A lemon pineapple sherbet.
0:05
Now I'm starting with a 14 ounce can
0:08
of sweetened condensed milk.
0:11
I'm adding two cups of sugar
0:15
and a 20 ounce can of crushed pineapple.
0:23
And we're just gonna fold that pineapple
0:25
into our condensed milk.
0:27
All right, now I'm gonna add a cup of lemon juice.
0:31
And now I'm gonna add two quarts of milk.
0:35
This is going to be delicious, okay.
0:38
So we've got everything mixed up.
0:40
Now I'm gonna show you how to load your churn
0:45
into your ice cream maker.
0:47
I showed y'all the hand cranked one earlier.
0:50
Thank goodness for Benjamin Franklin and electricity.
0:54
Now I've taken out my churn
0:57
and I'm gonna put my ice cream into this.
1:00
Your ice cream as it hardens,
1:02
it's actually gonna expand.
1:06
All right, so we're gonna put that
1:08
into our ice cream bucket.
1:11
And then we're gonna put our top on it.
1:13
We're fixing to start layering our ice
1:16
along with our ice cream salt.
1:18
Ad you can't use regular salt for this,
1:20
you have to use ice cream salt.
1:22
Now I'm gonna take some ice
1:25
and I'm gonna spread it around.
1:28
And we're actually gonna use three parts ice
1:32
So it takes a good bit.
1:36
And then I'm gonna come in here.
1:38
Just put a layer of salt,
1:42
completely on top of that layer of ice.
1:48
All right, and we're gonna keep doing that
1:50
until we've got it filled with our ice and our salt.
1:59
All right, now, we've got this filled up with our ice
2:03
and the last thing going on
2:04
will be another nice layer of salt.
2:09
Now we've got our ice and our salt packed in there good.
2:13
Now all we're gonna do is place our motor.
2:16
Now, when I make my ice cream,
2:18
when I churn homemade ice cream,
2:20
I let it churn in the sink because as my ice melts,
2:24
you wanna pour your water off.
2:37
(ice cream maker buzzing)
2:40
It's gonna need to churn for probably about 30 minutes
2:43
and when your ice cream or your sherbet is almost ready,
2:47
you actually hear your motor begin to delay.
2:50
And if it does that go directly and unplug it,
2:52
cause you don't want your motor to burn up on you.
2:57
- All right, I wanna show you
2:58
how my dear sweet, beautiful mother,
3:01
packed our ice cream to ripen when I was a little girl.
3:06
Oh, you see that hole right there
3:11
where that water's coming out.
3:12
That is why I like to make my ice cream in the sink.
3:17
All right, now we're gonna take our motor off,
3:20
gonna just slip it off.
3:28
And make sure I get all that salt away from there
3:31
'cause I don't want that falling in our sherbet.
3:34
I told you how it was gonna expand and look at there.
3:40
Oh, it looks so delicious.
3:45
Now the first thing we wanna do is remove our dasher.
3:48
And my mother would always take out the dasher
3:56
and my little brother, Bubba and I'd fight over it
3:58
because we just loved licking those dashers.
4:03
All right, so we're gonna get our ice cream back in there
4:08
and we're gonna put back on our top.
4:11
And you can see that the Dasher
4:14
is what filled up our hole.
4:16
So now we're gonna have to go to a little piece
4:21
that they include in your ice cream maker.
4:24
When I was a girl, it was actually a cork.
4:26
And I see now it's some type of rubber plug,
4:30
so we're gonna push that down in there.
4:32
All right, now we're gonna pack it down,
4:45
We wanna bring it almost all the way back up to the top.
4:51
And we're gonna cover it with that other layer of rock salt.
5:01
Maybe one more scoop.
5:07
And now I wanna share with y'all
5:09
how my mama protected and covered our ice cream.
5:13
She always covered it with old newspapers
5:18
you mash that down in there.
5:21
And then she would cover it with towels.
5:24
And now we're gonna just shove this aside
5:26
for about an hour and let it ripen.
5:29
All right, now what I've been waiting for,
5:33
it's time to taste the sherbet.
5:36
Well if not taste it at least just look at it
5:39
and let's see if it's ripened and firmed up.
5:46
Oh, oh my gracious, this looks so good.
5:57
Oh, the dogs know I've got the ice cream ready.
6:01
It's like they have a sixth sense.
6:09
All right, I'm just gonna put just a little zest on this.
6:13
What I really wanna put on this is my lips.
6:16
Oh, doesn't that look yummy.
6:18
And do you just absolutely love
6:20
this depression glass ice cream cup and saucer
6:23
and spoon that I bought.
6:29
Hmm, this is magnificent.
6:36
If you don't have an ice cream churn get you one.
6:41
The flavor is so good and so homemade.
6:48
Hmm, I wish you were here to taste it with me
