Today is real sentimental show for me
0:03
because the theme of the show,
0:04
I'm going back to the original Bag Lady days,
0:08
when I started my business.
0:10
It's hard to believe that it's been 16 years now.
0:13
And you see this little container?
0:15
You know, it may not mean much to you,
0:18
but it brings back the very beginning of my business to me.
0:23
I tried these little clear containers
0:25
so that the people could see the food without touching it.
0:29
So it was completely germ-free by the time they got it.
0:34
So I love these little containers.
0:36
I get weepy every time I see one.
0:39
You know, my beginnings were very, very humble.
0:42
For those of you that don't know my story,
0:45
I started 16 years ago with $200
0:48
and I was really kind of a desperate woman.
0:51
I was like at a crossroads in my life.
0:55
and I really wanted to take responsibility
0:58
for myself and my children.
1:01
And hopefully give us something that would take care
1:06
of us if we took care of it.
1:08
And y'all can see Gertie's hanging very close
1:13
I don't know if she's gonna let me get up to the stove
1:16
to make this dish or not.
1:17
But the first dish I want to share
1:19
with y’all is Almond Chicken Salad.
1:22
This is just boiled chicken.
1:26
Now I'm gonna take a half a cup of mayonnaise
1:29
and two tablespoons of lemon juice,
1:31
and I'm gonna mix those together.
1:34
And I found y'all, that the simplest ways that I did things
1:40
always seemed to be more pleasing.
1:44
And now I'm just gonna add
1:45
these two ingredients together.
1:48
And I'm gonna toss my chicken in the bowl.
1:51
I mean, this is almost just like stupid easy.
1:57
and I'm gonna add slivered almonds.
2:04
There's not even any boiled eggs in this chicken salad.
2:07
And I'm gonna season it with pepper
2:17
And then just toss it with the mayonnaise mixture.
2:24
All right, and that's how simple that salad is.
2:40
just perked it right up!
2:43
Now I want to show y'all how I would package
2:47
these meals to send out.
2:51
If I can open the container.
2:53
It's been quite a few years since I fought
2:56
these little containers.
2:59
But I would just fill my bottom up with lettuce.
3:07
If you pack your own lunch, this is a great way to do it.
3:11
You can save your containers
3:12
from the grocery store when
3:14
you buy strawberries or blueberries, you can save those
3:19
and package your lunch up in these little containers.
3:27
All of my salads, I garnished them up real pretty,
3:30
so they would just, like irresistible looking.
3:35
Now I would package this with a lemon twist on it,
3:38
and then I would sprinkle it with almonds.
3:42
And of course it's not complete without a little parsley.
3:47
But it was perfect way to package my Bag Lady lunches.
3:56
Makes me weepy to think about those days.
