and we're gonna keep this brunch all in the family with my niece, Kari's granola waffles

with butter, pecans, syrup, y'all. Yum, yum, yum. And then it's the quickest and freshest salad around

a Vidalia onion and lump blue crab salad. That is fantastic. And then I'm whipping up a southern staple done real sweet, y'all

It's my souffle grit pudding. That's really, really good. And then finally, we're going to wash it all down with a rich and creamy iced mocha frappe

I can live on these. Me too. So our first dish up, y'all, is a souffle grit pudding

It's going to be fabulous. You know in the South, my whole family will eat grits three times a day, breakfast, lunch, and dinner

This pudding is so good. So to start our grits off, we're going to cook them in two and a half cups of milk

Now y'all, I'm using a quick cook grits. Y'all have heard me say a thousand times, never an instant grit

So it's going to take us about 10 to 15 minutes to get these grits cooked to the state that we need them to go into the oven

All right, now one cup of half and half. You can tell these are going to be some real rich grits

Okay, I'm going to add one tablespoon of butter. it's a little bigger than a tablespoon but that's that's a good start let that come to a ball and

while i'm doing that i've got three eggs here that i'm going to separate

because we're gonna put our yolks into our grits while they're cooking but then we're gonna beat

our egg whites y'all and turn them into like a meringue and then we're gonna fold those

All right, there we go. We got our eggs separated. Now, I told you this is gonna be like a meringue

Our milk is getting hot. Here it's sizzling on the side of the pan

All right, I'm gonna add now one cup of quick cooking grits

grits. Alright, and when I put in my grits into their liquid, y'all, I like to use a

whisk because that makes sure that they all get separated and we won't have any

lumps in them. Now I'm gonna add a little bit of salt to my grits. Alright, our

grits are on. Now I'm gonna come right in here and I'm gonna whip our whites. I've

I've got three egg whites and two tablespoons of sugar, y'all. So there we go

We've got a beautiful meringue. All right, now I'm going to come over here and give our grits another stir

They cook very, very fast. All right, so I'm going to take our yolks, y'all

and I'm going to temper them with a little of our hot liquid

All right, so into our hot liquid goes our yolks. These grits are going to be like a dessert

I'm gonna add a half a teaspoon of nutmeg, a half a teaspoon of cinnamon

So this is gonna be kinda like an egg custard souffle. Now while those are cooking

Mm-mm-mm. It's starting to bubble and pop all over me. So I'm gonna add a half a cup of sugar

So there we go. This was real simple. Now I'm going to fold in about half of our meringue
