Happy New Year
0:17
Happy New Year to you, Michael. It's New Year's Day, and we're cooking up everything
0:24
that's going to bring us luck, health, and financial security this year
0:30
Now, we're going to cook a pot of black-eyed peas, but we're going to change them up just a wee little bit
0:38
And Michael is going to love these because they're going to have a little bite to them
0:44
I like hot stuff. Michael likes hot stuff. He likes to keep a rag by his plate
0:50
and he likes to sweat and have something to dab the sweat off his face
0:55
Our black-eyed peas are dried, and we have pre-soaked these. If you'll soak them overnight, they'll cook quicker for you
1:05
And Michael's cutting us up some onion, and I am going to put our hog jowl in our pot
1:13
because remember, you know, I said hog jowl is a tradition for your health
1:19
So we're just going to let that cook around in there. We're gonna put some chili powder in there
1:25
and we're gonna put a can of diced tomatoes with green chilies And they are gonna be so good And Michael tells me all the time Michael cooks the best dried peas and beans
1:40
you've ever put in your mouth. Because he puts so much meat in them
1:44
that you can't figure out if it's beans with a little meat
1:47
or meat with a few beans. Just like my beans. My beans are like a meal
1:52
Yes. You know how I learned how to do that? How? My first job, I was on a little tugboat
1:58
and the guy, he would buy this big roll of bologna with, you know, that's wrapped in red
2:04
Yeah. Buy a big roll of loaf of bread and beans. Every day we'd have beans and bologna sandwiches
2:11
That's what we would eat. I bet there was so much Putin going on on that ship
2:16
It was just he and I, so. All right. So we're just gonna brown off our hog jowl
2:24
I know you're about to die to throw that crumbled bacon in there, so go ahead
2:29
You ready? Go ahead, Papa. Okay. Pour that in. So that's going to give us a good bit of meat for our black-eyed peas
2:40
And I'm going to go ahead and put in a teaspoon of chili powder
2:47
And I'm going to go ahead and add our can of diced tomatoes with green chilies
2:54
Yes, yes, yes. And you're hardly going to know that those tomatoes are in
3:02
there y when we get them all cooked off You hardly going to see them So I going to add our pound of black peas
3:13
So let's start adding our water, peeps. I've got another story about the tugboats
3:19
Moe, moe, moe. There was this one guy, the captain told him to go make some dried beans
3:25
And so he said, OK. So he went down there. Moe, moe, moe, peeps
3:29
So I smelled something burning. and the two worst fears on a boat is sinking and burning
3:36
So I smelled something, so I ran down to the engine room, looked around, didn't see anything
3:40
So I ran back up on the stove. Uh-huh. He had put the pack of beans in a pot
3:45
with no water in it or anything. Oh, no. And he was cooking
3:49
I said, what are you doing? He says, I'm cooking dried beans
3:53
I said, well, they're dry enough. They're not going to get any drier than that
3:58
I'm going to add our house seasoning because, remember, we got that garlic and the pepper
4:04
and the onion powder, everything in there. All right, and to make sure our vegetables are nice and tasty
4:13
I'm going to put a little butter. Imagine that. All right, so we're going to put the lid on these
4:22
and I'm probably going to cook these for about an hour and a half, y'all
4:26
And I may have to come back and add some more water, But I'll watch them
4:31
So, Michael, this is hot and thick. But you want to cook them real low because they scorch Stick to the bottom if you don Ooh those are good And look at these They got the gravy like Peeps line Yeah yeah That perfect Don they look good Michael
4:49
Yes. All right, Michael, I'll scrape if you'll hold. Yummy. I have fed y'all collard greens
5:02
Now I'm going to serve y'all black-eyed peas. And not too long from now, I'm going to send y'all home
5:12
How long is that? Because y'all are going to feel your stomachs rumbling
5:19
And I want y'all to be somewhere where you're comfortable and maybe in private
5:25
All right, so y'all come up here and get you some. And I hope you like them
5:30
Like I said, this is just a new little twist, okay? So there we go
5:37
We got our collard greens, y'all. We got our black-eyed peas. We've got almost everything to make this New Year's Day complete
5:48
So you know where to find these recipes right here on the Paula Deen Network
5:52
with a lot of good things to go with it. Thank you
