We had so much fun in Saint Lucia, y'all.
0:03
- Today we are incorporating a lot of the Caribbean flavors
0:06
that we tasted when we were down there.
0:07
We've got some dry jerk seasoning here
0:10
and we have got some wet jerk here.
0:12
I am going to get started on our Jerk Wontons with Salsa.
0:15
- Let me get these covered.
0:16
- Let's see if I can cut the whole stack at one time.
0:18
And these are just a store-bought wonton.
0:22
These little wontons feel so good.
0:25
- Okay, now what we are going to put on this
0:26
is the same exact seasoning that we put on our shrimp.
0:29
Except this doesn't have any of the liquids in it.
0:31
This is just a dry mix.
0:34
This doesn't have any of the oils
0:35
or any of those things and I'm just going
0:36
to dust these with, of course, some butter.
0:39
I want these to crisp up really nice and brown
0:42
and I also want this dry rub to stick to them.
0:45
So we are going to go with our favorite old staple.
0:49
- Brush them with butter.
0:51
So these are kind of like homemade chips
0:53
with some extra zing.
0:54
- [Paula] Yes, these are going to be delicious.
0:57
So what was your most memorable?
0:59
I know what was my most memorable.
1:01
- [Jamie] What was yours?
1:02
- [Paula] Doing that-
1:04
- [Paula] -the zipline, yes.
1:06
- People talk to us about that all the time.
1:08
- I said these boys are trying to hurt me.
1:12
- Mom got stuck in the middle.
1:14
- I went, I slid back into the middle
1:17
and one of the professionals had to come out and get me.
1:20
But you know, it was so much fun.
1:22
- [Jamie] Mom, these are going to go in the oven now
1:24
at 350 for just about four to six minutes.
1:26
Y'all be careful with these,
1:27
cause you don't want to burn them.
1:27
- Well, I'm going to start on our salsa,
1:33
and I've got a red bell pepper.
1:36
I've got a yellow bell pepper.
1:38
- Now Mom, I'm going to peel our cucumber.
1:41
And I'm going to chop it up pretty fine for our salsa.
1:44
- [Paula] We've got everything we need here, Jamie,
1:46
to make a wonderful salsa.
1:48
- Pineapple salsa is one of my favorites.
1:49
- [Paula] It is just going to make those Saint Lucia
1:52
memories come back to us through our taste buds.
2:04
- Now I'm going to do this pineapple, okay.
2:05
We are going straight off the core with this.
2:08
- [Paula] All right, now I'm mincing my red bell pepper
2:15
- I'm just going to I'm going to take it right off the core.
2:18
- [Paula] That pineapple is gorgeous.
2:21
I'm using this whole pineapple, Mom,
2:22
and it's yielding about three cups.
2:24
- Here's the red bell pepper.
2:31
All right, now I'm dicing up my yellow bell pepper
2:35
but I don't like too big of chunks of bell pepper.
2:40
So there's the yellow, and now one bunch of cilantro.
2:48
- While you're doing that Mom,
2:49
I'm going to put our liquid in here, okay?
2:51
- Now, what we are going to put in here
2:52
is three tablespoons of apple juice.
2:54
- Whew! Gosh it's strong smelling.
2:57
Gosh, that is so strong smelling.
3:00
Got three tablespoons of the apple juice concentrate.
3:02
- Uh-huh and there's your jalapenos, son.
3:06
- Oh yeah, can't forget the jalapenos.
3:08
That's two, and three.
3:12
I'm going to put one tablespoon of olive oil.
3:14
- Uh-huh, that looks so good, Jamie.
3:17
The pineapple looks incredible in there.
3:24
- And I've got a couple of jalapenos here.
3:26
I've taken the seeds out because we don't want it so hot
3:28
that we can't eat it.
3:31
- Okay Mom, I've put in the cilantro.
3:36
- [Paula] Well the cilantro gives it such flavor.
3:41
You want me to get our chips out of the oven?
3:43
- You want to check them?
3:44
I know they're ready.
3:45
I'm going to put a little salt on this, Mom.
3:51
Oh, these look yummy.
3:55
- Look at those, son.
4:02
I think that's going to be good.
4:05
This is a really nice alternative to a chip.
4:07
Look how light that is.
4:08
- Uh-huh, that is so thin and crisp, Jamie.
4:11
- Did I get a big enough bite?
4:12
- I don't know. I think I'm going to.
4:22
- [Jamie] The seasoning on these chips.
4:24
That's what makes it good
4:24
You got the spicy, the pineapple.
4:31
Hey, y'all, it's Paula Deen.
