0:01
because I wanna show you an old Southern favorite.
0:04
We can't have a tea, or a shower, or a wedding
0:08
without serving chicken salad.
0:11
And I like to keep my chicken salad very, very simple.
0:15
Now, you can use any kinda chicken you want.
0:18
You can use like a whole chicken,
0:20
you can use a dark and a white.
0:21
You can go to the grocery store
0:23
and get a rotisserie chicken.
0:25
Some of the best chicken salad I've ever eaten is made
0:29
You know, pullin' off the crust and the skin.
0:32
This particular chicken has just been poached
0:36
in a little bit of water.
0:39
So, in the bowl that goes,
0:41
and I'm probably using it three pounds.
0:43
And a little bit of celery.
0:45
I love celery in my chicken salad.
0:48
I love the crunchy that it gives it.
0:51
If you don't like that crunchiness
0:53
you can substitute like a celery seed, and that's nice too.
0:58
This is a very, very simple uncomplicated
1:03
but good tasting chicken salad.
1:08
Now, I've got a lemon here.
1:12
I'm gonna just squeeze a little lemon juice.
1:16
I'll probably use a tablespoon or two.
1:17
About a half of a lemon,
1:20
and that'll give it a nice little tart taste.
1:24
So, in that goes, and I'm gonna use about
1:27
a third of a cup of sliced toasted almonds.
1:32
And then I'm gonna add about a half a cup of mayonnaise,
1:36
and you can do it to taste.
1:39
Some people like theirs more on the dry side.
1:42
I'm kind of a wet girl.
1:44
You know how I love my mayonnaise.
1:47
This is such a simple, simple food,
1:50
but the way we served it on the silver platters,
1:54
it really brought the chicken salad
1:57
up in a very special way.
2:02
Gonna add a little bit more.
2:04
Now, I'm gonna grab my salt and pepper.
2:09
Just a little bit of salt.
2:10
It's not gonna need much because I had salted the water
2:14
that I poached my chicken in.
2:18
Little bit of pepper.
2:19
Now, for our bread, for these sandwiches,
2:22
we did not waste our time makin' homemade rolls.
2:26
I just contacted the bakery department,
2:28
my favorite supermarket here on the island,
2:31
and I had them just make me up some wonderful
2:35
little dinner rolls to put my chicken salad on.
2:40
It made the party go a lot easier.
2:43
So, all we did was just pile that chicken salad
2:47
up on that roll, just like that.
2:55
It's finger lickin' good.
2:58
So simple and delicious.
3:01
And we dressed it up with our sandwich picks.
3:06
And we have some beautiful little bamboo picks,
3:09
and then we've got some of the paper frill picks.
3:16
Now, chicken salad's a very humble food.
3:19
But by the time we put it on that beautiful silver tray
3:23
they looked like they were as yummy as any filet mignon.
3:27
In fact, come on over here and I wanna show you.
3:30
This is just what the trays looked like.
3:33
And we just used a leaf from my cast iron plant
3:38
out in the yard, and a little bundle of fresh flowers.
3:41
And how beautiful and elegant that is,
3:45
but very, very simple.
3:48
And those yummy, yummy Southern flavors, mmm,
