Hey, y'all
0:01
Come on in this kitchen. I am in here with my friend, Max Renner
0:06
He is the king of chocolate. Oh, out of this world. Y'all, he has got the neatest shop in New York City
0:15
Chocolate by the bald man. Almost like Howard Go. Today, he's going to show us how to make his
0:23
We Need to Talk chocolate pizza. This is almost a healthy pizza, isn't it
0:30
And then it's Sweet Dreams Chocolate Fudge. I bet she never had a bad dream again
0:36
I'm making a delicious chocolate pecan pie just for Max. Wow. I can't wait. I have to tell you
0:43
And it's a workaholic's hot chocolate for the go-getter in your life
0:51
You got whipped cream on your nose. I really do like this guy
1:00
The first dish that we're making is a chocolate pizza
1:10
Yeah, it's a special chocolate pizza. We call it We Need to Talk Chocolate Pizza
1:16
And this recipe I learned from my girlfriend who, you know this very famous phrase that only girls know
1:23
and when boys see it, they run away from the door. It's called We Need to Talk
1:27
She decided to create this chocolate pizza for me that when I'll make it, it's going to be like my dough handcuffs that I'm totally inside this now
1:38
You can't run out of a house with this all over your hands, right? Exactly. I love it, Max
1:43
Well, we've made my pizza dough from one of my cookbooks. It's very simple
1:47
So we're going to put it in a bowl. Look at me. I can't move
1:52
You have got the prettiest bowl of dough. Now we're going to spray our bowl
1:56
and then just transfer our dough into our bowl. And we're going to cover it up, aren't we
2:03
Yeah, absolutely. And let it rise for about 45 minutes. So. So we cover it with this
2:10
Yes, we're dis... Don't y'all like that foreign accent, girls? Dis, it's very romantic
2:18
Really? All right, so I'll just carry this over here and sit it down in a warm place somewhere near here, the stove
2:25
where the pilot lights, yes. And I've got us one that's already been sitting
2:30
for about 45 minutes. And you can see how beautiful this dough is
2:36
So all we need to do now is take it out and we're going to knead it just a few times
2:42
And then we can cut it in half so that you can make your pizza and I'll make me a pizza
2:47
How's that? It sounds great. Look at that. Unbelievable. I'm fixing to punch it
2:53
Oh, that's so much fun. This is a perfect dish for that
2:58
All right. Can we cut it in half? Yes, cut it in half. So we can both work on it
3:04
Yes. Okay. That is beautiful dough. Look at that. Let's go ahead and Max sprinkle a little cornmeal on our pizza stone
3:21
Okay, so Paula, you're going to roll it and prepare for us a 12-inches pizza
3:28
Well, I'm going to make another very beautiful recipe of chocolate. It's called Sweet Dreams Chocolate Fudge Candy
3:36
Sweet Dreams Chocolate Fudge Candy. Okay. You're with me, aren't you, girls
3:41
You know why? Why? This was because a little girl came to me once and she said she has always bitter dreams
3:49
When she goes to, yeah, like very bad dreams. But she said, I have bitter dreams
3:54
Bitter dreams. And I told her, let's create for you a little sweet candy that inside the candy we're going to write a little tale
4:02
And then before you go to sleep, you open the tale, you read the tale, you eat the little sweet dream fudge, and then you have an amazing sweet dream candy
4:12
That is the sweetest story. Okay. Now, who is this little girl? This little girl, her name was Emma
4:18
So we were taking this marshmallow cream. Okay, I called it puff clouds marshmallow cream
4:27
Puff clouds. I'm taking seven ounces of marshmallow clouds and put them inside my pan
4:36
Okay. Then I'm going to add two-third cup of Snow Mountain milk, evaporated milk
4:46
Oh, I was going to say, what are you calling it? For Emma, it was Snow Mountain milk, so we're going to add this
