Look who's here with me today, y'all
0:02
Hey, y'all. My favorite oldest son, Jamie. Today, y'all, we're brunching it up with some of our family favorites
0:09
And we're starting with Jamie's huevos rancheros. This is incredible. Then I'm going to add the Paula touch to a breakfast standard
0:18
Don't skimp on the cream and the butter. My decadent papa bear oatmeal
0:25
And Jamie and I are smacking our lips over these delicious PB and J muffins
0:31
I wish I had smell-o-vision, scratch and sniff. And then finally... We ain't done yet
0:36
We're topping off this brunch with Brooke's light and lovely peach parfaits
0:45
We're doing breakfast today. We are? And that's one of the first things that I learned how to do when I was just starting off in the kitchen with Mom
0:53
And this is, it's a simpler recipe, and then it's one that takes a little bit of time
0:57
but it's worth the effort. We're doing Papa Bear Oatmeal, and we're doing huevos rancheros
1:01
So delicious. He has planned this whole menu, and he's gonna be the boss of me
1:07
I don't believe that for a second. I'm gonna try to direct her. It's like herding cats from this point forward
1:12
I got about five ounces of chorizo ham here, Mom. If you will brown this off
1:16
we're gonna want to cook this really good. We've taken the casein off of it because I really like for it to kind of..
1:20
We want it to be really chunky for this recipe. It almost looks like canned chili, y'all
1:25
It does. Uh-huh. It's got a big, robust smell to it, too
1:28
I wish I had smell-o-vision, scratch and sniff. And I'm going to put into our food processor, Mom
1:36
What we're going to do is I'm using some of my favorite things to cook down. This is about a quarter of a cup of onions, and I'm going to go in here, and I've got a jalapeno
1:45
So I'm going to take half the seeds out of this jalapeno. Mom doesn't like it really super hot
1:50
I can't stand it too, too hot, y'all. I'm just going to do a real big, quick chunk on this and throw it in
1:56
And I'm going to put a garlic clove in here, too, Mom. Okay. Look at this
2:01
I've got some cilantro that's going to go in here, Mom. Ooh, that cilantro is kicking, Jamie
2:11
You know, it's just not Tex-Mex or Mexican without cilantro. Okay, that looks good
2:18
and our sausages. I've gotten it all broken up, son. Okay, that looks good, Mom
2:24
You want to open this can. We're going to go with a can of peeled tomatoes. We're just going to get those hot
2:28
We're going to saute all these vegetables now together. I'm doing good here, aren't I, son
2:35
You're doing good, Mom. What was with this can opener, son? Would you finish that for me, please
2:42
It's hard, isn't it? Pretty tough. Yeah. All right, now what you want me to do with this
2:51
I don't want to squirt this all over my pretty purple blouse this morning. You want me to help you
2:55
No, I got it. We're just going to bring that up to heat a little bit, and I'm going to add these vegetables
2:59
We're going to cook them down together. Okay. Some of the best flavors in the world is a cooked-down tomato and onion
3:04
one of my favorites. Yeah. And the garlic and the jalapenos, the sausage smells awesome
3:13
Here, I'll do that for you. I've got the rubber one. Okay. As soon as you get done with that, if you'll step down
3:18
and you're going to put two cups of oatmeal into that boiling water. Oh, okay
3:23
Are we going to make Papa Bear oatmeal? Yes, ma'am. Y'all, when I was filming Paula's party in New York
3:32
in the morning before I started work, they would order Papa Bear oatmeal from one of these little shops
3:40
It is incredibly delicious. Now, my mother used to cook me oatmeal probably two to three mornings a week
3:48
But, you know, I just don't remember it ever tasting as good as Papa Bear oatmeal
3:53
And I said it's so simple. I love it. All right, so I'm going to put two cups, son, of oatmeal in the boiling water
4:00
We've got three and a half cups of boiling, salty water. Love, love, love oatmeal
4:06
My favorite cookie is an oatmeal cookie. And what makes oatmeal so good, y'all, is don't skimp on the cream and the butter
4:18
It's very, very simple. And brown sugar, too. And brown sugar. All right, so I need a spoon, son, for this
4:30
And we're using, like, a five-minute oatmeal. Okay, I'm going to put this sausage into our vegetables
4:37
Here we go. Okay, that's looking good. Okay, this is cooking down good
4:46
I'm going to put our tortillas in this pan. And I'm going to use, this has got good flavor in here
4:50
This is the, you know, the. Chorizo. Yeah, the essence from the sausage
4:55
Yeah. But I am going to add just a touch of oil. And I'm not going to cook these
5:00
The old-fashioned way, the traditional way to do tortillas is to not really get them crispy, just to kind of make them pliable
5:06
Not really, you know. Just so they're fold. Yes, ma'am. You really don want to cook them So I just going to wet the bottom of this pan a little bit with this oil Where are your tortillas Right behind you Mom Oh okay
5:19
It won't take but one second. We're just gonna knock the stiff off of them. Yeah
5:25
Mmm-mmm! Michael is gonna be so sad. He had to go to work this morning like 4 o'clock
5:34
He is gonna be so sad that he's missing this for breakfast
5:38
I'm sad that he's not here. I know. Oh, oops, oops. We got a lot going on, y'all
5:44
We got oatmeal. We got our tortillas going. This is going. When we come back, we're going to put it all together
5:49
Y'all stick around. Coming up, y'all, Jamie shows off his culinary skills
5:55
The famous Spanish circus, the flying cuervos. And the only thing missing from this Papa Bear oatmeal is..
