0:01
I'm just busy as a cat covering it up today
0:04
because I'm getting ready for house guests,
0:06
and one of the things that I want
0:07
to send home with them is some zucchini bread.
0:09
So, why don't we get to cooking?
0:12
All we have to do is just stir in our sugar to our flour
0:32
Gonna give that a quick stir.
0:35
Now I've got four eggs here
0:37
that I'm gonna just beat them with a fork
0:40
where they're kind of
0:41
turn a nice soft light yellow.
0:45
Now we're just gonna add some water along with our oil.
0:52
Y'all know what I'm saying when I say awl, don't you?
0:55
I have a lot of people kidding me about
1:02
Now we're gonna take a zucchini.
1:04
I have washed him, but we're just gonna grate him.
1:07
We're gonna need about two cups of zucchini.
1:11
You know, I've always heard
1:12
that house guests and fish have a lot in common.
1:16
After about three days
1:18
they both start to stinkin'.
1:22
try not to let my guests start stinking,
1:25
Now I'm gonna take a lemon
1:27
and squeeze a little juice over that zucchini, you know,
1:31
and that prevents things from turning dark on you like that.
1:39
we're just gonna pile all that into our other ingredients.
1:44
Isn't that zucchini pretty, pretty, pretty?
1:47
And I just love it with the peelings on.
1:49
So we're just gonna mix this up
1:51
and then I'll add the nuts last.
1:57
All right, now I'm gonna fold in our nuts,
2:00
and I'm using walnuts.
2:01
You can use pecans or a macadamia would be real good,
2:06
but you can use just whatever your favorite nut is.
2:10
And you can see how easy this batter was
2:15
All right, now I'm gonna lightly spray our pan
2:19
with a non-stick spray.
2:21
These make the neatest breads
2:23
for giveaways at Christmas time.
2:25
I love making homemade goodie baskets for friends.
2:31
Now I've chosen today to make mine in the little mini pans
2:35
because they're to me just the right size.
2:38
If you make a whole loaf of bread,
2:40
there's a good chance it'll go stale before you eat it all.
2:43
And I just like being able to pull out little loaves,
2:46
and it's just enough for two people,
2:48
for one meal, or one snack.
2:51
Depending on what time of year it is,
2:53
like around Thanksgiving and in the fall,
2:56
I love making pumpkin bread.
2:59
You know, it just really depends on what the season is
3:02
as to what fruit or vegetable
3:04
you can put in this bread.
3:07
Okay, these are ready.
3:09
Like I said, I'm gonna throw these
3:10
into the oven, 350 preheated oven,
3:14
and I'm gonna bake 'em for about 45 minutes.
3:18
Mm, that's good batter.
3:21
Tastes like banana nut bread.
3:27
Now, as I said, I've got some that
3:30
I had put in the oven earlier
3:32
and I put 'em on the counter to cool.
3:34
So let's see what we've got here.
3:37
These are nice and cool.
3:46
Anything worth having is worth a little work.
3:52
Look how pretty these are.
3:54
I'm gonna leave those sitting there
3:56
And I think I'm gonna just have to try one of these cakes,
4:02
'cause you know, I made plenty.
4:06
So let's see what we've got.
4:08
Now I've mixed up an herb-type cream cheese.
4:18
Mm, now you can use softened butter,
4:21
but you can bet one thing.
4:22
I'll have plenty different options
4:35
This is out of this world.
4:36
You're gonna love it.
4:38
I've got a friend, Wayne, who gave me a recipe
4:41
for some wonderful crab soup.
4:44
You're gonna love it.
4:45
It's got a lot of ingredients,
4:48
but it's got a heck of a lot of flavor, too.
4:51
So I'll look forward to seeing y'all back in the kitchen.
4:59