4:53
Now, was Emma in the kitchen with you when you were... Of course Emma was in the kitchen
4:58
Emma was always standing on a little stool like this and looking at all this legendary stuff that we were making in this concoction
5:07
Then Paula we taking one and a half cup of what I call Princess Diamond sugar Princess Diamond sugar
5:21
Which is regular white sugar. Which is not just regular white sugar, but this was a very good stuff for her dreams
5:27
So we put one and a half cup of this Princess Diamond's sugar
5:33
I bet she never had a bad dream again. And then we take a quarter of a teaspoon of the lost sea salt, and we add also inside
5:45
And that's just regular salt, right? Just regular salt. And we take half a stick of butter and add inside
5:54
What did you call the butter? Well, the butter was just butter
6:00
Just butter. And then we are cooking this after we boil it
6:05
for about five minutes until it really gets thick. You stir or not stir
6:12
You have to stir it, otherwise it can totally get burned. Okay, well, I've got my pizza dough all rolled out nicely
6:20
So I'm going to go ahead and transfer this one to our stone
6:25
While you're waiting for that to boil, we're going to stick this in the oven, Max
6:30
and I'm going to put it in a 450-degree preheated oven, and I'm going to let this bake for about 16 to 18 minutes
6:38
Exactly. And when we come back, Max, you're doing some more magical things, aren't you
6:43
Just because I don't want you to get bored, here is a little chocolate for both of us
6:49
I really do like this guy. Coming up, y'all, we're making our Sweet Dreams chocolate fudge
6:56
I love it. And later, it's chocolate pecan pie. Moms and dads, if your children are not near the TV, come get them, because I am here with the candy man
7:13
He's making sweet, wonderful things happen in our kitchen today that the children are going to love
7:20
So we're going to continue with our Sweet Dreams chocolate fudge candy
7:24
Sweet Dreams chocolate fudge candy. And we're making a chocolate pizza. We need to talk chocolate pizza. Exactly
7:32
And we already have the fudge base here. Yes, we cook this for five minutes with the marshmallow fluff and the sugar and the salt
7:41
Exactly. So now we're going to add this Milky Way chocolate. I've been eating on this chocolate, y'all, and it's fabulous
7:52
And you know why it's so good? Because it's from the Milky Way. The Milky Way
7:57
You went way out there and got it. Absolutely. So put three cups of this into the fudge, and you don't have to do much because it's going to melt from the heat of the fudge
8:06
And just continue to stir it. Oh, it's already getting chocolatey. Looks fabulous
8:13
So you can add another cup. Okay, two cups. And the last cup, and I heard you like to hide your chocolate from other people, but I like to share it
8:23
Who told you that I had candy? Yes, I can't tell you
8:28
I do have candy. So we're going to add to this quench that we are making
8:35
It's not just nuts. It's nuts from the hidden forest. From the hidden forest
8:40
And we can add actually whatever we want. We can add peanut butter chips
8:44
We can add some walnuts. We can add pecan. Just whatever you like
8:48
We can add whatever we like. A little vanilla? A little vanilla from Caribbean Secret Island
8:56
Caribbean secret vanilla flavoring. And our sweet dream fudge after five minutes of
9:05
boiling it and adding the chocolate is ready. So what we have to do
9:09
now is just pour it here into this pan, eight by eight
9:17
And we're going to line it with aluminum foil like this. You're totally
9:25
forgot me, huh? I am so over you. And on to this fudge
9:36
It's better to kiss the fudge than to kiss me, I think. So let's pour the fudge here
9:43
Yummy fudge into there. Now go to our North Pole fridge and put this fudge for..
