Y'all, it's like chocolate pudding
0:20
Y'all! Thank y'all! I hate that in this corner I can't see our friends over there
0:31
They can see you. But anyway, now I'm going to teach my son Bobby
0:38
Bobby and Claudia don't normally eat this way, but, you know, the South..
0:43
I'm open. I know you are. The South is a wonderful place to live and raise your children
0:51
And in different regions of the South, you're going to find different things
0:55
Well, what I'm fixing to share with y'all now is a recipe for chocolate gravy
1:01
Mmm. I had never eaten or made chocolate gravy when I first started doing, you know, my TV shows
1:09
And I got letters from people, Paula, have you ever made chocolate gravy
1:12
I said I've made chocolate sauce a thousand times for my children's ice cream when they were little
1:19
But chocolate gravy is very original to Kentucky. I think maybe certain parts of Tennessee, Missouri
1:29
and they love... Now Georgia. Yes. And they love their chocolate gravy
1:34
and they always serve it with biscuits. Chocolate gravy, anybody? Anybody here familiar with it
1:38
Ever heard of it? All right, we're going to start... This is new to me. We're going to start with our cast iron skillet, Bobby. Okay
1:46
And I want you to level off three tablespoons of flour. Okay
1:52
And you can use that to level with. and you'll need to take your, remember butter will burn, so you want to take your whisk and start
2:02
moving that around very quickly Okay And now you want to level off two tablespoons of cocoa right there and we just using a regular unsweetened cocoa and you can make it as dark as you like but I would level off because cocoa
2:23
cocoa is, it's really chocolatey. Two? Yes. So just this easy
2:34
All right, three, that's three tablespoons of self-rising gravy. And if you're
2:39
Self-rising gravy? Wonderful. I mean, self-rising flour, I'm sorry. Two tablespoons of cocoa
2:46
And now we're going to add one cup of sugar. This could easily burn, if you're not careful. Yes
2:51
You almost need two people on this. This is why I have not left this
2:57
I picked that whisk up immediately. And this is fast, too. Shouldn't you have made the biscuits first
3:02
Well, I want it. Since you had never made this, I'm going to do it
3:06
And I still haven't made it. Oh, OK. All right. You just..
3:10
I'm sorry, son. It's all right. All right, pick up your thing
3:16
I've done nothing. See, that's why I jumped over there, because I was afraid you wouldn't get that whisk going quick enough
3:24
So we're going to slowly add two and a half cups of milk to our sugar
3:31
And we're cooking a really low temperature, but this skillet must be really hot
3:36
Well, we had the skillet on getting hot for us. All right, that was two cups
3:43
and now we're going to add another half a cup. And now I am going to move on to our biscuits
3:52
Okay. All right, now I'm going to come over here and I'm going to share with y'all a product
3:56
that I am so very proud of, and it is our biscuit mix at the Lady and Sons
4:04
We have worked on this for years. You have some fine cheese biscuits. And, uh, yes
4:08
And I feel like we have just perfected this. When I'm home, I like to roll my biscuit
4:16
because I want them to look like my grandmothers. Now, I'm gonna not add as much milk as it calls for
4:25
because remember I gonna cut and roll How many tablespoons of flour did you put in there Uh two OK you supposed to put three OK well you said two I was doing what you said I sorry that what I was thinking
4:38
So it may be a little thinner than it should be. All right, now I'm going to add milk until I get this dough kind of
4:49
oh, I used every bit of it. But that amount of milk called for two cups of biscuit mix
4:56
and I used more than that, so I'm gonna borrow the milk from over here
5:03
And the beauty of this is you don't have to have anything
5:06
but milk and the mix. And you don't want to over-mix it
5:11
I just want to make sure that all the flour is wet with the milk
5:26
This is beginning to look really good. I know. And I didn't have faith in it in the beginning
5:31
So very seldom do I actually roll these. I mainly just use my hands
5:37
I've got cast iron pans, my hoe cake pans, and I cook my biscuits on my black skillet hoe cake pans
5:48
because it only has just a little bitty curved-up edge so all the sides of my biscuits can get good and done
5:56
And if I've got the time, I'll actually heat that skillet with some butter in it
6:01
Before you put your biscuits on it? Yeah, so the bottom of the biscuits I know are going to be nice and crusty
6:06
You're just full of it, Pearl. So I'm just going to butter my pan
6:13
Got all kinds of tips and tricks for an extra 15 pounds or so
6:21
Look at these beautiful biscuits, y'all. Does that look like a biscuit granny used to make or what? Mm-hmm
6:29
I just gently fold it back together, and you know I'm going to use every drop
6:36
And you're intentionally jamming all those biscuits together on the trail? I like my biscuits to have soft sides
6:44
so I like for them to touch And my grandma hires every time she made a biscuit she would stick her little knuckles in her flour dish
6:56
and she would do this to the top of every one of her biscuits
7:01
Now, I don't know why she did that. Unless she wanted a little hole to put her jelly in
7:09
I don't have a clue. But she did it, I do it
7:12
Well, I don't think that most people would know to crowd the pan like that. Oh, well, it just depends, son
7:18
You know, if you like your biscuit hard all the way around or if you like some soft sides
7:23
And then I'm going to take my little butter, you know, and just drop a little bit of butter
7:33
Now, if you wanted to make a sweet biscuit, make you almost like a cinnamon roll with this
7:41
You could add sugar to it, some cinnamon, and some nuts and some raisins, and do it the same way
7:50
Sprinkle cinnamon and sugar on top. Yum. Golly. Yum. So, Bobby
8:02
Yes, ma'am. Pie is your gravy coming, son. I hope I didn't mess you up
8:06
No, no, no, I don't think so. It looks like it's got a nice... There's a couple of little lumps of the flour in there that I added last, but..
8:13
Okay, I'm going to taste and see what it needs. A biscuit
8:20
I'm thinking that. Y'all, it's like eating chocolate pudding
8:32
All right, so let's get these in the oven, and we're going to cook them in a pretty hot oven
8:36
You got it, baby? Got it. Okay. Doesn't that look like Granny's biscuits
8:51
So what do you think about chocolate gravy
