I'm fixing to show y'all how I make a very simple
0:07
down-home dish that Southerners just love.
0:11
And I'm amazed that even though it's a very simple dish,
0:14
people may not quite understand how to cook it.
0:17
So we're fixing to talk about it.
0:20
People in South Carolina, call this chicken bog.
0:23
People in Georgia, call it chicken and rice.
0:28
I love the name chicken bog though.
0:30
Now I've gotten one quart of water boiling,
0:34
I'm going to add another quart
0:37
giving us eight cups of water.
0:40
Now I'm adding house seasoning to that water,
0:48
and a few Bay leaves.
0:56
Now the recipe calls for red pepper, but I think
1:00
I think I'm going to put some Louisiana hot sauce in it.
1:04
Now I'm going to take one three pound chicken fryer
1:08
and put over in here.
1:10
I have cut this into quarters
1:13
and I'm going to add some smoked kielbasa.
1:16
And we're going to let that come to a boil
1:18
and I'm going to put the lid back on it,
1:20
but I'm not going to seal this dish.
1:22
I'm going to put the lid on it like this
1:25
because as that's boiling
1:27
I want it to take away some of the water in there.
1:31
I don't want chicken and rice soup,
1:35
Now I'm going to move this pot back here to this burner.
1:42
And I've got another pot ready
1:47
That the chicken is already done in.
1:51
Our pot is still nice and hot and boiling,
1:54
And I'm going to remove that chicken
1:57
and bring it over here and start picking it.
1:59
Now you could actually make this dish
2:02
and leave the chicken on the bone.
2:06
But I'm going to pick it for them.
2:09
All right, now we're going to add long grain white rice
2:12
to that boiling water.
2:15
And I'm going to stir that and let it cook
2:17
for about 10 minutes.
2:19
And then I'm going to put the lid on
2:21
and let it cook for 10 more.
2:23
You need to allow about 20 minutes for rice to be
2:26
really done through and through and be nice and fluffy.
2:31
And I'm going to have to let this chicken cool just
2:33
for a few minutes, because there's some hot chicken.
2:37
All right.I cooked the rice for 10 minutes without the lid
2:40
and now I've cooked it for 10 minutes with the lid.
2:44
So when I check this pot, the rice should be nice and fluffy
2:49
and have drank up all that chicken broth.
2:53
So I'm almost through with the chicken.
2:55
I'm trying to pick it rather carefully.
2:59
And I don't like to get any cartilage or bone
3:10
All right, now it's time to see if our rice has
3:12
drank up all that liquid.
3:14
I hope it's not too soupy.
3:16
And I hope it's not too, too stiff.
3:24
That's the texture and consistency that I like it.
3:52
When I want to keep things very, very simple
3:58
I think I'm going to have to taste.
4:00
It just looks too, too good.
4:12
And I love just tomatoes and onions
4:14
and cucumbers served along with this.
4:27
Oh, it's so pretty outside.
4:37
It's just good simple,