9:53
I love you. All right. Am I putting this away? I can put it
9:59
Yeah, you put it, and I'll get the pizza. I hope I'm going to come back from the North Pole fridge
10:05
You live in a fantasy world, don't you, man? We're going to put it for two hours there to cool down
10:12
And meanwhile, we're going to finish our... We need to talk? We need to talk pizza
10:18
We need to talk chocolate pizza. Sorry, you guide me. What we have to do now is cut some chocolate milk and white chocolate Okay now you just need to move this down here Okay Or are you going to cut it there No you cut here the milk chocolate but I going to cut the white chocolate Okay now how do you want it cut How big a piece is it You just cut it like small chunks here Okay Chop it like this Just like we were cutting an onion or a bell pepper Yeah exactly Take these chocolate chunks and we going to put some white chocolate That almost looks like cheese on our pizza Exactly This is our
10:56
Mozzarella, white chocolate cheese. I love mozzarella. Bring your milk chocolate and spread it all over
11:07
And now we're going to have... I like the milk chocolate, I think, better than the mozzarella. Okay
11:12
Is that enough? This is enough because we're going to have some fun stuff on top of it
11:18
And we're going to divide it to a few quarters. Little marshmallows. Marshmallows
11:22
We're going to do, like, different slices. Exactly. M&M's that are going to crack in the oven
11:32
Caramels. And chop them a little here. Melted peanut butter. Now I'm going to have some bananas here
11:40
And then put it inside the oven for another, let's say, three to four minutes
11:47
And it's all going to melt down. Oh, my goodness. So open the oven for me
11:52
I cannot wait. I cannot wait. I've never seen anything like this pizza, y'all
11:57
Don't go anywhere, because when we come back, we're going to taste that wonderful pizza, aren't we
12:02
Absolutely. Coming up, we're going to taste the most amazing chocolate pizza
12:07
We need to talk. Oh! And later, our sweet dreams chocolate candy
12:19
Hey, y'all, welcome back. I'm just gathering up all the ingredients that I'm going to need for this dish that I want to teach Max how to make
12:28
Before you teach me, I just finished baking the pizza. Oh, gosh
12:34
And we're going to slice it. Look at this pizza, y'all. So, after we had so much talking, you tell me, what is your favorite
12:44
the banana, the peanut butter, the marshmallows, or the covered candy chocolate
12:53
You know, I like it all. All right, so... I like it all, but I..
12:57
Let me give you a little bite of this. Okay. The best in the world
13:04
No need to talk after this, believe me. Nice. No talking after this, only love
13:11
I have to say something. Yeah. We need to talk. Oh! See, I told you, girls, that's how you get them out of your hair
13:21
Okay, so instead of talking, teach me how to make this little secret that you promised me before
13:25
I knew I could get him away from that pizza. I'm still dreaming from the last time I came to your restaurant
13:31
I had a piece of pie of this pecan pie. Pecan pie
13:36
Pecan pie. And from that day on, the only sweet dream that I have
13:41
is about this pecan pie. So you promised you'd teach me this, so teach me
13:45
I'm going to teach you how to make this pie. It's so easy. All right. I'm going to get us out a bowl
13:50
And what I want you to do is beat up these three eggs for me, okay
13:55
No problem. This I know how to do. And just beat them up for me. Okay. Now, we're starting with a refrigerated pie shell that we have just put and pressed and fluted into our pie plate
14:07
Now, I'm going to start by adding about two cups of pecans
14:17
Now, some people like their pecan halves whole. Some people like them chopped up
14:23
They say that the pie pieces cut better. I want to make the same pie that you make in your restaurant
14:29
Okay. I'm using halves here today. Okay. All right, so I'm going to put about two cups
14:34
Now, this is the way we do it at the restaurant. And this way, we know that we've got just the right amount of pecans
14:41
You see how I've covered the bottom of that shell? Mm-hmm. I've got some melted butter over there
14:46
If you would pass me that butter, please, Max. And should I pour it inside
14:53
Yes, just pour it on in. You cannot mess up this pie. Okay
14:57
A pecan pie, I promise, you cannot mess it up. All right, now I've got my measuring cup
15:02
because we're going to measure out a dark corn syrup. And that syrup is going to make almost like a custard
15:09
Do you remember when you cut into that pie and it was kind of like a dark, almost custardy-like
15:15
This is exactly the thing I dream of every night. Yes. How much should I pour
15:20
So a half a cup of dark syrup. Wow, this is so beautiful
