We've got a Tennessee Black Walnut Cake
0:04
with a caramel icing.
0:06
We're gonna start with,
0:08
a half a cup of shortening,
0:09
one and a half cups of granulated sugar.
0:13
And we just gonna beat that up until it's creamy.
0:17
We're gonna turn that up a little bit
0:19
so we can get it to go and.
0:21
All right, now we're gonna add one egg at the time.
0:27
and here goes the second one.
0:29
We're gonna cream those up.
0:31
And I'm gonna add a fourth of a cup of buttermilk
0:35
and a teaspoon of vanilla flavoring.
0:41
All right, and to this I'm gonna add two ripe bananas.
0:46
Now, I like to kinda mash my bananas up in their skin.
0:51
And if you find that you've got bananas
0:53
that's getting dark on you,
0:55
all you have to do is throw them into your freezer.
0:59
And on the days that you wanna make banana nut bread,
1:03
or a Tennessee Black Walnut Cake,
1:06
you can pull them out
1:07
because the darkness won't hurt it at all.
1:10
And we're just gonna let our beaters mash those bananas up.
1:14
All right, I've got two cups of all purpose flour,
1:18
I've added a half a teaspoon of baking soda.
1:21
Now I'm just gonna stir that in together
1:24
and we're just gonna put our flour into our mixture.
1:29
We're just gonna beat that up.
1:33
Now, before we get started on the nuts,
1:36
I think our cake is beat enough
1:38
so let me come over here and turn this off.
1:43
Black walnuts have a very distinct, strong, sharp taste
1:48
that your English walnut doesn't.
1:50
Don't even bother making this cake
1:52
if you don't have any on hand,
1:54
because it will make all the difference in the world
1:56
in the flavor of your cake.
1:58
So we're gonna take our batter
2:04
It's such a different odor,
2:05
I wish I could describe it to you.
2:08
But the flavor of this cake is gonna be very memorable
2:12
and distinctive once you taste it.
2:15
All right, so we just folded those in
2:20
And we're gonna spray our pans,
2:23
really, really good because we don't want our cake to stick.
2:28
Now, if you're frightened of that,
2:29
you can always dust your pans
2:34
All right, now we're gonna divide up our batter
2:36
and put it into our cake pans,
2:38
and put these in the oven.
2:40
And while I'm doing that,
2:42
I think we've got some more footage from cooking school.
2:45
So I hope y'all enjoy them.
2:47
And when you come back,
2:48
we're gonna be making caramel icing,
2:51
and we're gonna frost these sweet cakes up,
2:53
and we're gonna taste a Tennessee Black Walnut Cake.
3:03
All right, I have to tell y'all.
3:06
one of my favorite cakes in the whole world
3:10
Well, years and years ago,
3:12
I discovered this recipe
3:14
and caramel frosting now is just a snap.
3:17
Now, all we're gonna do is,
3:18
we're gonna melt a stick of butter and light brown sugar.
3:22
So we're gonna add a cup of sugar
3:25
I'm gonna add a third of a cup of heavy cream,
3:28
and we're just gonna let this come to a boil
3:31
'cause we wanna dissolve our sugar
3:33
we want this to be nice and smooth,
3:35
and I'm gonna just be on the safe side.
3:39
And I'm gonna bring out a little, extra heavy cream,
3:43
and I'm gonna have it to the side.
3:45
So what I'm gonna do now
3:47
is I'm gonna take one box of confectioners' sugar,
3:54
all right, we've removed it from the heat.
3:56
And now all we're gonna do is take our mixer
3:59
and just beat it until it's smooth.
4:04
Can you believe what an easy recipe this is.
4:08
If you try it, you're gonna love it.
4:11
Now I'm gonna add a tablespoon of vanilla.
4:15
Give it one more quick beat.
4:24
All right, it looks out of this world delicious.
4:28
I'm just gonna lay a few strips of wax paper
4:30
around my cake plate.
4:33
I'm gonna stick a little icing right there,
4:36
so my cake will stick to the plate.
4:39
And then when I get through ice and this,
4:41
I'll just pull these out and my plate will be clean.
4:45
Right, so we're gonna stick that in this very center.
4:49
And you'll find that this frosting, as it cools off,
4:53
it'll get real thick on you quick.
4:56
all you have to do is stir in a little extra cream.
4:59
And I like a thick layer of my caramel icing
5:03
in between my cake layers.
5:07
All right, I'm gonna stick our other cake layer up there.
5:11
Now, I'm gonna take some skewers, gonna break it off.
5:14
Now these work better than a toothpick
5:17
because you're so much more sturdy.
5:21
Okay, we are ready to finish frosting our cake.
5:25
Those skewers are gonna keep our cake from sliding on us.
5:29
Ooh, I can't hardly wait to cut into this cake.
5:33
Now, when I get all the frosting on this,
5:36
you can see how this gets tight quickly.
5:39
So I'm just gonna stick my knife down in my cream
5:43
and smooth it out just like that.
5:46
Now, we wanna very quickly
5:49
get our nuts on here while our frosting is still damp.
5:53
So we're just gonna take our nuts
5:56
and we're just gonna go around and press them
5:58
into the side of our cake,
6:04
All right, now, all I have to do
6:07
is gently pull out the wax paper,
6:10
dump back the rest of the walnuts into the bowl
6:15
because I can use them another time.
6:17
Now look how easy, and simple, and pretty that cake is.
6:22
I think all it needs is just a few strawberries.
6:26
Say, right in the center.
6:30
Michael's gonna be a happy boy.
