It's a homemade candy bar that's both sweet and salty. I'm using a package of butterscotch morsels

And we're going to just melt those up. And when they get soft and pliable again, I'm going to add one cup of marshmallow cream and a half a cup

See, this recipe is really very good for you because I'm adding a half a cup of powdered milk

But it takes a while, so you got it. Henrietta, the first time I ever used a fresh coconut

I chased that sucker all around the garage with a hammer. With a hammer, huh

With a hammer. Yeah. And my grandma wasn't home. When I finally got her, I said

Grandmama, I have spent the afternoon chasing around a coconut. She said, Paula, you're supposed to put them in the oven

Yes. Have you ever heard of that? No, tell me about that, Paula. Well, she told me to put that coconut in the oven

heat it on like 250 degrees, and then it'll split nicely because we didn't have all this stuff in our kitchen

Paula, now let me show you this. Okay, show me. This looks like a pretty young coconut

It's got a smoother skin. And that's what you want, a young coconut? Well, I give them old, young, middle-aged

But this is how it looks when it's all done. It's very nice and it's cleaned up

and washed and cut in bite-sized pieces. Two medium coconut, we're gonna put it in a pot

All right, now we're using a cast iron. That is excellent. I like cooking this in cast iron pots

It cooks it much better. Now, there's three ingredients to this candy

Just three ingredients, fresh coconut, fresh ginger root, and natural brown sugar

Now, the ginger root has already been cut up. So we put this in here

Now, let me say this. That's a lot of ginger, and to me, ginger's strong. It is strong, but I'm not putting all this ginger

And this was two pounds in it. Well, it looks like you are. No, no, I think that's enough

A little more. Let me tell you about the ginger. Ginger has lots of fiber in it

So when you're eating this candy, as I'm pointing this way, when you're eating this candy, that's the fiber in the ginger

It's not hair in the coconut. Because it has a lot of fiber

A lot of fiber is good for all of us. Now you cook this, Paula, for three to four hours

Wow. With the ginger, just the ginger and the coconut. Because you have to cook it that long to get the taste of the ginger all through the coconut

So it has to be cooked that long. And it actually tinges the coconut up

And tell me about the water real quick, like Henrietta. On the first stages of cooking it for the three to four hours, you can fill your pot up and let it boil

It has to boil for three to four hours. And you just keep adding water to it

Okay, well, we don't have three or four hours, do we? No, we don't. So this here, this shows you that, now this coconut has been cooked for four hours with the ginger

And then you put, where's our sugar? Here. Oh, this is nice, natural sugar

Naturally, baby. Only the best for you. Only the best. We're going to add four cups of brown sugar to it

Okay, Paula, you can stir it up. Okay. And then you'll let that boil

Now, how long are we going to cook this for, Henrietta? This should cook at least 30 to 40 minutes

You start it out with a roaring boil. And then it cooks right down

But when it's finished, we should not have any liquid. It should be like a candy steak

A syrup-like. A syrup. All right. Now, this is what it looks like after we let it cook down

Okay, there we go. Now, you see that it's turning to store

Yeah, see how it's sticking it up? It's cooking right down. Now, at the end of this, you don't want to see any of that syrup in there

It has to cook all the way down. And optional, I do this

I take recipes, and I make them my own. I do what I want to do with them, you know

Which is great. One of the things I do sometimes is throw some pecans in there and let it cook down with it

and a cup of butterscotch morsels. And a 14-ounce can of sweetened condensed milk
