Today's show is all about southern tradition.
0:06
And one of the most wonderful traditions that we have
0:10
here in the south is rockin' in a comfortable chair
0:13
on the front porch, but I can't do that all day
0:16
because I've got to get into the kitchen
0:18
because I want to show y'all my recipe for making
0:21
a spicy black eyes pea.
0:23
So I hope you'll stay tuned
0:25
because today is all about southern roots
0:29
and southern traditions, oh and we like our dogs too.
0:35
I've got black eyed peas to cook.
0:37
- Okay well go ahead!
0:38
- Come on down here and help me.
0:39
- Okay, that sounds great.
0:40
- I'm gonna be making a spicy black eyed pea today!
0:43
Now I have taken four slices of bacon,
0:45
chopped 'em up, browned 'em off
0:48
because I'm really gonna just garnish our black eyes peas
0:51
with this bacon and I'm gonna add one diced onion
0:55
you know we have to have onion in everything,
0:57
don't we? - Absolutely.
0:59
- So I'm just gonna let those saute a couple of minutes,
1:02
Chef, until they're kind of transparent.
1:06
- Now I've got one pound of dried black eyed peas,
1:11
I'm gonna just throw 'em in the pot just as they are.
1:14
- Okay. - But if you're short on time,
1:17
use the quick cooking method, soak 'em over night in water,
1:20
drain 'em, and just go about your recipe just like you would
1:24
All right Clayton, I'm just gonna throw those dried
1:27
black eyed peas over in there,
1:29
just gonna kinda toss 'em around in that grease.
1:33
And now I'm gonna add one can of diced tomatoes
1:37
with green chilies. - Oh my gosh,
1:39
now that is what makes it, that and the chilies
1:41
is gonna make it spicy. - Uh-huh.
1:43
And then I'm gonna add a teaspoon of chili powder.
1:46
- Okay. - So now we're gonna add
1:49
our liquid I'm gonna put about three cups of water
1:55
and let's add a little pepper.
1:57
- That looks good already. - Just to give it a little
1:58
bit more spice and then I'm gonna add some salt.
2:07
There we go, now I'm just gonna cover this
2:10
and let those simmer for about 45 minutes to an hour
2:15
and I'm gonna keep checkin' this pot
2:17
'cause there again, they're dried and they gonna be doin'
2:22
a lot of drinkin'. - Yes.
2:23
- Down there in that pot.
2:28
I hope that you had a good time with Chef Clayton
2:30
and me today because we've certainly had a ball
2:34
talkin' about our southern roots
2:36
and our traditions and cookin' up all these dishes,
2:40
but you know what? - What?
2:42
- We never tasted those black eyed peas.
2:45
- You know, and that's as far as I'm concerned,
2:52
- Oh that's good. - They're so good!
2:57
I'm back at home in Birmingham.
3:00
This is so good, excellent.