15:25
Now, the reason we sprayed our cup is because you know how sticky syrup is
15:30
And look, it's good. Yeah, pour it on in. So see the way that syrup just slips away from our dish
15:36
And it's so beautiful. Yes, it's so beautiful. And we not going to lose a drop of it All right now we going to add one cup of sugar And you can just be whisking all this together for us We don even need a mixer for this pie
15:54
And lots of times down here in the South, we love adding chocolate to our pecan pies
16:01
So in your honor today, yes, in your honor, we're going to add about four ounces of chocolate
16:08
All right, well, let's get some of our chocolate. And like I said, we're going to use about four ounces
16:14
And you can just kind of chop that up for me. Now, we're going to add one other ingredient that folks in the South have a kind of taste for
16:25
The secret ingredient. Yeah, which is a little bourbon. So I'm going to do like two tablespoons of bourbon
16:36
Everything in the world tastes so much better if you add some chocolate into it, no
16:40
Absolutely. I don't know anything that chocolate can't help. Now, all we're going to do at this point is pour our pie filling over those nuts
16:52
Wow. Oh, my God. Those pecans are going to rise to the top, and we're going to see every one of them in there
17:03
All right. So? So we're going to bake this, y'all. We're going to put it in a preheated oven that's been heated to 375 degrees
17:11
We're going to bake it for 10 minutes. Then we're going to lower the temperature to 350
17:16
and we're going to bake it for another 25 minutes. I can't wait. I have to tell you
17:21
Up next, hot chocolate donut. Get no better than this. I am finally getting to our little sweet dream chocolate candy
17:37
Now, we took our fudge out, and it has hardened perfectly. Now, I'm cutting it into little squares, and you're getting ready, Max, to make us a hot chocolate, aren't you
17:47
It's not just the hot chocolate. It's a workaholic's hot chocolate. Workaholic chocolate
17:51
Because when they eat this, when they drink this, they're totally going to get relaxed like a baby
17:57
And the secret in this thing will be to make a kind of vanilla custard because this is what's going to make it really thick
18:05
So let's just finish. Yeah, let's finish this. I really want everybody to see these sweet little things
18:11
Now, you can buy these little squares of foil, y'all, at like a hobby shop or a craft shop
18:19
And all we did was write a little story. We took a permanent marker
18:25
You can just write a little note and simply say, I love you, kid
18:31
Absolutely. Just very, very simple. And we are wrapping our little sweet dream inside here
18:38
Isn't that the sweetest thing? So now we are making our custard
18:43
that is going to be the basic for our hot chocolate. We boil the milk
18:48
We take the egg yolks and the cornstarch and we mix everything together
18:51
to create a custard like this. Now we take a chocolate. Your milk chocolate
18:55
Each one can put as much chocolate as it wants. It depends how strong you want it
19:00
Now, I think the best thing with hot chocolate is we can create whatever flavor that we want inside
19:06
So we brought some extract here, and you should choose the one that you really like
19:11
Gosh, and you've given me lots of choices. You've got a peppermint
19:16
Peppermint, I think, will make the workaholics run a little. You've got an orange extract
19:21
which is probably very good. Orange is amazing. And chocolate together. And then you've got the ever so popular almond
19:29
Okay, so I'll tell you what we do. We take this, two little bowls
19:34
Now, put a little bit of orange here and a little bit of almond here
19:39
And I'm going to pour our hot chocolate on it. All right, now how much? How much, Max
19:43
Just a little bit. This is enough, yeah. I'm going to pour our hot chocolate on top of this
19:48
Some whipped cream. Mm-hmm. marshmallows. All right, let's make a toast. Oh, to my favorite
19:56
ball-headed chocolate man. Oh, my God. What do you say? This is some good stuff
20:09
I agree. This is like out of this world. The only thing that really can make it better
20:13
is with your pecan pie, I think. Honey, this ain't gonna make that no better
20:17
This is like the best stuff. I have never tasted y'all. That's not your pecan pie
20:24
I'm taking my chocolate with me. Yeah, you eat my pie and I'm going to drink your hot chocolate
20:36
Mmm. This is the best thing in the world. I can't thank you enough for coming down here
20:42
And if y'all are in New York, please look up. Chocolate by the ball, man
20:47
Yep. Max, you want to tell everybody goodbye? Do you know what I say at the end of the show
20:52
Sending love and best dishes from Paula's kitchen. To yours. To yours