6:06
What can we put in there? heavy cream. And later, a perfectly
6:13
peachy dessert. Yes. Looks delicious, son. Welcome back, y'all
6:26
I'm here in the kitchen with my favorite oldest son, Jamie. And we got some good
6:31
stuff going. We're having huevos rancheros. Huevos rancheros. And one of my brunch favorites, Papa Bear Oakmeal
6:40
And our oatmeal is coming along nicely. All right, now I'm going to dump our raisins in, y'all
6:46
And that's probably two-thirds of a cup. To me, the raisins just add a sweetness that you can't beat
6:55
Those hot oaks are going to just plump up those raisins. They're going to be so delicious in there
7:02
Okay, Mom. And this is ready, son. I'm going to cut that off. You can cut that off
7:05
Perfect timing. Okay, Mama, we've got all this going now. I'm going to cook the eggs
7:10
Why don't you go down and get our avocado ready? Okay. I'm going to add a little bit of oil
7:14
I'm going to stay in the same pan, y'all, and I'm going to crack four eggs. We're just going to use that avocado for a garnish, Mom, so... Okay
7:24
Unless you want to put some on your ranch-style eggs. Well, you know, I adore avocados
7:30
Took me years. To me, that's kind of an acquired taste, too. I didn't like them
7:35
Then I found out they were fattening. And then I fell in love with them because I found out they were fattening, I reckon
7:41
Well, they're the good fat. Yeah, it's the good fat. I've got a 16-ounce can of refried beans here, Mom, that I'm going to fight your can over and see if I can't get them down in here
7:53
Love, love, love refried beans. They scorch so quick, so I'm really going to want to see these while my eggs are cooking
7:59
Yeah. I just want to heat them up a little bit. That's one of those things that heats up in the microwave good because you don't have to worry about it scorching
8:06
Hold on to your hat. I'm going to stand back. Okay, drum roll
8:15
Here goes. The big finish. The famous Spanish circus, the flying cuervos
8:24
Come on. Only half of them knew what they were doing. That's as good as you're going to get today, Mom
8:28
I got half of them. Well, son, those eggs look good. You could have had a little better luck if you had had more grease in your pan
8:36
You know, so they could have flipped. Oh, yeah. But that's all right
8:41
You know, you arrived where we want to be. That looks so delicious, son
8:55
It's not the prettiest thing in the world, but look at all these flavors that we've got going on
9:00
Yeah. It looks grand to me. Put a little avocado on there
9:10
This looks delicious, son. Maybe a little oatmeal? Oh, okay. Wait, I get to do that
9:16
This is my part. Okay. Because I have to do this very special for you
9:21
And I'm going to fill that cup about three quarters full. This oatmeal is nice and thick
9:29
Mommy, you want some quesad? Yes, please. The first rule is you can't have oatmeal, y'all, without butter
9:37
I'm going to put a very generous piece of butter on. That butter is going to give it the flavor, the absolute incredible flavor
9:47
And look, I'm just going to do this with my hands. I'm going to just be very, very generous with my brown sugar
9:54
You're so giving. Thank you, son. I've gotten where I'm the queen of Papa Bear oatmeal
10:03
Now I need my banana. I love bananas in my oatmeal. So good for you
10:09
So I'm going to slice about a half a banana, and then we're not done yet, y'all
10:14
We've got one more step. It's too dry. Yes, it's too dry
10:18
What can we put in there? Water. No. Heavy cream Sock it to me Okay Now remember our oatmeal was very thick So we need lots of cream
10:35
Look at this. What? Mm, mm, mm. It's my favorite. Wow. That's really
10:47
That is so good. In that delicious sun. Look at the butter melting all of those bananas
10:54
Great, dang. Here, let's try some eggs. You want to? Mm-mm. Now, Bobby and I are both kind of more... Look
11:03
Savory than sweet. God, I wish y'all were here. So I'm looking forward to meat and eggs and avocado and cheese
11:10
Mm. God, that's a pretty big bite for this early in the morning. Should I try to check that out
