So, I'm going to start with our peach cobbler. I've got one stick of melted butter here in a 13 by 9 by 2 pan

I'm going to make a batter of one cup of milk, three-fourths a cup of flour, three-fourths a cup of sugar

and then I'm going to use a large can of peaches. Juice and all

If it's peach season and you can get fresh ones, do that

Cover them with some sugar. Now we're going to add three-fourths of a cup of all-purpose flour

In the movie Gone with the Wind, there was a very significant food that really stood out

Do y'all know what that food was? Sweet potato pie. Sweet potato pie. Exactly

That's a very, very southern dish. So I'm going to make y'all my Gone with the Wind inspired sweet potato pie

So here we go. And if y'all want to talk, talk to me

Because this is so easy to make, I can actually make this and talk to you. at the same time. I've got two cups of sweet potatoes. Now, if you've had baked sweet potatoes

the night before, got some left over, throw them in the fridge. You can pull them out, peel them

and this will make a fabulous sweet potato pie. And you can use canned, but don't. Don't

All right, so I'm going to add some sugar, and I'm just going to cream this up real good

Now we're going to toss in two eggs and keep creaming. See how easy this is

Now I put a flavor in this pie that you usually don't expect in a sweet potato pie

And that's some ginger. So in goes a little ginger, a little cinnamon, a little salt

And at this point, to flavor it, you can either use a vanilla flavoring

or you can use a little bourbon, just a tablespoon or two of bourbon

All right, now we've got that smooth. Now I'm going to add a little milk

There we go. And this is about the color of my top, but I still don't want to get it on my top

All right, now a little melted butter. Now we're just going to pour this into a pie shell, just a frozen pie shell

If you want to, you can make it from scratch. You can use the frozen kind or you can get a nice pie crust in your dairy section at the grocery store

So you can use any of those that you want to do. We're going to pour this in. And we're going to bake this pie for about 50 minutes, 55 minutes, until it's set

And you can shake it, and if it's set, then you know it's ready. And this is what the pie will look like after it's cooked

Lots of times, our sweet potato pies don't have a meringue. They're usually just a plain old sweet potato pie

We may sprinkle it with a little powdered sugar or maybe eat along with some ice cream

But I wanted a beautiful meringue on this pie. So I've got some egg whites that have been stiffly beaten, and I'm just going to pile this up

Now, we'll want to make sure when you're meringuing your pies that you seal the top of that pie with that meringue

you'll want to bring it out and seal up those edges real good

because you know how meringue will weep on you. You know what I'm talking about
