Hello, y'all
0:09
Welcome, welcome, welcome to Holiday Network. That into mine. Big inside the box in a rack
0:16
Oh, I'm so glad that was still in the wrapper. Bobby, tell us what we've won today
0:22
You've won nothing. But we're going to do something that is one of my..
0:29
Everybody likes chili. Okay. So you know what we ought to do? We ought to have a little bit of a kind of a contest here
0:34
since we've got family and friends to be honest with us. Let's tell us if your traditional chili is better
0:40
or if my light chili is equally as tasty. So in the kitchen today, I've got A1 Chili Maker
0:47
my brother, to sit here and totally tell me everything that I'm doing wrong. You can smell like garlic so bad
0:52
Why, my chili sucks. And my longest time friends, Jay Hatcher and his wife Angela Hatcher
1:02
And I have to say, y'all, when we get through with this
1:06
you're not going to see a huge difference in the calories and the fat
1:11
But here's the deal. Bobby has made these changes in his cooking every day, not once in a while
1:19
so when you make these little bitty changes after a year's period
1:25
they add up to big results. They do. But I'm going to do it the way that I've always done it
1:33
Of course. So I am using skinless Italian sausage that's hot. I'm actually using turkey, ground turkey
1:42
Ground turkey. One pound of it into a tablespoon of olive oil for me. And we're just going to brown this off
1:47
And I'm using the ground chuck, son, so it's got a little bit more fat in it
1:52
than like your ordinary hamburger. Well, there's a lot of flavor in fat
1:58
But sometimes when you take out the fat, you got to add flavor in other ways
2:02
And this is not a speed contest. This is just... Well, why are you cooking yours so hot, then
2:08
Well... Brianna preheated my pot because this pot is so thick It takes a while Well it looks like it been about a while I mean I really cooking over here Now I diced up my garlic and my bell pepper
2:30
I'm using a small little food processor. So it's- But it's not a speed contest, mind you
2:36
She's cooking hot as the first floor of Hades and using a food processor
2:40
I just wanted to, now how do I get this back on, Bobby
2:44
Oh, I'm not going to help you, mama. It's not a speed contest. All right, now to my ground turkey, I've added one bite of onion
2:53
which adds a lot of flavor. I'm adding two stalks of celery and two garlic cloves
2:59
and then one big fat green bell pepper. So I like to load my chili up with vegetables and with fiber
3:08
and things that you can, you know, that your body can use. I'm always big on adding things that your body can use
3:16
This almost ain't worth it. It's working for me. I love it
3:23
I was pouring for you. You were pulling for me out of your hand
3:27
Well, it worked. Now, you're going to get a lot of flavor out of that Italian sausage and out of that full fat ground chuck
3:36
Yeah. I'm going to add my flavors that are going to give me some boldness without the extra fat and calories of the meat that you're using
3:44
I'm going to use some cumin. I'm gonna take my brother's advice and I'm gonna double up the cumin and use two teaspoons
3:51
Okay, and then two tablespoons of chili powder. Well, I like using my children
3:56
That just smells like chili, you know instead of using a bunch of chili powder So I'm gonna go ahead and add my seasonings while my vegetables are softening up to kind of cook that raw out of them
4:08
Out of the seasonings, you know because they can be kind of chalky and raw if you don't cook them down a little bit
4:13
Jay, what was the most favorite thing that I ever cooked for you
4:18
I remember the grilled cheese, I think, with mayonnaise. Grilled cheese with mayonnaise
4:23
Favorite thing Pauline ever cooked was grilled cheese with mayonnaise. I've said it many times, I blame you fully for my mayonnaise habit
4:31
Do you remember Bobby came in one day and he said, Mama, I want you to meet my new friend Jay
4:37
And here the funny part I guess one reason I fell in love with Jay so much is because his mother and I were friends in high school She and I used to spend the night with each other all the time
4:50
And I always loved going to Carol's house, his mother's house, because there wasn't as many rules at their house as it was at mine
4:58
And one night, we were in there in the bedroom, and Carol's daddy comes in and says
5:04
you girls want to go out honky-tonky in a little bit? And shoot, we came up out of that bed
5:11
We said, yes, sir, we sure do. I don't remember your granddaddy ever telling us this story
5:15
I heard about a few of them. By the time he took my mama honky-talking
5:20
Well, he did. Took those good young ladies honky-talking. All right, I'm going to drain my pintos
5:29
And I'm doing the same thing. I'm going to drain my kidneys
5:33
And in the pot they go. I'm going to take it a step further and rinse mine
5:38
I'm going to use a 24-ounce jar of diced tomatoes. Whenever you use canned products, which I don't mind using
5:48
you know, they pack them in, it's basically salt water. I'm using about the same amount of fresh crushed tomatoes
5:56
And I'm using a small jar of tomato sauce. So there we go
6:03
I've got all my ingredients in there, and I'm going to let them marry together a few minutes
6:08
and then I'm going to taste and see what else it needs and after I get my pot seasoned just right
6:15
I'm going to cover it and I'm going to let it simmer for an hour and a half
6:21
All right, I'm going to go ahead and add my low-sodium diced tomatoes and my low-sodium sauce
6:29
And I'm going to add, you know, we were talking about adding flavor without fat
6:33
I'm going to add in some jalapenos to give it some spice
6:40
All right. So what I'd like to ask y'all to do is to turn your backs
6:44
Blind taste test. Like they're not going to be able to tell looking. Turn your backs very quickly because this is going to be blind
6:51
and you're not going to know who's chili you're tasting. I bet I do
7:03
Too late Jamie you always cheat All right y can turn around now
7:10
Okay. Wow, it looks good. Oh, it looks good. So come around here and taste. Too pretty to eat
7:16
Too pretty to eat. Too pretty to eat. Here's y'all's spoons. Thank you for the positivity, Jamie
7:21
They look the same. All right, so y'all taste. Take your time
7:26
I'm going to come down here and sit down so I can see y'all's faces. I'm gonna eat a hug, yeah
7:30
It's spicy. Bye, bye, bye. Now, which of these would you want to take to Bobby's house to eat
7:37
I like Bobby's better. This is Bobby's right here, right? That is mine
7:42
Why did you say that, Bobby? Well, because he already called it out
7:46
Well, yeah, but you... No, I only knew that. They look exactly the same. I saw the celery in yours, and I like to put celery in mine
7:52
Which one were you gonna pick, Angela? I was... I was going to..
7:58
I don't know I'm going to be in trouble now. No, you're not. We got to stay with Bobby
8:03
The only thing that matters is that they both stand up to the taste test
8:07
We made them pretty much identical. Pretty much the same. Except for the meat, you added the celery, I didn't
8:14
You used low sodium, I didn't. Exactly. You used a yogurt topping, I didn't
8:19
I used sour cream. Small changes. So it's small changes. But my chili still has, per serving, this is still 571 calories and 13 grams of fat
8:29
Yours is more in the neighborhood of 800 calories per serving with about 25 grams of fat
8:33
So they're both hearty and delicious, but I think that the major difference you're going to find is probably in the sodium count
8:40
And Jay and Angela just told me that they try to cook low sodium, so they preferred yours to mine
8:47
But I have to say, I think both are absolutely delicious. I would not mind one bit
8:53
shaving that fat count off and that calorie count. I am just as happy with this one, son
9:01
Congratulations, Bobby. Thank you, Mama. It was delicious. So, so, if you like these recipes
9:12
you can find these and many others right here on the Paula Deen Network
9:16
All right. Chilling for everybody