11:14
Listen, when you were a little boy, you used to scare me to death because you would take the most hugest bites
11:24
Oh! Delicious, huh? Jamie. This is incredible. It's a good breakfast. Incredible
11:33
Two totally different flavors. The sweet to the savory. And you know what
11:39
The avocado on top just kicks it, doesn't it? This is so delicious
11:47
Thank you, son. You're welcome. I like this oatmeal pretty good, too. I do, too
11:51
Mmm. We're going to finish breakfast. Y'all stick around. Coming up... We're doing one of my favorite things
11:59
A muffin that promises to please. And later... This is light and lovely. There's nothing to it
12:05
Light and lovely. Like me. Hey, y'all, welcome back. Mom and I are in the kitchen today
12:15
and we're doing one of my favorite things, peanut butter and jelly. And we're doing them in a muffin
12:20
My favorite part is the surprise jelly center. These are my favorite. And listen, here's the great part
12:24
They're all done in a food processor, y'all. Yep. Which is great. A one bowl mess
12:29
So I'm going to measure out two cups of all-purpose flour. Okay, you're putting in a quarter cup of brown sugar
12:36
These are not all that sweet, are they? Nope. Not overpoweringly sweet
12:41
Well, we've got the jelly and the peanut butter, so there's some sugar in the peanuts. All right
12:45
So there's my two cups of all-purpose flour, y'all. Now I'm going to add two tablespoons of baking powder
12:54
So they're going to pump those puppies up. I think we just need a half a teaspoon of salt, son
13:02
Half a teaspoon. Okay. So there you go. Now while you're doing that, I've got some wonderful honey roasted peanuts over here
13:12
I'm going to go ahead and start trying to chop on these. I've pulsed together our dry ingredients, and I'm going to put in a half a cup of peanut butter
13:21
And now this is going to kind of, once we beat all this together, it's going to be kind of crumbly, you know
13:26
And you're using a smooth peanut butter, right? I am. You're going to put nuts on the top
13:31
You can use crunchy or smooth, you know, whatever you've got. But I just like creamy peanut butter so that I have the option of adding the nuttiness to it
13:43
and I'm going to do anywhere between a third and a half a cup
13:48
It depends on how peanutty you like it. Now I've pulsed in our peanut butter
13:59
This is kind of a crumbly dry, so I need to get our wet stuff in here. I need one slightly beaten egg. Okay
14:07
Well, I'm still chasing these peanuts on this board down here. Next I'm going to put in one cup of whole milk
14:22
We've got three tablespoons of melted butter. Oh, yeah. Can't forget the butter, because that's the only shortening in there, besides the oil from the peanut butter
14:33
We do have that. All right, son, I think I've about got these done
14:39
Now, while you're beating that up, I'm just going to spray our pan. Okay
14:43
Because we want our muffins to come out very pretty and whole
14:48
Mmm, smells so good. What, this spray? No, the peanut butter. Oh
14:59
All right. Now we're going to go scoop. And then Mama's going to put the surprise in
15:05
Yep, there's a little surprise in the center for everybody with these muffins
15:11
Now I'm going to put about a teaspoon of raspberry jelly. You can use any kind of jelly you like
15:20
If you like grape or you like strawberry, you know, you want to pick your family's favorite
15:26
And of course you can always mix it. And then Jamie's going to come back and cover it, not quite with a full scoop
15:35
so that they're like three quarters filled. Do you like raspberries Love raspberries Not quite so much son Yes ma Okay I going to take a little of that out Raspberries are Jack favorite He puts them on his fingers
15:51
And see, I thought blueberries, he calls them BBs. He'll come over and say, Ginny, can I
15:57
have some BBs? But he can't put BBs on the end of his fingers. Yeah
16:01
He likes to wear them. So what a nice little surprise. That peanut butter smells
16:06
