Yeah, we full of tricks around here

How simple is that? That's great. Let's squeeze a tablespoon of fresh lime juice onto our avocado

And that's going to keep it from turning dark on us. You know, we think of salsa as like a Mexican, south of the border

Now, Stan, this chocolate gravy is so easy to make. It's as easy as

like our brown gravy. This is me. I make a big chunk. That's yours

All right, now I've got our skillet going. I'm going to start with about a third

of a stick of butter, and now we need two-thirds of a cup of sugar

And then we're going to throw a couple of tablespoons of flour to make

our gravy thick. We weren't brought up with chocolate gravy, y'all. I think that this is more of a Tennessee, Kentucky thing

And they eat this for breakfast like we do biscuits and sawmill gravy down here, white gravy

I'll need a third of a cup of cocoa stew, and that'll be about five tablespoons

We're going to start off with a quarter pound of butter. A quarter of a pound. Let's see, that's one stick

Yep. We're going to bring this butter to a boil. Then we're going to add this quarter of a cup of water

Okay. We're going to bring it back to a boil. And then we're going to add the sugar and bring it back to a boil

So we're going to boil it three times before we put the chocolate chunks in

Okay, while we're letting this boil, we could go ahead and sift the flour. Now, what kind of flour is this

That is pastry flour. This doesn't have any of that gluten in it. And it needs to be sifted

Just put it in there. And on top of that, I want you to add an eighth of a teaspoon of bacon powder

Okay. Now you can sift it all together. That's really boiling. We're going to put the water in now, and that's a quarter of a cup

And we want to bring it back to another boil. Okay. What else do I need over here, Stan

Stan, let's get this finished up using our little hand blender. So we kind of just want to puree that, and while you're doing that, I'm going to crush up our tortilla chips
