No retro meal would be complete without a potato.
0:08
So, we're fixing to make an old timey dish cottage potatoes
0:12
but I'm gonna show you a new twist to 'em.
0:14
Now we're gonna use, three large bacon potatoes.
0:18
These are more like a medium.
0:20
So I'm probably going to use about five of these.
0:23
So all we gonna do is slice them
0:29
and you don't have to be perfect
0:31
because we're actually gonna wind up mashing these up,
0:34
but you want them close in size.
0:37
So they'll all be done about the same time.
0:40
All right now what we gonna do is cover those with water
0:44
and I'm going to throw a little salt in the pot
0:46
with them and just boil those until they're tender.
0:51
Those look just delicious.
0:52
We're going to add a little salt to them
0:55
and I'm using a nice kosher on these
0:57
and a little black pepper.
0:59
All right. Now the recipe calls for
1:01
two tablespoons of butter.
1:02
That looks like two tablespoons to me.
1:05
Don't it to you? (laughs).
1:07
You know, I never was real good at measuring.
1:10
All right. So we're going to take our masher
1:12
and you can see I'm using an old timey masher
1:15
instead of an electric mixer
1:17
'cause I don't want these real creamy.
1:18
I still kind of want them in chunks.
1:20
I just love a potato.
1:21
I know y'all have heard me say it before.
1:23
If you were gon send me off
1:24
to an Island and say, Polly, you can only have one food.
1:27
I would choose the tater.
1:29
And that's about how I like 'em.
1:34
Now we gonna take just ordinary Cottage Cheese
1:40
and stir into those, those look good.
1:45
I've got some onions sitting around here
1:49
to throw in that lemme find my onion here it is.
1:53
We gonna, just toss in some onion
1:59
and those will still be kinda crunchy and good.
2:03
We just going to pile them into the casserole dish.
2:05
I'm going to spray it so they won't
2:07
stick to too badly on us.
2:09
Now, if you wanted to, you could actually even jazz this
2:13
up with some sour cream, with a little mayonnaise or milk
2:17
it'd be delicious on it,
2:19
but I'm going to do this just like the recipe calls for
2:22
Kinda mash those down in there.
2:24
And if you liked it hot, you can even add some jalapeno.
2:30
We're just going to sprinkle this with paprika
2:32
and the paprika. will give it a nice brown look.
2:37
And why don't we just for good measure (laughs)
2:41
take the rest of our butter.
2:42
That two tablespoons doesn't need to
2:44
be sitting there by itself.
2:46
So we'll just, top the top of this with
2:48
a little bit more butter.
2:50
And we gonna to stick this in a 350 degree preheated oven
2:54
and we're gonna bake it for about 30 or 35 minutes.
3:06
And I have one over here that should be ready.
3:13
And it is, look how good it looks.
3:40