fabulous, son. The profits are in the corners. That's exactly right. Those look perfectly delicious, son
16:17
Cover them with our nuts. So the peanuts are packed with flavor, too
16:23
And we've got all these ready. We're going to go into the oven. The universal cooking time for all things, 350 degrees for 15 or 20 minutes
16:30
coming up we've got a beautifully delicious ending cheers cheers
16:40
i can't believe this last dish y'all so easy this is light and lovely there's nothing to it
16:53
light and lovely just like my daughter-in-law y'all exactly you can see that this is going to be a
16:58
a pretty simple put-together recipe, but the flavors are big, and we love it. The first thing I want you to do is take some, these are pecan sandies
17:05
This is like a shortbread cookie. Put them in here, and let's mash them up. And store-bought, right? Store-bought
17:09
Oh, yes, ma'am. My mother, y'all, used to buy pecan sandies for Bubba and me
17:14
That was our favorite cookie. And, you know, all these years later, I still love those store-bought pecan sandy cookies
17:22
And I've got some fresh peaches here. I'm just going to cube these up. These don't have the really big fuzz on them, so I'm not even going to peel them
17:30
All right, I'm going to take my rolling pin. Look, how about this? Let's roll it
17:36
How about that? I was doing much better with the hitting. Yeah, but you stand the chance of breaking this bag, and we don't want pecan sandies all over the place
17:45
No, then I'd have to eat them, y'all. But I really like to see the big chunks of cookies in here
17:52
Because what we're going to do with this is we're going to layer it up in a glass parfait, which I love
17:57
Perfect. We're going to go with cookies on the bottom. Oh, I like it
18:01
I like it. I don't have any measurements in this recipe and how many layers that you want to do
18:07
So I'm going to do a healthy cookie base. Okay. And we're going to go with a few peaches right here
18:13
Okay. And on top of these peaches, a little bit. This reminds me a little bit of the night that you proposed to Brooke
18:24
You hid her ring in a parfait dessert, didn't you? I garnished the top with the strawberry that had her ring in it
18:31
So we love parfaits at my house. Isn't that romantical? Isn't that something
18:37
A little bit of brown sugar here, y'all. Every man in this country would hate you. Want to do a little bit of cinnamon
18:43
Not a whole, whole bunch. Uh-huh. And this is what makes it light
18:47
We're using a... This is just a store-bought... This is a light whipped topping
18:52
So on top of this, I'm going to keep building. Oh, gosh. That looks so good, son
18:58
I'm going to do another layer of cookies right on top of here. Now I'm going to try to get one more..
19:04
One more little layer of brown sugar. Okay. Just to sweeten it up just a wee little bit
19:11
Another little drop of cinnamon? A little bit more cinnamon here on top
19:17
Just a little bit. And I'm going to do one more of these
19:24
Yes! Looks delicious, son. Stick a peach in here. Okay. A little fresh mint
19:34
Maybe a little bit more cookie crumbs right on top. Yes. That is beautiful
19:40
Pinch of brown sugar. Little pinch of cinnamon right on the top
19:44
I love it. Isn't that pretty? And over here, I've made a little compound butter, y'all, for our muffins
19:51
Let's sit down and taste the corn. How nice. And look in there at our surprise
19:57
Isn't that grand? Cheers. Cheers. Mmm. Mmm. That butter and jelly
20:08
Great time of day. With the butter on it. Mmm. That's good
20:13
So good, son. Mm-hmm. Mm-hmm. Yum. Yum. Yum. Mm. Oh, my God
20:21
It's good, right? Brooke. Mm-hmm. And life, too. The peaches and those sandies
20:29
Mm-hmm. Mm-hmm. Mm-hmm. Mm-hmm. Mm-hmm. I hope that y'all out there watching
20:37
or maybe take the opportunity to get in the kitchen with your family
20:42
and spend a little quality, fun time and enjoy these wonderful recipes
20:47
They're good and simple and delicious. Thank you, son. Thanks, Mom. I love you
20:56
Best dishes and love, y'all
