I want to step on over here to the other pot and start getting it ready
0:04
And like I said, this dish is called African Chop. Now I'm going to start with just beef stew meat
0:10
You can buy this nice beef stew meat in the meat department at your local grocery store
0:16
Now I'm going to start by just salting this a little bit. And I'm using a nice kosher salt
0:22
So we're just going to put our salty beef over into our Dutch oven
0:27
And you can see that I'm using a Dutch oven that has legs on it
0:31
And the reason for that is so they can sit around over a fire
0:36
All right, now to our beef, we're going to add some beef bouillon cubes to help just richen up that broth
0:43
And chili flakes. That's going to give it just a little spice
0:48
Chili powder. And curry powder. All right, and to this, I'm going to add four cups of water
1:01
I'm going to just give that a quick stir. I'm going to put the lid on it
1:06
I'm going to use a tripod and hang this Dutch oven over the fire
1:12
and I'm going to let it cook for about an hour. So if y follow me on over here we gonna get our meat on that tripod so it can get to cooking Paul let me give you a hand with that love Oh gosh thank you DJ
1:30
Good enough. You know, I love cast iron, but that's the one drawback
1:34
Mighty heavy. It's heavy as lead. Oh, good, you're gonna put that on the tripod for us
1:40
Absolutely. Oh, perfect. There we go. All right, now we're gonna let that cook for one hour
1:46
I couldn't have done this without DJ. Thanks so much, DJ. I've got my African chop in there
1:56
just waiting on the rest of the ingredients. All right, now I'm going to come over here to our
2:01
skillet, and I'm going to saute some bacon into our hot skillet, and I'm just going to
2:10
nip it with the scissors. Alright, let's check on our bacon. I think most of the
2:18
fats rendered out of that and hopefully I'm gonna try not to eat that bacon so I
2:23
can throw it in the pot too. Alright, now I'm gonna throw in our onions and then
2:29
I'm gonna put in our collard greens. So you can see that this meal is gonna be
2:36
real good and healthy It going to have your vegetables in it It going to have your meat This is going to be out of this world How pretty is that And we gonna add these collards and onions to our beef pot
2:56
Now to finish up our African chop, I'm gonna add tomato puree
3:05
Give that a quick stir so you can see the pretty colors that looks delicious
3:11
Now, we're doing one thing different to this dish that wasn't in the original recipe
3:18
And as you probably know, African cooking, a lot of nuts are used in African cooking
3:25
So to give this dish just a little bit of a twist, we're going to add some chunky peanut butter to it
3:32
I just want to make sure that my peanut butter is incorporated real good in this pot, and
3:42
then if I can find DJ, I'm going to put it back on the fire for another hour
3:50
All right, so I've got that peanut butter blended in there real good, and I want you
3:55
to say let's just go ahead and put that bacon back in here too, and that way I won't have
4:00
to worry about standing up here and eating it. All right, I gotta give it a quick taste
4:04
before I get it back on the fire It unbelievable what that peanut butter did to this dish DJ Right here Paula
4:16
Do you mind helping me? This has got to go back on the fire for another hour
4:26
Okay, so we're going to take it back over to the fire then? Uh-huh. All righty
4:30
And I get your... And back on the tripod to hang up
4:33
It's so nice to have a man around the house. Indeed. You know what I mean, girls
4:39
All right. All right, I've got our African chop ready to taste
4:45
All right, now, I brought some rice that I'd cooked at home because I didn't really want to have to fool with cooking rice out here
4:51
But I did transfer it to a pot, so I'm really, really anxious to taste this dish
4:59
I think it'll be just out of sight on this white rice
5:10
Look at that texture of that, and that's from that peanut butter
5:16
Looks so good. All right, let's see what we've got. This is just delicious
